From the Sharp Carousel Microwave & Microwave/Convection Cookbook. This recipe uses only a microwave and was developed in ovens of 700 to 1050 watts.

1/4 cup low sodium soy sauce
1/4 cup water
2 tablespoons sherry wine
1/2 teaspoon garlic powder
2 lbs flank steaks, cut across grain into thin strips
2 medium green peppers, thinly sliced
2 tablespoons cornstarch
1/2 cup cold water
1 tomatoes, cut into 16 wedges

Steps:

  • In large resealable bag, combine soy sauce, 1/4 cup water, sherry, garlic powder and beef strips. Close tightly and refrigerate 8 hours or overnight.
  • Combine green peppers, beef and marinade in 2 quart casserole dish; cover.
  • Microwave on MEDIUM (50%) power until beef is tender, 20-25 minutes, stirring at after the first 10-12 minutes.
  • Drain, reserving meat juices, and set beef and peppers aside, covered.
  • Mix cornstarch and cold water in 2-cup glass measure or small bowl. Stir in reserved meat juices and microwave at HIGH (100%) power about 1 minute. Stir and microwave another 1-3 minutes or until the sauce thickens.
  • Stir sauce and tomatoes into beef mixture; cover and microwave on HIGH (100%) power until tomatoes are heated through, 1-3 minutes.

1 pound lean ground beef (90% lean)
1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
1 can (14-1/2 ounces) beef broth
1 tablespoon chili powder
1/4 teaspoon salt
1/8 teaspoon garlic powder
2 cups instant brown rice
1 medium sweet red pepper, sliced
1 medium green pepper, sliced
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • In a large cast-iron or other heavy skillet, cook beef over medium heat until no longer pink,6-8 minutes, breaking into crumbles; drain., Add tomatoes, broth, chili powder, salt and garlic powder; bring to a boil. Stir in rice and peppers. Reduce heat; simmer, covered, until liquid is absorbed, 8-10 minutes. Remove from heat; sprinkle with cheese. Let stand, covered, until cheese is melted. Freeze option: Before adding cheese, cool beef mixture. Freeze beef mixture and cheese separately in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth if necessary. Sprinkle with cheese.

1 3/4 cups pinto beans, and liquid
1 crushed garlic clove
2 tablespoons chili powder
1 (14 1/2 ounce) can cut up peeled whole tomatoes with juice
1 teaspoon salt
1/2 teaspoon cumin
1 (6 ounce) can tomato paste
1/4 teaspoon red pepper flakes
1/2 cup chopped onion

Steps:

  • Microwave method: Combine all ingredients in microwave-safe 2 quart casserole. Cover, microwave on high 5 minutes. Stir to break up meat. Microwave additional 20 minutes, stirring every 10 minutes. Note: If beef is less lean. Microwave first and drain off excess fat.
  • Stovetop method: Brown beef with green peppers, onions, and spices. Drain excess fat. Add beans, tomatoes, and tomato paste and simmer until peppers and onions are tender, or longer. Use water or (salt free) beef broth if additional liquid is needed.
  • Vegetarian variation: Swap 1 lb. frozen vegetable mix (such as California blend) for the ground beef. Sauté peppers and onion in 1 tablespoons vegetable oil along with the spices. When onions are clear, add vegetables along with tomatoes and tomato paste. Use vegetable broth or water if additional liquid is needed.

1 garlic clove, minced
1 medium onion, cut into wedges

1/4 cup water

1 small onion, chopped

1 can (28 ounces) diced tomatoes, undrained
2 large green peppers, cut into strips
2 to 3 tablespoons beef broth
1-1/2 teaspoons Worcestershire sauce
Hot cooked rice

Steps:

  • In a large bowl or shallow dish, combine flour, salt and pepper. Add beef slices, a few pieces at a time. Toss gently to coat., In a Dutch oven, heat oil over medium-high heat. Brown beef in batches. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Add tomatoes; bring to a boil. Reduce heat. 1 lb round steak
2 tablespoons soya sauce
1 tablespoon wine
salt
1 onion, sliced thinly
1 clove garlic, minced
3 tablespoons oil
4 tomatoes, cut in wedges
1 green pepper, thinly sliced
2 tablespoons sugar
1 1/2 tablespoons cornstarch, dissolved in 1/2 c. water

Steps:

  • Carefully slice beef into thin bite size pieces about 1x1".
  • Be sure you slice beef across the grain, otherwise the beef will become tough after cooking.
  • Marinate meat in soya sauce, wine, salt for a few minutes.
  • In the meantime slice tomatoes, green peppers, onion; mince garlic.
  • Make up corn starch solution.
  • Have sugar on hand.
  • Heat oil up in wok until smoking.
  • Stir fry beef quickly in it for no longer than 3 minutes.
  • Remove beef to a platter.
  • Reserve.
  • (If beef is allowed to remain cooking in wok with other ingredients, it will become hard and tough.) Add green peppers and tomatoes to wok.
  • Add sugar, cook tomatoes down until juice forms in bottom of wok (about 3-5 minutes cooking time).
  • Add beef back into wok.
  • Stir all ingredients up so that it is mixed.
  • Add corn starch solution, cook 1 minute.
  • Shut burner off, serve dish immediately.
