BEEFY SPANISH RICE
This recipe can be altered to fit any taste by adjusting how spicy and saucy you make it. On occasion, I like using ground turkey in place of the beef-or adding leftover spaghetti sauce instead of the tomato paste.

Steps:
- In a large skillet, cook the ground beef, onion, green pepper and garlic until meat is no longer pink; drain. Stir in the next eight ingredients; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until the rice is tender. Stir in tomato paste and cook until heated through. Serve with French bread.

BAKED BEEFY SPANISH RICE

- Cook rice according to package directions. Meanwhile, in a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomatoes, seasonings and rice. , Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 50-55 minutes. Sprinkle with cheese. Bake, uncovered, 5-10 minutes longer or until cheese is melted.

CROCK POT BEEFY SPANISH RICE

- Brown beef in a skillet and drain off fat; place beef in crock pot.
- Add remaining ingredients to crock pot and stir well.
- Cover and cook on Low for 6 to 8 hours.
BEEFY SPANISH RICE LOUIE
I love one-dish meals. This one is especially easy and delicious served with a green vegetable or salad.

- Saute rice in oil until golden brown.
- Add onion, garlic, salt and pepper, and ground beef. Cook, stirring, until beef is browned and crumbly. Drain off grease.
- Add remaining ingredients and mix well. Transfer to a greased ovenproof casserole dish.
- Bake in a 350 F. oven for 1 hour, covering after the first 15 minutes.
BEEFY SPANISH RICE
Recipe I found on the internet years ago and I absolutely love it because it's different. Recipe yields enough for main dish, so cut down servings if you want it to go with a Mexican dinner, but I think it's fabulous! And easy to make! I usually use whole can of corn because I love corn!
