I'm always looking for ways to serve my family healthy and delicious food, so I started experimenting with my favorite veggies and ground beef. 4 medium carrots, shredded
1 medium yellow summer squash, shredded
1 medium zucchini, shredded
1 medium sweet red pepper, finely chopped
2 medium tomatoes, seeded and chopped
1 small red onion, finely chopped
1/2 cup ketchup
3 tablespoons minced fresh basil or 3 teaspoons dried basil
3 tablespoons molasses
2 tablespoons cider vinegar
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
2 pounds lean ground beef (90% lean)
10 whole wheat hamburger buns, split

Steps:

  • In a 5- or 6-qt. slow cooker, combine the first 13 ingredients. In a large skillet, cook beef over medium heat 8-10 minutes or until no longer pink, breaking into crumbles. Drain; transfer beef to slow cooker. Stir to combine., Cook, covered, on low 5-6 hours or until heated through and vegetables are tender. Using a slotted spoon, serve beef mixture on buns.

Vegan Sloppy Joes made with cannellini beans instead of beef. This healthy recipe is easy to make in only 20 minutes.

2 cups white beans (cooked (*see recipe notes))
1 1/2 cups tomato sauce ((passata))
1 small bell pepper (chopped)
2 cloves garlic (minced)
1 medium-sized onion (chopped)
2 tbsp tomato paste
1 tbsp balsamic vinegar
1 tbsp soy sauce ((gluten-free if needed))
1 tbsp vegan Worcestershire sauce ((optional))
1/2 tbsp oil
2 tsp brown sugar (or coconut sugar)
1 tsp ground cumin
1 tsp onion powder
1/2 tsp smoked paprika
1/8 to 1/2 tsp cayenne pepper ((or to taste))
1/2 tsp salt (or to taste)
black pepper to taste
4 soft burger buns ((I used homemade gluten-free))

Steps:

  • Heat oil in a skillet, add onion & pepper and sauté over medium heat for about 4-5 minutes.
  • Add garlic, tomato sauce, tomato paste, balsamic vinegar, soy sauce, vegan Worcestershire sauce, sugar, all spices and let simmer for a further 4-5 minutes, stirring occasionally.
  • Taste the sauce and adjust flavor as needed.
  • Add the cannellini beans and stir. Let simmer for 2-4 more minutes.
  • Serve on soft burger buns. Enjoy!
  • The Sloppy Joe mixture should be stored in the refrigerator for up to 3 days.

¼ cup vegetable oil
½ cup minced onion
2 (8 ounce) packages tempeh
½ cup minced green bell pepper
2 cloves garlic, minced
¼ cup tomato sauce
1 tablespoon vegetarian Worcestershire sauce
1 tablespoon honey
1 tablespoon blackstrap molasses
¼ teaspoon cayenne pepper
¼ teaspoon celery seed
¼ teaspoon ground cumin

½ teaspoon dried thyme

Steps:

  • Heat oil in a deep, 10-inch skillet over medium-low heat. Cook the onion in the oil until translucent. Crumble the tempeh into the skillet; cook and stir until golden brown. Add the green pepper and garlic; cook another 2 to 3 minutes.
  • Stir in the tomato sauce, Worcestershire sauce, honey, molasses, cayenne pepper, celery seed, cumin, salt, coriander, thyme, oregano, paprika, and black pepper; stir. Simmer another 10 to 15 minutes. Spoon hot onto hamburger buns to serve.

This vegan Sloppy Joes recipe has a tangy lentil filling that's full of flavor and nutrients! It's a plant based dinner everyone will love.

2 cups brown or green lentils
1 quart vegetable broth, divided
1 teaspoon kosher salt, divided
1/2 green bell pepper (about 3/4 cup diced)
1 medium onion (about 1 cup diced)
4 garlic cloves
2 tablespoons olive oil
1 cup plus 2 tablespoons organic ketchup, divided*
2 tablespoons plus 1 teaspoon vegan Worcestershire sauce, divided (or use this substitute)
1 teaspoon each mustard powder, onion powder, and chili powder
Hot sauce, to taste
Pickled onions, to serve
Bread and butter pickles, to serve
8 whole wheat buns (make sure they are vegan, use gluten-free as desired)

Steps:

  • In a large saucepan, place the lentils with 3 cups of the vegetable broth, 2 cups water, and 1/2 teaspoon kosher salt. Bring to a rapid simmer. Reduce the heat and simmer uncovered for about 20 to 25 minutes, until the lentils are tender but still hold their shape (start tasting at 15 minutes; the exact timing depends on the heat level and your pan size). Drain the excess liquid.
  • Once you've started the lentils, dice the bell pepper. Dice the onion. Mince the garlic.
  • In another large saucepan, heat the olive oil over medium high heat. Add the bell pepper and onion and cook 5 minutes until the onions are translucent. Add the garlic and cook for 1 minute. Add vegetable broth, 1 cup ketchup, Worcestershire sauce, mustard powder, onion powder, and chili powder. Simmer for 5 minutes until thickened.
  • When the lentils are done, add them to the sauce. Cook on low heat for about 5 minutes. Then remove the heat and stir in the remaining 2 tablespoons ketchup, 1 teaspoon Worcestershire sauce, and 1/2 teaspoon kosher salt.
  • Serve on a bun with pickled onions and pickles. (If desired, toast the buns prior to serving.) Make ahead: Leftovers save well for 3 to 4 days. Make in advance, refrigerate and then reheat in a saucepan. Add an extra squeeze of ketchup if it seems dry.

1 teaspoon Better Than Bouillon Vegetarian No Beef Soup Base
1 tablespoon brown sugar
1 teaspoon chili powder
1/4 teaspoon granulated garlic
1/4 teaspoon granulated onion
1/4 teaspoon salt
1 tablespoon vegan butter, I use earth balance
1/2 medium yellow onion, diced
1/2 large green bell pepper, chopped small
2 and 1/2 cups vegan meat crumbles, I like Gardein Beefless Ground
1 cup cooked lentils, rinsed and drained (I use canned)
hamburger buns or buns of choice
thinly sliced red onions (optional)
vegan cheese slices (optional)

Steps:

  • Whisk the sauce ingredients together in a medium bowl and set aside.
  • Heat a large non stick skillet over medium heat. Add the vegan butter, onions, peppers and a pinch of salt and pepper. Sauté for 5 minutes or so until the veggies are softening and browning up a bit.
  • Add in the vegan crumbles and cook for a couple of minutes until defrosted and heated through.
  • Turn down the heat to medium-low, stir in the lentils and sauce. Simmer for a couple of minutes until you are happy with the consistency.
  • Pile the meat filling in a warm buttered hamburger bun and enjoy! Add thin sliced red onions and or vegan cheese if you like. For serving ideas see notes section*

Add carrots, summer squash, zucchini, red pepper, tomatoes, onion, ketchup, water, basil, vinegar, garlic, salt and pepper (do not stir)., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 5 minutes. Quick-release pressure. Stir in molasses. Using a slotted spoon, serve beef mixture on buns. Another cherished family recipe has been recorded here at Recipezaar! With five boys for my parents to feed, I was lucky if I got half a sloppy joe to eat! To be served with previously frozen milk-de rigueur, as are most of my family recipes. This recipe puts a big smile on my face!

1 lb ground beef (can use Gimme Lean for vegetarian version)
1 small onion, minced
1 (10 3/4 ounce) can campbell's vegetarian vegetable soup, undiluted
1 tablespoon ketchup
hamburger bun

Steps:

  • In saute pan, heat up a little bit of oil and brown meat until no longer pink. Add the onion and saute another 2-3 minutes.
  • Add the entire can of **UNDILUTED** soup to the meat along with the ketchup. Stir and heat through.
  • Serve over warmed or toasted hamburger buns. For hungry boys if might be necessary to double or even triple this recipe.
  • Pass the carton of milk and fight over who is doing the dishes!
  • NOTE: If by chance the sloppy joe mixture is too watery, stir in about 1/2-1 tablespoon flour and incorporate well.
