- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef with onion in a skillet over medium heat until meat is crumbly and no longer pink, about 10 minutes. Drain grease. Stir 1 cup Cheddar cheese, sour cream, parsley, taco seasoning, oregano, and black pepper into the ground beef until cheese has melted. Mix in enchilada sauce, chili powder, garlic, and salt; bring to a simmer, reduce heat to low, and simmer until meat sauce is slightly thickened, about 5 minutes.
- Lay a tortilla onto a work surface and spoon about 1/4 cup of meat sauce down the center of the tortilla. Top meat sauce with 1 tablespoon black beans and a sprinkling of black olives. Roll the tortilla up, enclosing the filling, and lay seam-side down into a 9x13-inch baking dish. Repeat with remaining tortillas. Spoon any remaining meat sauce over the enchiladas and scatter any remaining black beans and black olives over the top. Sprinkle tortillas with 1/4 cup Cheddar cheese.

- Cook Ground Beef: Heat a large skillet over medium heat. Add the ground beef. Break the beef up with a wooden spoon while cooking. Cook the ground beef fully, until browned and no longer pink.
- Drain: Drain any excess grease from the skillet. Then return to the stove and reduce the heat to low.
- Season: Add the 1/2 cup tomato sauce and taco seasoning. Stir together until the meat is coated in the sauce.
- Simmer: Allow to simmer for 5 minutes.
- Fry Tortillas: Pour 1/2 cup oil in a medium size skillet, heat over medium high heat. Carefully dip a tortilla, if the oil sizzles and bubbles then it's hot enough. Gently lay the tortilla in the oil and fry each side for about 30 seconds, just enough to give some color and add some crispness.
- Shape Tortillas: Remove the tortilla to a paper towel to absorb oil, and carefully fold the tortilla over to create a taco shape. I do this with my tongs, or two forks, whatever I'm using to lay the tortillas in the oil and remove them.

- Mix all the taco seasoning mix ingredients in a small bowl and set aside. For the tacos, pre-heat a cast iron pan over medium-high heat with 2 tablespoons of oil. Add the onions, peppers, celery, along with ½ teaspoon salt and a couple cracks of pepper, cook for 5 minutes. Add the garlic and cook another 3 minutes or until the peppers have softened a little bit. Add the taco seasoning mix and mix well. Cook for 3 minutes so the spices can bloom then add the beef. Break up the beef well and raise the heat to medium-high and add 1/2 teaspoon of salt. Cook until the meat is almost cooked through, add the bone broth, reduce to a simmer, and cook for 15 minutes, or until thick and saucy. Check for seasoning, you may need more salt, and skim some of the fat off the beef. Set aside.
- Make the slaw by adding the cabbage, carrots, green onions, and pepitas to a large bowl and season with a pinch of salt and a couple cracks of pepper. Add the mayo, lime juice and mix well and check for seasoning. You may need more mayo or lime juice.
- Toast the tortillas or warm in the oven, place some slaw in the tortilla and top with the beef mixture. Enjoy!

- Make a taco mold by rolling out aluminum foil and folding it over in 10-inch increments until you have a 4-sheet-thick piece of foil. Fold the large foil square in half horizontally, bringing the bottom to the top, and then turn 90 degrees. Crimp over the top and bottom edges by 1 inch, and then fold over the sides by 1 inch. Place the aluminum foil roll or a narrow rolling pin into the center of the foil square and bring the sides together to create a hollow, narrow tube to mold the taco, making sure it can stand up on the long side.
- Heat the oven to 250 degrees F.
- Heat the peanut oil in a 12-inch cast iron skillet over medium heat until it reaches 350 degrees F on a deep-fry thermometer, about 5 minutes. Adjust the heat to maintain the temperature.
- Shape 1 tortilla around the aluminum foil mold, forming a taco shape. Use tongs to hold up the sides against the mold and put the bottom of the tortilla into the hot oil and fry for 20 seconds. Lay 1 side of the tortilla down in the hot oil and fry for 30 seconds. Flip the tortilla over and fry for an additional 30 seconds. Remove the taco shell to a cooling rack set over a newspaper lined half sheet pan and cool for 30 seconds before removing the mold. Sprinkle the hot tortillas with kosher salt, to taste. Repeat frying procedure with the remaining tortillas. Keep the taco shells warm in the heated oven while preparing the filling.
- Drain all but 2 tablespoons of the peanut oil from the skillet and return to medium heat. Once the oil shimmers, add the onion and cook until softened and lightly browned around the edges, about 3 to 4 minutes. Add the ground meat, 1 teaspoon salt, and garlic. Cook until browned, about 3 to 4 minutes, stirring occasionally, to break up the meat. Add Taco Potion and beef broth. Bring to a simmer and cook, uncovered, until sauce is slightly thickened, 2 to 3 minutes.
- Assemble each taco with meat mixture, panela, jalapeno slices, lettuce, tomatoes, and cilantro. Serve immediately.
- Put all of the ingredients in a small jar and shake to combine. Store in an airtight container for up to 1 month.

- Heat a skillet over medium heat. With ground beef, I rarely add any oil to the skillet because it tends to be fattier. If needed, you can add 1 teaspoon of olive oil (of your oil of preference). Once the skillet it hot, add the ground beef and break it apart with a wooden spoon.
- Cook, stirring and breaking apart the beef often, until it begins to brown. Add in the cumin, paprika, garlic powder, chili powder, salt and pepper. Stir well to disperse all the seasonings. Cook until the beef is just browned.
- I love the seasoned beef like this - it's a personal preference. If you'd like it saucier, follow the directions below. You can also add in a tablespoon of beef or vegetable stock, or even tomato sauce, to make it saucier.
- Serve the ground beef in tacos (warm corn or flour tortillas in the oven for a few minutes), on nachos or in salads. We like to top ours with a quick pico de gallo, fresh cilantro, white cheddar cheese, diced avocado and pickled onions.
- If you'd like to add peppers and onions: heat the skillet over medium heat and add 1 to 2 teaspoons of olive oil. Add in 1 diced onion, 1 diced bell pepper and a few minced garlic cloves with a pinch of salt. Toss well and cook until softened, about 5 minutes. Proceed with browning the beef above!

TACO TIME'S SECRET BEEF SEASONING
I found this recipe on Y! Answers last week and finally tried it tonight. It did not disappoint. I used burrito size tortillas. I thought maybe that Taco Time's mixture is a little wetter, but the taste is spot-on! I used about 1/4 of a large onion and used a chopper. *Update - added some water as it was warming and it definitely helped. I didn't measure, but it was at least 4 T. Just add a little at a time.

Much lower salt than pre-made. Salt can be omitted. Great with half ground buffalo and half ground turkey breast or whatever you prefer. Buy bulk spices and you can make 5-plus batches for under $1.00!! Increasing black pepper and adding optional ingredients will increase heat.
