Beef Tzimmes with Butternut Squash image

This is a Faye Levy recipe for the local weekend paper. Tzimmes can be made with meat or without. We usually have it without, as a side dish, but with meat it makes a great main course, very seasonal with the leaves turning color in the fall. This is not only perfect for Rosh Hashana, it's also great on Passover, and even for Thanksgiving.

2 lbs boneless lean beef chuck, trimmed of fat
1 -2 tablespoon vegetable oil
1 large onion, chopped
2 large carrots, peeled and cut in 1 inch chunks
salt & freshly ground black pepper
2 -2 1/2 cups water
2 lbs butternut squash
2 tablespoons honey
1/4 teaspoon ground cinnamon
1 1/4 cups prunes, pitted

Steps:

  • Cut beef in 1 1/2- 2 inch pieces and pat them dry.
  • Heat 1 tablespoons oil in a heavy stew pan.
  • Add beef cubes in 2 batches, browning each lightly on all sides over medium-high heat and removing browned meat with a slotted spoon to a plate.
  • Add remaining oil if pan is dry and heat it.
  • Add onion and saute over medium heat, stirring often, until brown, about 10 minutes.
  • Cover if pan becomes dry.
  • Return meat to pan with any juices on plate.
  • Add carrots, salt, pepper and enough water to just cover.
  • Bring to a boil, skimming occasionally.
  • Cover and simmer over low heat, stirring occasionally, for 2 hours or until beef is tender.
  • For a lighter sauce, refrigerate cooked meat and its sauce separately for several hours, then skim the fat from top of sauce.
  • Return the beef to sauce and reheat.
  • Peel the squash and cut it in half lengthwise.
  • Discard seeds and stringy parts in cavity.
  • Cut squash in 1 inch cubes.
  • Stir honey and cinnamon into sauce.
  • Add squash and push pieces into liquid.
  • Cover and simmer for 10 minutes.
  • Turn squash pieces over.
  • Add plums.
  • Cover and simmer for 15 minutes or until squash is tender.
  • Taste and adjust seasoning.
  • Serve stew from a casserole or deep serving dish.

1/2 medium butternut squash, peeled and cubed
2 medium sweet potatoes, peeled and cubed
6 medium carrots, sliced
2 medium tart apples, peeled and sliced
1 cup chopped sweet onion
1 cup chopped dried apricots
1 cup golden raisins
1/2 cup orange juice
1/4 cup honey
2 tablespoons finely chopped crystallized ginger
3 teaspoons ground cinnamon
3 teaspoons pumpkin pie spice
2 teaspoons grated orange zest
1 teaspoon salt
Vanilla yogurt, optional

Steps:

  • Place the first seven ingredients in a 5- or 6-qt. slow cooker. Combine orange juice, honey, ginger, cinnamon, pie spice, orange zest and salt; pour over top and mix well., Cover and cook on low until vegetables are tender, 5-6 hours. Dollop servings with yogurt if desired.

No Rosh Hashanah celebration is complete without a serving of tzimmes, a dish of root vegetables and dried fruits. The fruit and honey in the mix symbolize the sweetness of the New Year. The carrots and sweet potatoes are cut into rounds to honor the tradition of hope for goodness and sweetness without end. This version of the classic dish gets a savory undertone from a full cup of vegetable broth, making it all the better to pair with a slice of brisket or roast chicken.

4 tablespoons salted butter or vegan butter substitute (see Cook's Note)
1 1/2 pounds medium rainbow carrots, sliced into 1/2-inch-thick rounds (see Cook's Note)
1 1/2 pounds small sweet potatoes, peeled and sliced into 1/2-inch-thick rounds (see Cook's Note)
4 ounces red pearl onions, peeled (about 1 cup)
1/3 cup candied ginger, roughly chopped
10 dried apricots
10 prunes, pitted
1 cup low-sodium vegetable broth
1/4 cup honey
1 cinnamon stick
1 teaspoon kosher salt
Pinch fine sea salt
Ground cinnamon
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt 2 tablespoons of the butter in a medium skillet over medium heat and then add the carrots, sweet potatoes and onions. Sauté, stirring frequently, until lightly browned all over, about 8 minutes. Spread the vegetables evenly in a 9-by-13-inch casserole and tuck the ginger, apricots and prunes around the dish.
  • Add the vegetable broth and honey to a small bowl and whisk together to combine. Pour over the fruits and vegetables, then submerge the cinnamon stick. Cover the dish with aluminum foil and braise for 30 minutes. Remove the foil, stir the mixture and continue cooking (uncovered) until the vegetables are tender and the sauce is reduced and thickened to a syrupy consistency, about 30 minutes more.
  • Break the remaining 2 tablespoons butter into small pieces, dot over the top and gently stir to coat the vegetable mixture in the reduced sauce. Sprinkle with a pinch of sea salt and a light shake of cinnamon. Serve topped with mint and parsley.

1 (8 ounce) can tomato sauce
1 1/2 cups beef broth

3 cups couscous, cooked
1/4 cup sliced almonds
4 teaspoons fresh parsley, minced

Steps:

  • Heat oil in a large saucepan over med-high heat.Add beef and cook until brown on all sides. Transfer meat to plate, leaving juices in saucepan.
  • Add onion. Cook, stirring, until translucent. Add garlic & ginger Cook 1 more minute.
  • Return beef to pot. Stir in squash, tomatoes, tomato sauce, broth, cumin, cinnamon, and pepper flakes.
  • Bring to a boil. reduce heat to low. Cover and simmer until beef is tender (30-60 min).
  • Divide cous cous and stew among 4 bowls. Top with almonds and parsley.

3 tablespoon olive oil
1 onion, peeled and chopped
2 cloves garlic, chopped
1 tablespoon minced fresh rosemary
1 tablespoon chopped fresh thyme
2 pounds stew beef, cut into 2-inch cubes
1/2 teaspoon salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
2 tablespoons all-purpose flour
1 cup Marsala wine
1 pound butternut squash, trimmed and cut into 2-inch cubes
1/4 cup chopped sun-dried tomatoes
3 to 4 cups beef broth
2 tablespoons fresh chopped flat-leaf parsley
Crusty bread, for serving

Steps:

  • In a large soup pot heat 3 tablespoons of olive oil over medium heat. Add the onions, garlic, rosemary, and thyme and saute until the onions are tender, about 2 minutes. Toss the beef cubes in salt and pepper and flour. Turn up the heat to med-high and add the beef to the pot. Cook until the beef is browned and golden around the edges, about 5 minutes. Add the Marsala wine. Using a wooden spoon, gently stir up all the brown bits off the bottom of the pan. Add the butternut squash and sun-dried tomatoes and stir to combine. Add enough beef broth to just cover the beef and squash. Bring the stew to a boil over high heat, then reduce the heat to low and simmer, covered, for 1 hour. Season the stew with additional salt and pepper to taste. Sprinkle with the chopped parsley. Serve with crusty bread alongside.

1 (6- to 7-lb) first-cut brisket
1 3/4 teaspoons salt
1 teaspoon black pepper
3 tablespoons olive oil
4 cups brown chicken stock or reconstituted brown chicken demi-glace
3/4 cup Sherry vinegar
2 lb carrots, peeled and cut crosswise into 2-inch-long pieces
4 medium sweet potatoes, peeled and cut into 2-inch pieces
2 3/4 cups dried pitted prunes

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Pat brisket dry and rub all over with 1 teaspoon salt and 1/2 teaspoon pepper. Heat oil in a 17- by 11-inch heavy roasting pan (3 inches deep) over moderately high heat, straddled across 2 burners, until hot but not smoking, then brown brisket, starting with fat side down, on both sides, about 5 minutes per side. Remove from heat, then add stock and vinegar to pan. Cover pan tightly with heavy-duty foil and braise brisket in oven 2 hours. Add carrots and potatoes to pan and braise, covered, 1 hour. Add prunes and braise, covered, until meat is fork-tender, about 30 minutes more. Cool meat, uncovered, to room temperature, about 1 hour, then chill, covered, at least 12 hours.
  • Put oven rack in middle position and preheat oven to 350°F.
  • Transfer brisket to a cutting board and slice across the grain about 1/4 inch thick. Discard as much fat as possible from surface of vegetables and sauce, then return sliced meat to pan and reheat, covered with foil, until heated through, about 40 minutes. Sprinkle with remaining 3/4 teaspoon salt and remaining 1/2 teaspoon pepper, then arrange meat with tzimmes and sauce on a large platter.

Serve the stew or let it come to room temperature and then store in the refrigerator overnight or until ready to serve. The flavor of the stew improves if made at least 1 day ahead.) Reheat, covered, over medium heat until hot throughout. Garnish with the remaining fresh thyme leaves.
  • Freezer-Friendly Instructions: The stew can be frozen for up to 3 months. Just omit the sweet potatoes because they don’t freeze well. If you’d like, boil some sweet potatoes separately when you defrost the stew and either add them into the stew prior to serving or serve them on the side. Defrost the stew in the refrigerator for 24 hours before you plan to serve it and then reheat on the stovetop over medium heat until hot.
