GROUND BEEF & CABBAGE STEW

One day I made this stew for myself (God forbid the kids ever put cabbage in their mouths)They(the kids) accidently ate it mistaking it for my beef stew. They called me on my cell phone and told me that was the best stew I had ever made. I just let it be my little secret about cabbage.

2 teaspoons olive oil
1 medium red onion, chopped
1/2 medium cabbage, cored and chopped
14 ounces stewed tomatoes
6 small red potatoes, fourthed
2 medium carrots, chopped
1 yellow peppers or 1 green pepper
1/2 teaspoon thyme
1 cup vegetable broth (I sometimes use beef broth)
1 cup corn
1 cup green beans
1/2 lb lean ground beef
1 teaspoon chili powder
2 teaspoons cumin
salt and pepper

Steps:

  • Brown ground beef and drain;set aside.
  • Heat olive oil in skillet and add onion and cook 2-3 minutes.
  • add cabbage, tomatoes, potatoes, carrots, bell pepper, thyme.
  • Mix well.
  • add broth.
  • Heat to boiling; reduce heat.
  • cover and cook 20 minutes.
  • stir in corn and beans.
  • cover and cook 15 minutes.

1/2 pound lean ground beef (90% lean)
3 cups shredded cabbage or angel hair coleslaw mix
1 can (16 ounces) red beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
3/4 cup water
3/4 cup salsa or picante sauce
1 medium green pepper, chopped
1 small onion, chopped
3 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon pepper

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker; adjust for medium heat. Cook beef until no longer pink, 6-8 minutes, breaking into crumbles; drain. Press cancel. Return beef to pressure cooker., Stir in remaining ingredients. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Quick-release pressure. Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little water if necessary.

Trying to use the surplus of cabbage from my garden, this hearty stew was delicious even in the hot summertime. Has a sweet-sour flavored broth.

1 tablespoon vegetable oil
1 1/4 lbs beef stew meat
2 yellow onions, sliced
2 -3 cloves garlic, minced
1/4 cup fresh lemon juice
2 tablespoons firmly packed brown sugar
1 (14 1/2 ounce) can whole tomatoes, coarsely chopped with juice
2 cups beef stock or 2 cups beef broth
2 cups water
salt and pepper
2 cups shredded cabbage
1/3 cup raisins (optional)

Steps:

  • In a large soup pot over medium heat, let the oil get warm.
  • Brown the stew meat on all sides for about 6 minutes.
  • Add in the next 8 ingredients; stir to combine.
  • Cover and simmer over medium-low heat for 1 hour or until meat is tender.
  • ADd in the cabbage and raisins and let simmer, uncovered, for 30 more minutes.

This is an incredibly easy and quick soup that is awesome. It will really warm you up on a cold day. My family loves it. Try substituting ground turkey for the beef, too! I serve it with Mexican-style cornbread.

1 (15 ounce) can pinto beans
1 (15 ounce) can kidney beans
1 (10 ounce) can diced tomatoes with green chile peppers
1 (14.5 ounce) can Italian-style diced tomatoes
1 (15 ounce) can whole kernel corn, drained
1 (11.5 ounce) can tomato juice
1 ½ cups water
1 (16 ounce) package coleslaw mix
1 teaspoon Greek-style seasoning

Steps:

  • In a large pot over medium heat, cook beef until brown; drain.
  • Return meat to pot with pinto beans, kidney beans, diced tomatoes with green chiles, Italian-style diced tomatoes, tomato juice, water, coleslaw mix and Greek seasoning. Simmer over low heat 1 hour.

I agree that this is a very good recipe. My 93-year-old mother-in-law has recently told me that this is the best meal I have ever brought her, and there have been many. All the veggie prep can be done while the onions and bay leaves are simmering. I do add more broth when the veggies go in. The cabbage will add a significant amount of water but the beef flavor is key. It will freeze great in resealable bags for a quick meal so I normally double the recipe when going to this effort, which in my opinion is well worth it. The 2 hour simmering step for the beef can be done the day before.

1 ½ pounds beef stew meat, cut into 1-inch pieces
1 cube beef bouillon
2 cups beef broth
1 large onion, chopped
¼ teaspoon ground black pepper
1 bay leaf
2 potatoes, peeled and cubed
4 cups shredded cabbage
2 celery ribs, sliced
1 carrot, sliced
1 (8 ounce) can tomato sauce
salt to taste

Steps:

  • Cook and stir stew meat in a large saucepan or Dutch oven over medium heat until browned on all sides, 10 to 15 minutes. Drain any excess grease.
  • Stir beef bouillon into beef broth in a bowl until dissolved; pour over stew meat. Add onion, black pepper, and bay leaf; cover and simmer until stew meat is very tender, at least 2 hours. Add potatoes, cabbage, celery, and carrot; cover and simmer until potatoes are tender, 30 to 45 more minutes.
  • Stir tomato sauce and salt into the stew; simmer, uncovered, until tomato sauce is fully incorporated and flavors have blended, 15 to 20 minutes.

  • Clean the onions and prepare the meat, which we cut into smaller pieces. Chop the onion finely because, after long cooking, it will almost disappear in the beef stew. Cut the cabbage with a kitchen knife, into thin slices, but it’s no problem if you can’t cut it very thin. Finely chop the thyme and dill.
  • In a smaller saucepan, heat about 100 ml of olive oil, in which we will fry the chopped onion, two-three minutes. Add a tablespoon of sweet pepper paste stir and fry until the onion becomes translucent. Add the meat, the sweet paprika powder, stir and simmer for about 15 minutes. Season with sea salt, freshly ground pepper and caraway powder, add about 600 ml of beef stock, and let it simmer for about 45 minutes.
  • Take a soup pot, heat 50 ml of olive oil in this and fry the chopped onion. Season with caraway powder and sugar, stirring occasionally. Add sliced cabbage, the first half of the quantity, mix and then the other half of the cabbage. Season with sea salt, add tomato juice, stir and bring to the boil. Add a cup of water, thyme and half of the chopped dill. Boil everything over low heat for about 20 minutes until the cabbage softens a little.
  • With the help of a ladle, we remove the beef from the stew and add it to the cabbage stew. Add the other half of chopped dill and simmer for another 15 minutes, until it evaporates from the liquid and we get the desired consistency.
