LETTUCE BOATS WITH BLEU CHEESE AND BACON
This is the most simple yet elegant and fanciful way to serve a salad, no chopping or tearing the leaves, and it just looks so cool plated up. It's really fun to see folks 'WOW' the looks of such a simple salad. This one never goes unnoticed.

Steps:
- Cook bacon and garlic in skillet until crisp. Remove bacon and drain on paper towels.
- Place lettuce wedges upside down (like a boat) onto individual serving plates. Drizzle each lettuce wedge crossways (across the sides of the boats) and around the plate with dressing.
- Sprinkle the fresh bleu cheese over top. Sprinkle bacon on and around the boat then top with green onion.
DARTHLAURIE'S BEEF, BACON, AND BLUE CHEESE SALAD
I made this recipe up when I was craving a bacon and blue cheese burger. It's decadent! This recipe makes two very large salads-- perfect for a somewhat healthier dinner for two. You can keep things light using fat free or low fat mayo and sour cream, but go ahead and use a good blue cheese.

Steps:
- Combine dressing ingredients. Taste to make sure the flavors are balanced. Set aside.
- Cook the bacon until crisp. If there's not enough grease, add the olive oil. Drain on paper towels.
- Heat up the remaining olive oil and add steak to the same pan (I've used round and flank steak). Season with roasted garlic seasoning, salt, and pepper. Cook almost to desired doneness. Add Worcestershire sauce and toss to coat all the meat.
- To assemble the salad:.
- Divide the bag of lettuce between two plates.
- Top with steak, bacon, croutons, blue cheese crumbles, and tomato.
- Drizzle on dressing.
- Enjoy!

- Whisk together sour cream, mayonnaise, buttermilk, and lemon juice in a bowl. Stir in 1/2 cup cheese and chives, then season with salt and pepper. Cover and refrigerate at least 30 minutes (and up to 3 days) to allow the flavors to really meld.
- Place bacon in a medium heavy skillet over medium heat. Cook, stirring occasionally, until fat is rendered and bacon is crisp, about 8 minutes. Using a slotted spoon, transfer to paper towels to drain. Reserve bacon fat for another use (it's delicious for pan-frying hash browns), or discard.
- Halve cherry tomatoes (if using beefsteak, halve and squeeze out some seeds beforehand, so it's not watery, then cut into bite-size pieces). Season with salt and pepper; let stand 5 minutes. Cut lettuce through its core into 4 wedges; place each one on a plate. Spoon dressing on top and sprinkle with bacon, tomatoes, remaining 1/4 cup blue cheese, and more chives.

- Cook bacon in a 10-inch skillet over medium heat until crisp. Transfer to paper towels to drain, reserving fat in skillet.
- Whisk together 1 tablespoon hot bacon fat, sour cream, milk, vinegar, and 1/4 teaspoon each of salt and pepper until smooth. Stir in scallion and 2/3 cup blue cheese. Thin with additional milk if desired.
- Quarter lettuce lengthwise (through stem) into wedges, then remove core and arrange each wedge on a plate with tomato wedges. Stir dressing and spoon over top. Sprinkle with bacon, remaining 1/3 cup blue cheese, and pepper to taste.
