Delicious salads are all about being inventive with your combos, and I'm a real fan of mixing up the textures to create the perfect balance of crunch, lightness and excitement. Mixing and matching the way you chop your ingredients, or spending a bit of time and care to finely slice or speed-peel some elements of your salad is only ever going to be a good thing, and can often be the difference between an average and a fantastic salad. Beef is packed with zinc, which means it's great for helping you to get the goodness out of the food you eat - bonus!

100g fine rice noodles
¼ bunch fresh coriander
¼ bunch fresh mint
extra virgin olive oil
2 cloves garlic
4cm piece ginger
1 red chilli
2 spring onions
1 carrot
½ cucumber
1 gem lettuce
olive oil
200g lean minced beef
2 tablespoons soy sauce
1 lime
1 teaspoon sesame seeds
1 teaspoon runny honey

Steps:

  • Tip the noodles into a bowl, cover with boiling water and leave to soak for 5 minutes, stirring occasionally. Pick the herb leaves and add the stalks to the noodles.
  • When the noodles are tender, discard the herb stalks and drain in a sieve. Refresh under cold water, then toss in a little extra virgin olive oil.
  • Peel and finely slice the garlic, peel and finely chop the ginger, and deseed and finely slice the chilli. Trim and finely chop the spring onions.
  • Scrub, trim, then speed-peel the carrot into long ribbons. Halve the cucumber lengthways, scoop out the seeds and finely slice into half moons.
  • Trim and separate the gem lettuce leaves, then divide between your plates.
  • Heat 1 tablespoon of olive oil in a frying pan over a medium-high heat. Add the beef, then stir-fry for 8 to 10 minutes, or until crispy, breaking it up with the back of a spoon as you go. Add the garlic and half the ginger for the last few minutes.
  • Mix the soy sauce, 2 tablespoons of extra virgin olive oil and half the lime juice together to make a dressing.
  • Tip the noodles into a large bowl, then toss together with the carrot, cucumber, remaining ginger, most of the spring onion and two-thirds of the dressing, and drop in little piles onto the lettuce leaves.
  • When the beef is crispy, add the sesame seeds and honey and cook for 1 minute, then scatter over the plates.
  • Tear up the herb leaves, then sprinkle over the salad along with the remaining spring onion and the sliced chilli. Drizzle over the remaining dressing and serve with lime wedges for squeezing over.

2 green onions, chopped
1 lemon grass, cut into 1 inch pieces
1 cup chopped fresh cilantro
1 cup chopped fresh mint leaves
1 cup lime juice
⅓ cup fish sauce
1 tablespoon sweet chili sauce

1 ½ pounds (1 inch thick) steak fillet
1 head leaf lettuce - rinsed, dried and torn into bite-size pieces
½ English cucumber, diced
1 pint cherry tomatoes

Steps:

  • In a large bowl, stir together the green onions, lemon grass, cilantro, mint leaves, lime juice, fish sauce, chili sauce and sugar until well combined and the sugar is dissolved. Adjust the flavor, if desired, by adding more sugar and/or fish sauce. Set aside.
  • Cook the steak over high heat on a preheated grill for approximately 4-6 minutes on each side, until it is cooked medium. Do not overcook the meat! Remove from heat and slice into thin strips. Add the meat and its juices to the sauce and refrigerate, tightly covered, for at least 3 hours.
  • Tear the lettuce into bite size pieces and place in a salad bowl. Arrange the cucumber on top of the lettuce, and then pour the meat and sauce over. Top with the cherry tomatoes and garnish with fresh cilantro leaves.

I've never found a recipe for crispy ginger beef like the ones in the restaurants. I have experimented, and found something pretty close. Serve with rice and some steamed veggies.

¼ cup cornstarch
¼ tablespoon salt
black pepper
12 ounces flank steak, thinly sliced
1 quart oil for frying
4 tablespoons soy sauce
1 tablespoon rice vinegar
½ tablespoon rice wine
1 ½ tablespoons honey
7 tablespoons granulated sugar
½ tablespoon chile paste
¼ cup water
3 tablespoons chopped fresh ginger root
1 tablespoon vegetable oil
2 cloves garlic, chopped
¼ cup sliced onion
¼ cup diced red bell pepper

Steps:

  • Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Meanwhile, in a mixing bowl, combine cornstarch, salt and pepper together. Mix thoroughly. Toss the steak slices in the cornstarch mixture and coat well.
  • Deep fry the coated steak slices until golden brown. Check to make sure they are cooked through. Remove from oil, and set aside.
  • In another mixing bowl, combine the soy sauce, rice vinegar, rice wine and honey. Add sugar, chili paste, water, and ginger. Mix well and set aside.
  • Heat a wok or deep frying pan over medium high heat. Add 1 tablespoon of oil, and quickly saute the onion, garlic and red pepper for 30 seconds. Add the sauce mixture, and cook another 30 seconds. Finally, add the strips of fried steak and toss to heat through and coat with sauce.

4 tsp lime juice
1 tbsp fish sauce
1 tbsp light muscovado sugar
1 red chilli , deseeded and finely chopped
200g bag crunchy salad mixed with 1bsp orangec juice
50g carrot , grated (1 medium carrot)
handful beansprouts

Steps:

  • Heat grill to high. Lightly season the steaks, then grill on each side for 2-3 mins for medium-rare, or longer if you like. Mix the lime juice, fish sauce, sugar and chilli together in a jug. Tip the salad, carrot and beansprouts into a bowl, then add the dressing, tossing everything together. Divide between four plates.
  • Thinly slice the beef and add to the salad. Some steamed rice flavoured with rice vinegar is a good side dish.

1 small red onion, thinly sliced
1/2 cup carrot (packaged matchstick-cut)
1/2 cup of fresh mint, chopped
1/4 cup fresh cilantro, chopped
1/4 cup peanuts (unsalted, dry roasted, finely chopped)

Steps:

  • To make the dressing, whisk together the lime juice, fish sauce, brown sugar, ginger and sriracha in a small bowl.
  • Put the beef in a large bowl and drizzle with 1 tablespoons of the dressing; toss until coated evenly. Spray a nonstick spray on a grill pan or nonstick skillet and set over medium-high heat. Place some of the slices of beel on the grill pan and cook, turning occasionally, until browned and crispy along the edges, about 10 minutes. Repeat with remaining beef, transferring it to a large plate.
  • Layer the cabbage, onion, carrots, and mint on a platter; top with the steak and sprinkle with the cilantro and peanuts. Drizzle with remaining sauce.

THAI SUN DRIED CRISPY BEEF

My fiance, Ry, used to always order this dish at the Bangkok Garden (Thai restaurant), in Bethesda, MD. But now... he'd rather have mine!

2 lbs flank steaks (I successfully have substituted other inexpensive cuts as well)
3 tablespoons finely chopped lemongrass
2 bird's eye chili peppers (my mom keeps a fresh supply of these in the freezer)
5 tablespoons chopped garlic (I am guilty of using a heavy hand with the garlic, but it suits my family just fine!)
5 tablespoons chopped chinese parsley roots
1/4 cup chopped shallot
1/2 teaspoon chopped fresh ginger
1/4 cup fish sauce
2 tablespoons sugar (I had only cooking splenda in the house once, and it went undetected by Ry)
6 finely chopped kaffir lime leaves
5 cups oil, for deep-frying (try to choose an oil with a high smoke point such as canola, sunflower etc...)
sriracha sauce

Steps:

  • Cut steak lengthwise, with grain, in strips 1-2 inches wide and 4-5 inches long.
  • Combine lemongrass, chili peppers, garlic, parsley roots, shallots and ginger into a mortar or food processor and grind together, until well mixed.
  • Add mixture from last step to a gallon sized zip top freezer bag and add fish sauce, sugar and kaffir lime leaves -- stir to mix in new ingredients.
  • Add beef strips and mix well to coat (don't be afraid to get your hands dirty, reach into that bag, it'll be worth it).
  • Refrigerate bagged beef mixture overnight.
  • Lay beef strips out on a large cookie sheet and heat in the oven on the lowest setting for 5-7 hours, until dried (historically in Thailand, this step was the sun-drying step).
  • The dried beef can either be deep fried immediately for a couple minutes to give it a crispy outside (careful not to crowd the oil), or you could refrigerate a portion for frying later that week.
  • Serve hot with Sriracha sauce and sticky rice, or steamed jasmine rice.

1.5 lbs top sirloin steak ((any type of beef works - flank steak, skirt steak))
1 cup potato starch
oil (for deep frying) ((see notes, for type of oil))
1 small onion
2 cloves garlic
4-5 slices ginger ((sliced thin, 2-3 mm))
1 tablespoon light soy sauce ((reduced sodium))
3/4 cup honey
1/4 cup + 2 tablespoons light soy sauce ((reduced sodium))
1/2 cup water
1 tablespoon hoisin sauce
1/2 tablespoon rice vinegar
1 tablespoon sesame oil
1 tablespoon shaoxing cooking wine
5 teaspoons corn starch
6 teaspoons water
1-2 stalks green onion (chopped)
toasted sesame seeds

Steps:

  • Slice the steak into 1 cm wide strips and place it in a bowl. (If your steak is more than 1 cm thick, cut the strips in half again length-wise)
  • In a food processor, blitz the onion, garlic, and ginger until it is a paste. (If you do not have a food processor, you can grate them or chop it very finely by hand, just make sure the ginger bits are very tiny)
  • Add the marinade and 1 tablespoon of soy sauce to the beef and mix well and marinate it in the fridge for 1 hour (or 20-30 minutes at room temperature)
  • After the beef has marinated, dust 1/2 cup of potato starch (or corn starch) on the beef and use your fingers to loosely coat the beef with it. Let it sit for 10 minutes
  • While you are waiting for the meat to marinate, heat up a heavy bottom pot (or wok) and set the stove to medium heat. Add at least 1 inch of oil to the pot and wait for it to get hot. (It should reach a temperature of 375F). I like to poke a wooden chopstick, or the handle of a wooden spoon into the oil and wait for it to bubble. Once it bubbles, the oil is hot enough.
  • Once the beef has marinated for 10 minutes, dust the other 1/2 cup of potato starch (or corn starch) on the beef again to lightly re-coat the beef and lightly dust off any excess starch. Deep fry it immediately.
  • Using your fingers separate the beef if they are clumped together and deep fry it in the oil in small batches (make sure the oil is hot but not smoking - to test if the oil is hot enough, add 1 small piece of beef first and see if it instantly sizzles)
  • Deep fry the beef for 1-2 minutes, and remove it from the pot onto a plate with parchment paper or newspaper.
  • Once all the beef has been cooked once (first fry), add all of it back in for the second deep fry for 1 more minute.
  • Remove all the oil from the pot and set it back on the stove on medium low heat
  • Add in all the sauce ingredients, except the corn starch slurry ingredients.
  • Stir until everything is combined well and wait until it comes to a low rolling boil
  • In a small bowl, combine the corn starch and cold water to make a corn starch slurry and add it into the sauce and keep stirring until the sauce has thickened. Turn off the heat.
  • Add in the crispy beef and coat it with the sauce
  • Serve immediately! Goes amazing with plain rice. :)

For the steak marinade:
1/4 cup rice wine vinegar
1/4 cup fresh lime juice
1/4 cup soy sauce
2 Tbls. fresh ginger, minced
1/4 cup scallions, chopped
3 cloves garlic, minced
2 Tbls. brown sugar
2 Tbls. fish sauce
1 Tbls. sriracha
1 tsp. each salt and pepper
1 red chili pepper, seeded and minced.
3 Tbls. chopped fresh cilantro, plus extra for garnish
1 1/2 pounds top sirloin cut into 2 inch strips
For the Salad:
1 cucumber, seeded and diced
5 radishes, sliced
1 cup shredded carrots
8 oz. mixed greens
1 cup crispy wontons strips
1/2 cup green onions, chopped
For the Dressing:
3 Tbls. soy sauce
1 Tbls. fish sauce
2 Tbls. lime juice
1 tsp. fresh ginger
2 Tbls. canola oil
1 Tbls. rice wine vinegar
1 tsp. honey
2 Tbls. Sriracha

Steps:

  • In a bowl, whisk together all the ingredients for marinade, except the steak. Put the steak in the marinade, turning several times to coat. Cover and refrigerate for at least 1 hour and as long as overnight. Let the meat come to room temperature before grilling.
  • To make the dressing, whisk together all ingredients thoroughly. Set aside.
  • When ready to grill, spray the grill rack with cooking spray. Heat grill to high heat. Grill the meat for 5-7 minutes turning once.
  • To assemble, place all ingredients separately on a large platter. Pour dressing over and serve.

  • COOK BEEF Rub oil onto beef and season all over with salt and pepper. Heat a large frying pan or chargrill pan over medium-high. Add steak and cook for 3 minutes each side (this should cook the steak to medium-rare - adjust cooking time to suit your tastes). Remove steak onto a wooden board, cover with foil and leave to rest for 5-10 minutes.
  • MAKE DRESSING While steak cooks and rests, place lime juice, oil, honey, soy sauce and fish sauce in a jar. Very finely mince the garlic and chop the coriander (you should end up with about 1 tablespoon finely chopped coriander). Add to the jar and shake well to combine. Season to taste with salt and pepper.
  • SERVE Slice steak into strips and place on top of salad. Drizzle dressing over the beef and salad. Finish by topping with crispy noodles and peanuts.
