BEEF BRISKET WITH HORSERADISH SAUCE
My husband likes horseradish with beef and this recipe makes him happy. I like to serve braised cabbage or slaw with this.

Steps:
- Sprinkle the beef with seasoned salt; coat evenly with flour.
- Set on a rack in a roasting pan and roast at 450 F.
- for 30 minutes.
- Combine the chili sauce, ketchup, and horseradish; mix well and spoon over meat.
- Pour boiling water into bottom of pan; cover.
- Reduce temperature to 350 F.
- and return meat to oven.
- Continue roasting about 3 hours, or until meat is tender.
- If desired, thicken cooking liquid for gravy.

- In a Dutch oven over medium heat, heat oil. Add brisket and brown evenly; remove brisket from pan and set aside.
- Add onions to pan and cook 3 minutes or until crisp-tender, stirring occasionally. Pour off drippings being careful to retain onions, then add brisket, 3/4 cup broth, and garlic; cover tightly.
- Cook brisket in oven 3 to 3-1/2 hours, or until fork-tender. Remove brisket to a cutting board; keep warm. Drain oil from pan and discard.

- Cut the beef chuck into large steak like pieces. I had two pieces of beef chuck at 2.5 lbs each. I cut each piece into three large pieces.
- Turn the stove up to medium high heat and melt 2 Tb of butter in a Dutch Oven. Sear the meat on both sides until golden brown. This will take several minutes on each side. Be patient and do not touch or move the beef around while it is searing. If you are using one pot you will need to brown the meat in two batches, adding the remaining 2 Tb of butter in the pot to sear the batch of meat. (See note)
- Remove the seared meat from the Dutch oven and cut the seared beef into equal size pieces of around 1 1/2" to 2". Set the cut meat aside and reserve for later.

- Preheat the oven to 325°. Season the brisket generously with salt and pepper. In a very large enameled cast-iron casserole, heat 3 tablespoons of the vegetable oil.
- Pour off all but 3 tablespoons of the fat from the casserole. Add the onions and half of the garlic and cook over moderate heat until softened, about 3 minutes.
- Meanwhile, in a small bowl, combine 1/4 cup of the prepared horseradish with the remaining garlic and 1/2 tablespoon of vegetable oil. Spread the garlic-horseradish paste on the fat side of the brisket.
- Pour the red wine into the casserole. Bring to a boil and cook over high heat, scraping up the browned bits from the bottom of the casserole, 1 minute.
- Scatter the potatoes around the brisket, cover and cook for about 2 hours longer, until the meat is very tender. Increase the oven temperature to 350°.
- Carefully transfer the brisket to a carving board and let rest for 30 minutes. Discard the bay leaves. Using a slotted spoon, transfer the vegetables to a serving platter and cover with foil to keep warm.
- Pour the brisket cooking liquid into a fat separator and let stand until the fat rises to the surface. Pour the cooking liquid into a gravy boat and discard the fat.
- Thinly slice the brisket across the grain and transfer to the platter with the vegetables. Spoon some of the gravy over the brisket and vegetables and serve, passing the remaining gravy at the table.

- In a very large Dutch oven dish on the stove top, heat three of the tablespoons of the vegetable oil.
- Add the seasoned meat and cook on high heat until browned for about 12 minutes, making sure to turn it throughout.
- Make sure the fat side is up. With the remaining fat and oil mixture in the Dutch oven, save 3 tablespoons in the dish.
- To the Dutch oven, add the onions and half of the minced garlic. Cook this over medium heat for about three minutes until softened.
- Then add the carrots, parsnips, and celery. Continuing cooking at medium heat for another six minutes until browned in spots.
