GRILLED MOROCCAN BEEF SKEWERS WITH YOGURT SAUCE



Grilled Moroccan Beef Skewers with Yogurt Sauce image

These grilled beef skewers are a meal by themselves, but serve them up with lavash--a thin unleavened Middle Eastern bread--or flatbread for a more filling dish.

Number Of Ingredients 12

6 tablespoon chopped fresh Italian parsley
4 cloves garlic, minced
2 lemons, zested and juiced
0.25 cup olive oil
2 teaspoon ground coriander
1 teaspoon paprika
Kosher salt and pepper
1 pound boneless beef sirloin steak, cut into thin strips
1 pint grape tomatoes
1 cup plain Greek yogurt
Soft cracker bread (lavash) or pita bread, warmed
Chopped fresh Italian parsley

Steps:

  • For marinade: In a medium bowl combine 4 tablespoons parsley, the garlic, 1 1/2 teaspoons lemon zest, 1/4 cup lemon juice, 1/4 cup olive oil, the coriander, paprika, and 1/2 teaspoon each salt and black pepper. Add beef; toss to coat. Chill, covered, 30 minutes.
  • Drain meat, reserving marinade. Thread meat accordion-style onto eight 10-inch skewers*. Thread tomatoes onto four 10-inch skewers. Grill beef on the rack of a covered grill over medium 6 to 8 minutes or until desired doneness, turning occasionally. Add tomatoes the last 2 to 3 minutes, grilling until lightly charred, turning once. Place reserved marinade in a small saucepan; heat to boiling.
  • For yogurt sauce: In a small bowl stir together yogurt, remaining parsley, 1/2 teaspoon lemon zest, 2 tablespoons lemon juice, and 1/4 teaspoon each salt and black pepper. Serve skewers with yogurt sauce and, if desired, over lavash. Drizzle with hot marinade. Top with additional parsley. Serves 4.

A very flavorful main dish of savory meat balls, spicy tomato sauce and creamy garlic yogurt

Number Of Ingredients 23

For the meat patties:
1 lb. lean ground meat, ground twice if possible
1 cup grated onion (1 medium)
¼ cup fresh parsley, finely minced
1 tsp. salt
½ tsp. freshly ground pepper
1 tsp. fresh thyme
½ tsp. ground cumin
½ tsp. ground sumac
2 tsps. extra virgin olive oil
1 TBSP. milk
For the tomato sauce:
4 med. ripe tomatoes
1 TBSP. butter
3 med. cloves of garlic, minced
1 tsp. red wine vinegar
1 tsp. sugar
6 TBSP. beef broth
Yogurt & Garnish:
¾ cup Greek yogurt, lightly beaten, at room temp
1 sm. garlic clove, grated (optional)
4 --- Mediterranean-style pita bread (without pockets)
--- --- fresh parsley leaves

Steps:

  • Place the grated onion, parsley, all the seasonings, the olive oil and the milk in a medium bowl and thoroughly mix.
  • To the bowl with the onion mix, add the ground meat and knead thoroughly until very smooth.
  • Cover and refrigerate the bowl with the meat mixture for one to two hours so that it firms up and is easier to handle.
  • Make the tomato sauce: Remove the skins and the seeds of the tomatoes. Chop them and cook them in a medium skillet with the butter. Add the garlic, vinegar and sugar. Once they are slightly reduced, add the beef broth and mix to incorporate.
  • Make a "test" meat patty: Take a small spoonful of the meat mixture, flatten it into a tiny patty and cook in a skillet. Taste and adjust the seasoning of the meat mixture as needed.
  • Shape the meat mixture into small meatballs and flatten them slightly. Heat large, non-stick skillet under medium-high heat. Drizzle enough olive oil to the skillet to cover the bottom. Once the skillet is hot, place the meatballs in, making sure not to overcrowd it. Cook them on both sides until nicely brown.
  • To serve: Toast some pita bread, cut it in wedges and place in individual warm plates. Spoon some warm tomato sauce over the pita, drizzle some room temperature yogurt sauce over the sauce, and arrange some meat patties on the bed of yogurt. Sprinkle with some parsley leaves and serve at once.

Lightly oil the grill rack., Grill steak, covered, over medium-hot heat or broil 4 in. from the heat for 8-10 minutes or until beef reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), turning occasionally.

2 1/4 pounds beef sirloin, cut into 1-inch cubes
1/3 cup vegetable oil
3 tablespoons light soy sauce
3 teaspoons sea salt
1 teaspoon dried chili flakes
1 teaspoon ground coriander

1 teaspoon ginger powder
1 teaspoon ground nutmeg
1 teaspoon sweet paprika powder
1 teaspoon ground Sichuan pepper

Steps:

  • For the marinade: Place the beef cubes in a large mixing bowl. Add the vegetable oil, soy sauce, sea salt, chili flakes, coriander, cumin, ginger powder, nutmeg, paprika powder, pepper and garlic and mix well. Cover and refrigerate for at least 30 minutes or overnight for a better result.
  • Preheat the grill to medium-high heat.
  • Thread the beef onto the skewers and grill for 3 minutes per side. Baste the beef with the oil as it cooks and sprinkle with the dried chili flakes and cumin.
  • Serve with the lemon wedges.

1 1/2 lbs lean sirloin steaks, trimmed
1/3 cup lemon juice
2 tablespoons liquid honey
3 garlic cloves, minced
1 1/2 teaspoons dried marjoram or 1 1/2 oregano leaves
1/2 teaspoon dried mint
1/2 cup plain yogurt
1/3 cup feta cheese, crumbled
1 teaspoon lemon juice
1 garlic clove, minced
1/2 teaspoon pepper
1/2 teaspoon hot pepper flakes
1/2 teaspoon dried mint

Steps:

  • Slice the steak, across the grain, into long, thin strips.
  • Mix lemon juice with the honey, garlic, marjoram and mint. Toss beef strips with the marinade and let stand at room temperature for 30 minutes.
  • Meanwhile, soak 24 wooden skewers in cold water.
  • To make the dipping sauce, stir the yogurt, feta, lemon juice, garlic, pepper, hot pepper flakes and mint until combined. Let stand for 15 minutes to blend the flavours.
  • Preheat broiler or grill to medium high. Thread beef onto soaked skewers and place on a broiler pan or rack set over a rimmed baking sheet. Season with salt and pepper, if desired.
  • Broil or grill beef, turning once, for 4 to 5 minutes, or until it reaches medium doneness.
  • Serve with dipping sauce.

1/2 cup harissa (sold in specialty stores)
1/3 cup plain whole-milk yogurt, preferably Greek
2 teaspoons kosher salt
1 1/2 pounds beef tri-tip; top sirloin; London broil; flank, skirt or hanger steak, sliced 1/8- inch thick (ask butcher to do this)
1 English cucumber, unpeeled, halved lengthwise and thinly sliced crosswise
1 small red onion, halved and thinly sliced
4 ounces black oil-cured olives, pitted and roughly chopped
4 mint sprigs, leaves torn
Sea salt
4 whole-wheat pita bread rounds
Extra virgin olive oil, for brushing and drizzling
16 ounces prepared hummus
2 lemons, each cut in 4 wedges

Steps:

  • In a gratin dish, whisk harissa with yogurt and kosher salt. Add beef slices and turn to coat. Cover with plastic and refrigerate at least 30 minutes; 2 hours is ideal.
  • In a bowl, combine cucumber, red onion, olives and mint leaves, and season with sea salt. Thread meat onto metal skewers. Heat a grill or grill pan. Grill skewers over medium-high heat, turning once, until medium, about 4 minutes. Transfer to a platter as they are done.
  • Brush pita with olive oil and grill, turning once, until lightly browned, about 3 minutes total. Drizzle skewers and cucumber salad with olive oil. Serve with hummus and lemon wedges.
