- In a large skillet over medium-high heat, cook beef and onion until the meat is no longer pink; drain. Stir in the remaining ingredients; bring to a boil. Reduce heat; simmer, covered, until macaroni is tender, stirring occasionally, 20-25 minutes. Add more water if needed.

BEEFY MACARONI & TOMATOES
This is a dish that my mother made when she needed to fix something quick or just because we liked it so well.

Steps:
- 1. In saucepan cook macaroni per package directions. Basically, bring salted water to boil; add macaroni and cook until tender about 7-10 minutes. Drain.
- 2. In the meantime, brown ground chuck that has been seasoned with salt and pepper. Cook until done then drain. Note: I use a large iron skillet.
- 3. Add the tomatoes and tomato sauce to ground beef Add oregano leaves, if desired. Stir in cooked macaroni and let simmer about 20 minutes. Stirring occasionally. Remove from heat and top with shredded cheese.

- Cook noodles until al dente, 8-10 minutes, and drain.
- Preheat oven to 350°F.
- Cook ground beef with garlic, oregano, basil, onion, green pepper, and salt and pepper until beef is browned, cooked through, and veggies are tender.
- Drain any fat.
- Add tomatoes and tomato sauce to beef mixture, then simmer 5-10 minutes.
- Mix beef mixture with cooked macaroni and place in a 9x13-inch casserole dish or lasagna pan.
- Top casserole with mozzarella and Parmesan cheeses.
- Bake at 350F for 20 minutes, or until cheese is melted and casserole is bubbly.

- Bring a pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 3/4 cup of the cooking water, then drain the pasta. Meanwhile, melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add the onion and cook, stirring, until soft, about 5 minutes. Add the tomato paste and chili powder and stir until brick red, about 2 minutes. Add the beef and cook, stirring, until browned, 4 minutes. Stir in 1/2 teaspoon salt. Spread the mixture in a 3-quart flameproof baking dish. Preheat the broiler. Melt the remaining 2 tablespoons butter in a pot over medium heat. Add the flour and cook, stirring, 1 minute. Add the milk and reserved cooking water, bring to a simmer and cook, whisking, until thick, 2 minutes. Add 2 cups cheese, the cooked pasta and 3/4 teaspoon salt and stir until the cheese melts. Spread over the beef mixture. Mix the remaining 1/2 cup cheese and the breadcrumbs; sprinkle over the pasta mixture and broil until golden. Top with the scallions.

This soup is so easy to put together. Combine ground beef, onions, garlic , jarred spaghetti sauce, chicken stock, small pasta and seasonings and you have the most delicious soup. This will become part of your regular rotation soups.. it's a must try!

- In a large pot heat the olive oil over medium heat.
- Add the onion and garlic to the pot and cook for 3-4 minutes, stirring, until the onion softens.
- Add the ground beef to the onions, breaking up with a spoon and cook until no longer pink.
- Next add the salt, pepper, oregano and the one shake of cayenne pepper to the beef and stir to combine.
- Now pour in the chicken stock, pasta sauce and Rotel. Stir and bring to a simmer for 10 minutes.
- Whisk in the cream cheese until smooth then add 1/2 of the fresh basil.
- Pour in the pasta, stir and let cook for 10 minutes, covered, stirring halfway through cooking.
- Spoon into bowls and garnish with the leftover basil.
- *Note: The cream cheese will look lumpy when it first goes in -- WITH A WIRE WHISK, keep whisking it and it will blend until you see no white cream cheese left.
