Our Favorite Ground Beef Tacos image

Weeknight ground beef tacos that are anything like the 90s! These are made with a homemade taco seasoning and served with the perfect toppings!

1 pound 85% to 93% lean ground beef
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon freshly cracked pepper
1 pint cherry tomatoes, (quartered)
½ sweet onion, (diced)
¼ cup cilantro, (chopped)
½ lime, (juiced)
pinch of salt and pepper
corn or flour tortillas, (warmed)
hard shells or tortilla chips, (if desired)
sharp white cheddar cheese, (freshly grated)
avocado, (diced)
fresh cilantro
quick pickled onions

Steps:

  • Heat a skillet over medium heat. With ground beef, I rarely add any oil to the skillet because it tends to be fattier. If needed, you can add 1 teaspoon of olive oil (of your oil of preference). Once the skillet it hot, add the ground beef and break it apart with a wooden spoon.
  • Cook, stirring and breaking apart the beef often, until it begins to brown. Add in the cumin, paprika, garlic powder, chili powder, salt and pepper. Stir well to disperse all the seasonings. Cook until the beef is just browned.
  • I love the seasoned beef like this - it's a personal preference. If you'd like it saucier, follow the directions below. You can also add in a tablespoon of beef or vegetable stock, or even tomato sauce, to make it saucier.
  • Serve the ground beef in tacos (warm corn or flour tortillas in the oven for a few minutes), on nachos or in salads. We like to top ours with a quick pico de gallo, fresh cilantro, white cheddar cheese, diced avocado and pickled onions.
  • If you'd like to add peppers and onions: heat the skillet over medium heat and add 1 to 2 teaspoons of olive oil. Add in 1 diced onion, 1 diced bell pepper and a few minced garlic cloves with a pinch of salt. Toss well and cook until softened, about 5 minutes. Proceed with browning the beef above!

1 medium sweet Vidalia onion, diced small
1 pound lean ground beef (I used 85% lean)
olive oil, optional if necessary
one 1.25-ounce packet taco seasoning
two 8-ounce frozen pizza crusts (read blog post for crust discussion)
one 15-ounce can black seasoned refried beans, divided
1 1/2 cups shredded mozzarella cheese, divided
2 cups shredded Mexican cheddar cheese blend, divided
1 Roma tomato, diced small, divided
fresh cilantro, for garnishing

Steps:

  • Preheat oven to 425F and line one or two sheet pans with parchment paper or a Silpat; set aside.*
  • To a large skillet, add the onion, beef, olive oil if necessary, and cook over medium-high heat for about 5 to 6 minutes, or until beef is cooked through and onions are soft and translucent; crumble beef as it cooks and stir frequently to ensure even cooking.
  • Add the taco seasoning and stir to combine. Take skillet off the heat and set aside.
  • Place the frozen pizza crusts directly from the freezer on either one or two sheet pans, depending on the exact size of your crusts and pans.
  • Add an equal amount of the refried beans to both crusts, leaving a bare 1-inch margin from the edges.
  • Add an equal amount of the beef mixture to both crusts.
  • Add 3/4 cup mozzarella cheese to each crust.
  • Add 1 cup cheddar cheese to each crust.
  • Bake for about 12 minutes, or until cheese is melted and crusts are as cooked through as desired.
  • Add an equal amount of tomato and cilantro as desired to both crusts and serve immediately. Pizza is best fresh but will keep airtight in the fridge for up to 5 days.

I like to BAKE my shells with the taco meat and cheese for molten goodness, but this is optional. If you skip it, just bake the empty shells per packet directions. SCALE UP the seasonings and add vegetables to make the filling stretch further!

1 cup tomato sauce
2 teaspoons honey
1 tablespoon white vinegar
1 tablespoon Club House® Taco Seasoning
1 tablespoon olive oil
¼ cup yellow onion, minced
1 clove garlic, minced
2 lb lean ground beef
¼ cup bread crumbs
1 packet Club House® Taco Seasoning
2 large eggs, beaten
nonstick cooking spray, for greasing
12 small flour tortillas
guacamole
salsa
shredded cheese
sour cream

Steps:

  • Make the taco sauce: In a medium bowl, whisk together the tomato sauce, honey, vinegar, and Club House® Taco Seasoning until smooth. Set aside.
  • Make the meatloaf muffins: Preheat the oven to 180°C (350°F).
  • Heat olive oil in a medium pan over medium-high heat. Add the onion and sauté for 4-5 minutes, until softened and starting to brown. Add the garlic and sauté for another minute, until fragrant. Remove the pan from the heat.
  • Add the ground beef to a large bowl with the cooked onion and garlic, bread crumbs, Club House® Taco Seasoning, eggs, and ½ cup taco sauce. Mix until well combined.
  • Divide the beef mixture into 12 4-ounce balls.
  • Grease a muffin tin with nonstick spray. Gently press the tortillas into each muffin cup, making mini bowls. Place a meatloaf ball in each bowl and top each with 1 teaspoon taco sauce.
  • Bake the meatloaf muffins for 30 minutes, or until the internal temperature of the beef reaches 70°C (160°F). Let the muffins cool in the tin for 5 minutes.
  • Remove the muffins from the tin. Serve with guacamole, salsa, shredded cheese, and sour cream for topping.
  • Enjoy!

2 cups shredded sharp Cheddar cheese
1 ½ cups crushed corn chips
1 cup salsa
1 egg
1 (1 ounce) packet taco seasoning mix
salt and ground black pepper to taste
¼ cup taco sauce, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine ground beef, ground pork, Cheddar cheese, corn chips, salsa, egg, taco seasoning mix, salt, and pepper in a large bowl; mix until well combined. Form mixture into 12 equally-sized balls and press into a 12-cup muffin tin. Baste each "muffin" with taco sauce to coat.
  • Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let cool 5 minutes before serving.

1 pound ground beef
3/4 cup water
1 envelope taco seasoing
1/4 cup butter, softened
1/4 cup sugar
1 large egg
1-3/4 cups all-purpose flour
4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1 cup salsa
1 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Add water and taco seasoning; simmer, uncovered, for 15 minutes. Cool. , In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine dry ingredients; add to the creamed mixture alternately with buttermilk, beating well after each addition. Fold in meat mixture. , Fill greased muffin cups two-thirds full. Bake at 425° for 12-15 minutes or until golden brown. Carefully remove muffins to a greased 13x9-in. baking dish. Top each with salsa and cheese. Bake 5 minutes longer or until the cheese is melted.

1 pound lean ground beef (90% lean)
1 envelope taco seasoning
