EASY BEEF GOULASH

1-1/2 cups uncooked spiral pasta
1 pound boneless beef sirloin steak, cut into 1/8-inch-thick strips
1 tablespoon vegetable oil
1 medium onion, chopped
1 medium green pepper, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
1-1/2 cups water
1 cup reduced-sodium beef broth
1-1/2 teaspoons red wine vinegar
1 to 2 teaspoons paprika
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon caraway seeds
1/4 teaspoon pepper
2 tablespoons all-purpose flour
1/4 cup cold water

Steps:

  • Cook pasta according to package directions. , Meanwhile, in a large nonstick skillet, stir-fry beef in oil for 4-5 minutes or meat is no longer pink. Add onion and green pepper; cook and stir for 2 minutes. Stir in tomatoes, water, broth, vinegar and seasonings. Bring to boil. Reduce heat; cover and simmer for 15 minutes. , In a small bowl, combine flour and cold water until smooth. Add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain pasta; stir into beef mixture.

There are a lot of different recipes for Hungarian Beef Goulash, but this is our version -- we've made it many times over the years. I'm glad I can store the recipe here now -- my tattered old recipe card has seen better days.

1/4 cup all-purpose flour
1 tablespoon sweet Hungarian paprika
1 1/2 teaspoons salt
1/2 teaspoon hot Hungarian paprika
1/2 teaspoon ground black pepper
2 lbs beef stew meat, cut into 1 1/4-inch pieces
4 tablespoons vegetable oil, divided
1 large onion, chopped
2 garlic cloves, minced
28 ounces beef broth
14 1/2 ounces stewed tomatoes, undrained
1 cup water
1 tablespoon dried marjoram, crushed
3 cups medium egg noodles, uncooked (about 6 ounces)
1 large green bell pepper, chopped
sour cream

Steps:

  • Combine flour, sweet paprika, salt, hot paprika and black pepper in resealable plastic food storage bag. Add 1/2 of beef. Seal bag; shake to coat well. Repeat with remaining beef.
  • Heat 1 1/2 tablespoons oil in Dutch oven over medium heat. Add one-half of beef; brown on all sides. Transfer to large bowl. Repeat browning with 1 1/2 tablespoons oil and remaining beef; transfer to same bowl.
  • Heat remaining 1 tablespoon oil in same Dutch oven; add onion and cook 8 minutes or until tender. Add minced garlic cloves and cook for 2-3 more minutes, stirring often.
  • Return beef and any juices to Dutch oven. Add broth, tomatoes with liquid, water and marjoram. Bring to a boil over medium-high heat. Reduce heat to medium-low; cover and simmer 1 1/2 hours or until meat is tender, stirring once.
  • When meat is tender, stir in noodles and bell pepper; cover. Simmer about 8 minutes or until noodles are tender, stirring once. To serve, ladle into 8 soup bowls. Dollop with sour cream.

1/4 cup unsalted butter
1/4 cup olive oil
5 pounds beef chuck, well trimmed, cut into 1-inch cubes
Salt and freshly ground black pepper
5 pounds yellow onions, chopped
1/4 cup Hungarian paprika
3 cups Homemade Beef Stock
Sour cream, for garnish
2 pounds broad egg noodles, cooked
Chopped chives, for garnish

Steps:

  • Heat 1 tablespoon butter and 1 tablespoon olive oil in a large, heavy-bottomed pot over high heat. Season meat with salt and pepper to taste. Cook meat in batches, being careful not to overcrowd the pot, and adding 1 tablespoon each of butter and oil as needed. Cook each batch of meat until well browned on all sides, about 3 to 5 minutes, and transfer to a plate while the next batch browns.
  • Reduce heat to low, add onions, and cook, stirring occasionally until onions are translucent, about 15 to 20 minutes. Return meat to pot, and add paprika and stock. Stir well to combine. Cook, covered, over very low heat, stirring occasionally, until meat is tender and the sauce has thickened, about 1 1/2 to 2 hours. Adjust seasonings. Serve over egg noodles with a dollop of sour cream and a sprinkling of chives.

4 tbsp olive oil
700g stewing steak, cut into chunks
30g plain flour
1 large onion, thinly sliced
2 garlic cloves, finely chopped
1 green pepper, deseeded and thinly sliced
1 red pepper, deseeded and thinly sliced
2 tbsp tomato purée
2 tbsp paprika
2 large tomatoes, diced
75ml dry white wine
300ml beef stock, homemade or shop-bought
2 tbsp flat-leaf parsley leaves
150ml soured cream

Steps:

  • Heat oven to 160C/140C fan/gas 3.
  • Heat 1 tbsp olive oil in a flameproof casserole dish or heavy-based saucepan. Sprinkle 700g stewing steak chunks with 30g plain flour and brown well in three batches, adding an extra 1 tbsp oil for each batch. Set the browned meat aside.
  • Add in the remaining 1 tbsp oil to the casserole dish, followed by 1 large thinly sliced onion, 2 finely chopped garlic cloves, 1 green pepper and 1 red pepper, both finely sliced. Fry until softened, around 5-10 mins.
  • Return the beef to the pan with 2 tbsp tomato purée and 2 tbsp paprika. Cook, stirring, for 2 mins.
  • Add in 2 large diced tomatoes, 75ml dry white wine and 300ml beef stock. Cover and bake in the oven for 1 hr 30 mins - 2 hrs. Alternatively, cover and cook it on the hob on a gentle heat for about an hour, removing the lid after 45 mins.
  • Sprinkle over 2 tbsp flat-leaf parsley leaves and season well with salt and freshly ground pepper. Stir in 150ml soured cream and serve.

2 ½ pounds boneless beef chuck roast, cut into 2-inch cubes

2 tablespoons vegetable oil
2 onions, chopped
2 teaspoons olive oil
½ teaspoon salt

2 teaspoons caraway seeds, crushed
1 teaspoon freshly ground black pepper
1 teaspoon dried marjoram

½ teaspoon cayenne pepper
4 cups chicken broth, divided
¼ cup tomato paste

2 tablespoons balsamic vinegar

Steps:

  • Season beef with salt and black pepper. Heat vegetable oil in a large skillet over high heat; cook and stir beef in hot oil in batches until browned on all sides, about 5 minutes per batch. Transfer to a large stockpot and reserve drippings in the skillet.
  • Return skillet to medium heat; stir onions into the reserved drippings, drizzle olive oil over onions, season with 1/2 teaspoon salt and cook until onion has softened, about 5 minutes. Transfer to the stockpot with beef.
  • Combine paprika, caraway seeds, black pepper, marjoram, thyme, and cayenne pepper in the skillet and toast over medium heat until fragrant, about 3 minutes. Add 1 cup chicken broth and stir; transfer to the beef and onion mixture.
  • Stir 3 cups chicken broth into beef mixture. Add tomato paste, garlic, vinegar, sugar, 1/2 teaspoon salt, and bay leaf; place stockpot over high heat and bring to a boil. Reduce heat to low and simmer until a fork inserts easily into the meat, 1 1/2 to 2 hours.

An authentic Hungarian goulash recipe for one of Hungary's most famous dishes. Tender beef pieces in a rich delicious sauce made with lots of paprika and with caraway seeds.

1 kg/ 2.2 lbs stewing beef (beef chuck for instance)
2 tablespoons lard (or vegetable oil - you might need more in this case, divided)
2 onions (about 300 g/ 10.6 oz)
3 large garlic cloves
1 red bell pepper (about 100 g/ 3.5 oz)
2 to matoes (about 200 g/ 7 oz)
2 bay leaves
2 tablespoons Hungarian sweet paprika powder
¼ - ½ teaspoon Hungarian hot paprika powder ((to taste, the goulash should not be too hot))
¾ teaspoon ground caraway seeds
1 ½ tablespoons tomato paste
500 ml/ 17 fl.oz/ 2 cups beef broth or water
fine sea salt and freshly ground black pepper

Steps:

  • Cut the beef chuck into small cubes, about 2 cm/ 0.7 inches. Place them onto paper towels and pat them dry with more paper towels. Chop the onions very finely. Chop the pepper and the tomatoes as well.
  • Melt some of the lard (or oil) in a Dutch oven or heavy-bottomed stewing pot. Fry the beef cubes in 2 or 3 batches, depending on the size of your Dutch oven. Fry for about 5 minutes per batch or until nicely browned on all sides. Add more of the lard before each batch. Transfer the fried beef cubes to a plate and set them aside.
  • Add about 1 teaspoon more lard to the pot and fry the chopped onions until very lightly colored, about 5 minutes, stirring often and keeping an eye on them. If they threaten to catch, add a splash of water and continue cooking.
  • Add the garlic, chopped peppers, tomatoes, and bay leaves and cook for about 3-4 minutes, stirring a few times in between.
  • Add the paprika and caraway. Stir well for about 1 minute, add the tomato paste and stir well again. Add the meat cubes and the beef broth, stir well.
  • Cover the pot, bring to a boil, lower the heat and simmer the Hungarian beef goulash until the meat is very tender about 1 ½ - 2 hours. Check to make sure that the meat is really tender.
  • Uncover the pot and continue cooking the goulash for another 10-15 minutes until the sauce reduces and thickens slightly. Adjust the taste with salt and pepper.

1 cup onion (diced )
1 green bell pepper (diced)
2 lbs. ground beef (lean)
3 tsp garlic (minced )
2 15 oz cans tomato sauce
2 15 oz cans petite diced tomatoes
3 cups beef broth
3 tbsp Worcestershire Sauce
2 tsp seasoned salt
2 tbsp Italian Seasoning
3 bay leaves
2 cups macaroni noodles (uncooked)
1 cup cheddar cheese (shredded )

Steps:

  • Add olive oil to large pot over medium-high heat. Add in the onion, bell pepper and ground beef then cook until beef is no longer pink. Drain any excess fat and return pot to stove top. Add in garlic and stir until fragrant (about 30 seconds).
  • Pour in the tomato sauce, diced tomatoes, beef broth, Worcestershire sauce, seasoned salt, Italian seasoning, bay leaves and dried macaroni noodles. Stir and bring mixture to a boil. Reduce heat to a light boil and stir occasionally until the pasta is tender, about 20 minutes.
  • Remove the bay leaves and stir in the cheddar cheese just before serving. Enjoy!

250 g onions
2 cloves of garlic
1 green pepper
2 tomatoes
a few sprigs of fresh marjoram
extra virgin olive oil
500 g beef shin, cut into small cubes
1 tablespoon paprika
1½ litres organic beef stock
½ tablespoon caraway seeds
red wine vinegar
1 tablespoon tomato purée
200 g potatoes
sour cream, optional

Steps:

  • Peel and slice the onions, peel and crush the garlic, and deseed and dice the pepper. Finely chop the tomatoes. Pick and finely chop the marjoram.
  • Add a good splash of oil to a large pan and gently sauté the onions, garlic and pepper until softened.
  • Add the beef and continue to cook until the meat is browned and the vegetables are cooked.
  • Stir in the paprika and cook for 2 more minutes, then add 200ml of the beef stock. Bring to the boil and cook until reduced by half.
  • Add the marjoram, caraway seeds, a splash of vinegar, the tomatoes, the tomato purée and season well.
  • Add enough stock to cover and simmer until the meat and vegetables are tender, about 1½ to 2 hours.
  • Peel, dice and add the potatoes, plus any remaining stock and a little water if it's looking too dry, and simmer until the potatoes are cooked.
  • Serve with a dollop of sour cream, if you like.

1kg good braising steak, preferably chuck steak
1 tbsp sunflower oil
3 medium onions, cut into 12 wedges
3 garlic cloves, crushed
2 tsp hot smoked paprika
1 tbsp paprika
1 beef stock cube (Oxo works well here)
600ml cold water
400g can of chopped tomatoes
2 tbsp tomato purée
2 bay leaves
1 red pepper
1 green pepper
1 orange pepper
flaked sea salt
freshly ground black pepper

Steps:

  • Preheat the oven to 170°C/Fan 150°C/Gas 3½. Trim any hard fat off the beef and cut the meat into rough 4cm chunks. Season well with salt and freshly ground black pepper. Heat the oil in a large flameproof casserole dish. Add the steak and fry over a high heat until nicely browned all over, turning regularly. Tip the onions into the pan and cook with the beef for 5 minutes until softened. Add the crushed garlic and cook for a further minute, stirring regularly. Sprinkle both paprikas over the meat and crumble the beef stock cube on top. Add the water, tomatoes, tomato purée and bay leaves. Season with salt and pepper, stir well and bring to a simmer. Cover with a tightly fitting lid and transfer the dish to the oven. Cook for 1½ hours. While the beef is cooking, remove the core and seeds from each pepper and chuck them away. Cut each pepper into chunks of about 3cm. When the beef has cooked for 1½ hours, carefully remove the dish from the oven. Stir in the peppers, put the lid back on and put the goulash back in the oven for a further hour or until the beef is meltingly tender. Serve with small portions of rice (see pages 178-179) and spoonfuls of soured cream if you like, but don't be too generous - soured cream contains less fat than double cream but still has 30 calories per tablespoon!

3 tsp minced garlic
3 c water
2 cans tomato sauce (15 oz cans)
2 cans diced tomatoes (15 oz cans)

3 TB soy sauce
1 tsp seasoned salt
2 TB Italian seasoning
2 c elbow macaroni (uncooked)
1 c shredded cheddar cheese

Steps:

  • Saute ground beef in skillet over medium-high heat until cooked. Drain. Add garlic and saute for about 5 minutes. Add water, tomato sauce, diced tomatoes, Italian seasoning, bay leaves, soy sauce, and seasoned salt. Stir well. Cover and allow to cook for 15-20 minutes.
  • Add the uncooked elbow macaroni to skillet, stir well, return the lid and simmer for about 30 minutes. Turn off heat, remove the bay leaves, and add 1 cup of cheddar cheese right before serving.

GOULASH

Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

1 medium yellow onion, diced
3 cloves garlic, minced
1 pound ground beef

Steps:

  • Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
  • Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.

  • Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.

  • Cook and stir the ground beef in a large Dutch oven over medium-high heat, breaking the meat up as it cooks, until the meat is no longer pink and has started to brown, about 10 minutes. Skim off excess fat, and stir in the onions and garlic. Cook and stir the meat mixture until the onions are translucent, about 10 more minutes.
  • Stir water, tomato sauce, diced tomatoes, soy sauce, Italian seasoning, bay leaves, and seasoned salt into the meat mixture and bring to a boil over medium heat. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally.
  • Stir macaroni into the mixture, cover, and simmer over low heat until the pasta is tender, about 25 minutes, stirring occasionally. Remove from heat, discard bay leaves, and serve.

4 slices bacon, chopped
3 pounds boneless beef shank, trimmed and cut into 2-inch cubes
Kosher salt and freshly ground black pepper
3 tablespoons all-purpose flour
2 tablespoons olive oil
2 medium onions, chopped
3 garlic cloves, minced
2 roasted red bell peppers, peeled and sliced
3 tablespoons Hungarian sweet paprika
2 teaspoons caraway seeds, toasted and ground
2 tablespoons red wine vinegar
1 (15-ounce) can whole peeled tomatoes, hand crushed
6 cups low-sodium beef broth
4 russet potatoes, peeled and thickly sliced
1/2 cup sour cream
Chopped flat-leaf parsley, for garnish

Steps:

  • Place a large heavy pot over medium heat and add the bacon. Fry for about 5 minutes until crisp and remove to a paper towel and reserve. Add the beef to the hot bacon fat and brown it evenly on all sides, turning with tongs; season generously with salt and pepper. While the beef is searing, sprinkle the flour evenly in the pot and continue to stir to dissolve any clumps. Add a little oil if necessary to keep the meat from sticking to the bottom of the pot.
  • Toss in the onions, garlic, roasted peppers, paprika, and caraway; cook and stir for 2 minutes until fragrant. Stir in the vinegar, tomatoes, and broth. Bring to a boil, then lower to a simmer and cook for 1 hour, covered, stirring occasionally.
  • Add the potatoes. Crumble the reserved bacon into the stew and continue to simmer for 30 minutes, partially covered, until the potatoes are tender. Season with salt and pepper. Remove from heat and stir the sour cream into the goulash just before serving. Garnish with the chopped parsley.

1 pound ground beef
1 yellow onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
2 cups low sodium chicken broth or stock
14.5 ounces canned tomato sauce
14.5 ounces canned diced tomatoes
1 tablespoon Worcestershire sauce
1 tablespoon Italian seasoning
1 teaspoon kosher salt
1 ½ cups elbow macaroni, uncooked
1 cup cheddar cheese, shredded
Parsley, optional garnish

Steps:

  • In a pot or large skillet, cook ground beef, onion, bell pepper, and garlic over medium heat until meat is no longer pink, about 5-7 minutes. The onion and bell pepper do not need to be cooked through all the way. They will finish cooking later.
  • Drain the fat and add in chicken broth, tomato sauce, diced tomatoes, Worcestershire sauce, Italian seasoning, and salt (everything EXCEPT the macaroni and cheese) and bring to a boil. Turn heat down to low and simmer covered for 15 minutes.
  • Stir in macaroni and cover. Simmer for an additional 15 minutes or until macaroni is al dente.
  • Take pan off heat and stir in cheddar cheese until melted.Garnish with parsley before serving, optional.

3 onion, finely sliced
5 cloves garlic, minced

6 tablespoons Hungarian sweet paprika
1 teaspoon cayenne pepper
water, divided
1 tablespoon cider vinegar
6 tablespoons tomato paste
1 teaspoon dried marjoram
1 teaspoon caraway seeds
5 pounds cubed beef stew meat
freshly ground black pepper

Steps:

  • Melt butter in a large pot over low heat and cook onions until they are softened, about 15 minutes, stirring occasionally. Add garlic and salt and continue to cook until onions are soft, lightly browned, and caramelized, stirring every 5 minutes, about 15 minutes. Season with paprika and cayenne and stir so onions turn a bright red, about 1 minute.
  • Pour 2 tablespoons water and vinegar into the pot and stir to combine. Add tomato paste, marjoram, and caraway seeds. Add beef, season with salt, and enough water to cover beef halfway. Cover pot and bring to a simmer over low heat. Cook goulash on a low simmer, stirring every 30 minutes, about 3 hours. Season with salt and pepper.

2 lbs (lean) ground beef
1 large chopped Vidalia onion
1 chopped red bell pepper
4 cloves chopped garlic
3 cups water
1 (29 oz) can tomato sauce
2 (14.5 oz) cans fire roasted tomatoes
2 teaspoons dried basil
2 teaspoons dried oregano
3 tablespoons Paula Deen Hot Sauce
1 teaspoon garlic powder
2 cups elbow macaroni
to taste kosher salt
to taste black pepper
to taste parsley

Steps:

  • Heat oil in a large Dutch oven over medium high heat. Add the beef, and brown for 10 minutes, breaking up with the back of your wooden spoon as you stir. Add the onion and continue to cook, while stirring, until tender, about 5 minutes.
  • Add all the remaining ingredients, except the macaroni, and cover with a lid, and simmer for 20 minutes.
  • Stir in the macaroni, cover with the lid, and simmer for another 30 minutes.
  • Let mixture stand for 20 minutes before serving. Serve with garlic bread and garnish with fresh parsley.
