- Heat the butter in a frying pan and gently cook the carrot and onion until translucent. Add the mince and break it up to brown right through. Add the red wine and simmer until reduced.
- Add the tomatoes, stock, parsley and bay leaves, cover and simmer for 20-30 minutes until reduced to a thickish sauce. Remove the bay leaves and season the ragout to taste with salt and pepper.
- Heat the oven to 180°C (160° fan) 350°F gas 4. Butter a lasagne or baking dish.
- Wash the spinach and put into a pan with the water clinging to the leaves. Cook briefly until wilted. Refresh in cold water, then drain, squeeze out the water and chop.
- Heat the olive oil and gently cook the onion and garlic until translucent. Stir in the spinach with the creme fraiche; season with salt and pepper and add nutmeg to taste. Set aside.
- Layer the mince sauce, lasagne and spinach in the baking dish, finishing with mince sauce. Cover with sliced mozzarella. Bake for 30-35 minutes until piping hot and bubbling.
GROUND BEEF AND SPINACH PASTA BAKE
I was surprised at how few recipes there were on here for ground beef and spinach with pasta, aside from lasagna and manicotti, so I made this up one night.

Steps:
- Saute the onion in a deep frying pan for 1-2 minutes, then add the ground beef.
- Cook until beef is browned, then add the tomatoes, spices, salt and pepper to taste.
- Simmer for 3-4 minutes, then add the spinach and simmer 3-4 minutes more.
- Adjust seasonings to taste.
- Meanwhile, boil and drain the pasta according to directions on the package.
- Combine the two and place in a baking tray.
- Sprinkle the cheese over the top and bake in a hot oven until melted and the dish is pipping hot, about 5 minutes.
- Serve with a salad and garlic bread.

- Preheat oven to 190c.
- Place the beef, bacon, onion and garlic in a fry pan and cook gently until meat has changed colour and onion is softened.
- Add in the wine, tomatoes and their juice, basil, chili flakes, mixed spice and brown sugar. Bring to the boil, then reduce to a simmer and cook about 20 minutes. SAdd the spinach cook a couple of minute more, season with sall and pepper then add the cooked pasta.
- Spray a 6 cup oven proof dish and spoon in the pasta mix.
- Lightly beat the eggs, add in the milk and season with salt and pepper.
- Pour over the pasta mix then sprinkle with the grated parmesan.
- Bake in the oven for 20 minutes or untl set and golden brown.

I have tried so many pasta bakes but this one from the Australian Women's Weekly is still the best IMHO! Easy and very delicious, reheats great and everyone loves it - what more could you want! I've tried to translate the recipe into American as much as possible; hope you enjoy it as much as my family does.

Steps:
- Preheat oven to 180 (350F).
- Heat oil in large pan; cook onion, garlic, bacon and carrot, stirring, til carrot is just tender - about 8 minutes *.
- Add mince and cook, stirring, til mince changes colour; then add undiluted soup, tomato paste, sauce and oregano and simmer, covered, about 15 mins or til mixture has thickened slightly.
- While beef mixture is simmering, cook pasta and drain. Stir pasta into beef mixture, then spoon into an oiled deep 8 cup capacity ovenproof dish and sprinkle with cheese. Bake, uncovered, for 15 mins or until browned slightly.
- *If you want to, you can add a stick of chopped celery along with the onion etc or add some mushrooms just before the mince.
SPINACH BEEF MACARONI BAKE

- Cook macaroni according to package directions. Meanwhile, in a large Dutch oven, cook the beef, onions, carrots and celery over medium heat until meat is no longer pink; drain. Add the tomatoes, salt, garlic powder, pepper and oregano. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. , Drain macaroni; add macaroni and spinach to beef mixture. Pour into two greased 3-qt. baking dishes. Sprinkle with cheese. Bake, uncovered, at 350° for 25-30 minutes or until heated through.
