SCRUMPTIOUS SALISBURY STEAK IN MUSHROOM GRAVY
This simple, hearty dish will remind you of Sunday dinners at grandma's house. This is my husband's all-time favorite meal. The recipe makes plenty of gravy, so serve with mashed potatoes or buttered noodles.

Steps:
- In a medium bowl, mix together the ground beef, egg, cracker crumbs, onion, salt, pepper and poultry seasoning using your hands. Shape into 6 patties about 1 inch thick.
- Fry the patties in a large skillet over medium-high heat for 3 to 4 minutes per side, or until browned. Drain off grease, and remove patties to a platter; keep warm.
- Melt the butter in the same skillet, and add the mushrooms. Cook and stir for about 2 minutes. Sprinkle the flour over, and mix in until blended. Stir in the milk and beef bouillon. Cook and stir over medium heat until smooth and starting to thicken. Return the patties to the gravy and cook over low heat, uncovered, for 10 minutes, stirring occasionally.

HAMBURGER " STEAKS" WITH ONION GRAVY
Came up with this after trying to figure out what to do with some ground beef that needed to be cooked. I paired this with orzo, but would be equally good with mashed potatoes.

Steps:
- In a large bowl mix together beef, egg, bread crumbs, 1 package soup mix, and Worcestershire sauce. Form into 8 balls and flatten into patties.
- Mix flour salt and pepper.
- Dredge patties in flour mixture.
- Heat large skillet over med-high heat. Fry the patties 4 minutes each side, then remove patties to a platter.
- Heat oil and sauté onions until translucent, about 10 minutes.
- Add the rest of the flour mixture to onions and stir to coat.
- Mix broth and last package of onion soup and add to the onions. Stir well.
- Return the patties to the pan, cover and reduce heat to low.
- Simmer 15-20 minutes until beef is cooked through. Stir occasionally to make sure gravy is not sticking to bottom of the pan or clumping.

Steps:
- Spray skillet with PAM.
- Place over low heat to warm.
- Form patties (3-4") with the hamburger meat and place warm skillet.
- Sprinkle salt& Pepper over patties.
- Turn burner to medium-high and brown patties for 1-2 minutes.
- Turn patties over and reduce heat.
- Add onions to skillet and cover.
- Cook for 10-15 minutes or until meat is done and onions are translucent.
- Remove patties and onions from the skillet.
- *Ifthere isn't enough"goodies" in the skillet, add oil.
- There should be about 1-2 tbsp.
- of oil altogether.
- Add flour and salt and pepper to taste.
- Stir to mix flour and oil.
- Continue stiring into flour is a deep golden brown.
- Add milk and combine with flour mixture.
- Return meat and onions to the gravy.
- Remove from heat as the gravy thickens.
- Serve with mashed potatoes or rice.
BEEF PATTIES IN GRAVY
At our house we call this recipe "cube steaks" but it's actually ground round patties smothered in a delicious gravy. Very simple and perfect for those on a strict budget as we are. :) Serve with lots of hot mashed potatoes, and the gravy spooned over everything. :) This recipe can easily be doubled for a larger group. Make sure you're sitting when you taste this one- it's been known to make the knees buckle-it's THAT good! And don't be alarmed if you find yourself in a wrestling match over the last of the gravy, that's perfecly normal. Enjoy!!

- Salt a large,deep skillet and heat to medium.
- Divide ground beef into about 8 thin patties and dredge in the flour, coating well. (patties will fatten up when you cook them.).
- Brown patties on both sides and set aside, leaving in any drippings and stuck flour to the bottom of the pan.
- Turn off heat and add soup, bullion cubes, milk and water to the pan. (bullion cubes will dissolve during cooking.).
- Bring gravy to a simmer, mixing well.
- When gravy starts to simmer add beef patties back in and cover.
- Simmer covered for about 20 min, stirring occasionally, until gravy is thickened. Season with salt and pepper as desired. Yummy!

This is a very popular Danish dish. It goes well with new nugget potatoes and pickled beets. You can add other spices to the patties ( eg Mace) but they are really good plain so you can savour the beef and onion flavors.

- Fry the onions in 2 oz of butter until they are turning brown.
- Add the water and continue cooking until it has evaporated.
- Remove onions and keep them warm.
- Shape the beef into round flat hamburgers (about 1" thick) and dip into seasoned flour.
- Melt remaining butter and fry the hamburgers flipping once.
- The hamburgers should be crispy brown on the outside.
- ,about 7 min each side.
