Categories     main-dish

Time 1h33m

Yield 24 skewers

Number Of Ingredients 13

24 (6-inch) bamboo or wooden skewers
3/4-pound New York strip steak or fillet
1/2 cup soy sauce
1 tablespoon honey
1 teaspoon red chili flakes
1/2 teaspoon ground cumin
1/2 teaspoon turmeric
6 tablespoons (3 ounces) unsalted butter
2 garlic cloves, blanched and chopped finely (about 1 tablespoon)
1 green onion, chopped finely
4 tablespoons hoisin sauce
1/4 cup soy sauce
1 teaspoon red chili flakes

Steps:

  • Soak the bamboo or wooden skewers in cold water and refrigerate for 1 hour.
  • Cut the steak into 24 (3 by 1-inch) strips, each weighing about 1/2-ounce. Stick a skewer into each strip lengthwise and arrange on a large platter or baking pan. Refrigerate until needed.
  • Prepare the marinade: In a small bowl, combine all the marinade ingredients and pour over the meat, turning to coat all sides. Let marinate at room temperature for about 15 minutes.
  • Preheat the grill or broiler while the steak is marinating.
  • Prepare the sauce: In a small skillet, melt 2 tablespoons butter. Add the garlic and green onion and saute over medium-high heat until soft, about 2 minutes. Pour in the hoisin sauce, soy sauce and chili pepper flakes and cook 1 or 2 minutes longer. Strain into a clean pan and whisk in the remaining 4 tablespoons butter. Keep warm.
  • Arrange the steak skewers on the grill or under the broiler,* being careful that the bare ends of the skewers are not directly over (or under) the flame. Grill until medium rare, about 30 to 40 seconds each side.
  • Pour the sauce into a small bowl and set in the center of a large serving platter. Arrange the skewers around the bowl and serve immediately.
  • *Bring your broiler tray directly under the flame for best results.

BEST BEEF SINGAPORE SATES

Best Beef Singapore Sates image

Sates in Singapore play the same role as hot dogs in New York, popular and affordable. What makes these sates so extraordinary is the cut of beef, rib eye, the most generously marbled steak you can buy. When assembling the sates, be sure to intersperse cubes of lean beef with fattier cubes of meat or steak fat. I added the alternative use of sirloin steak which is a decent substitute. Best cooked on a charcoal grill, but if you cook on a gas grill, the robust spicing of these sates will blast through loud and clear. I gave an optional recipe for Singapore Cucumber Relish. The purpose is to give you a bite of cool, crisp, crunch to counterpoint the spicy hot meat. From Planet Barbecue!: 309 Recipes, 60 Countries by Steven Raichlen.

Categories     Steak

Time 2h2m

Yield 4 serving(s)

Number Of Ingredients 17

1 1/2 lbs rib eye steaks (about 1/2 inch thick) or 1 1/2 lbs sirloin steaks (about 1/2 inch thick)
3 tablespoons light brown sugar
2 tablespoons ground coriander
1 tablespoon ground turmeric
1 1/2 teaspoons ground cumin
1 1/2 teaspoons fresh ground black pepper
3 tablespoons asian fish sauce or 3 tablespoons soy sauce
3 tablespoons vegetable oil, plus additional for grill grates
4 bamboo skewers, water soaked for at least 30 minutes
salt
2 kirby cucumbers or 1 medium cucumber, cut in half lengthwise and seeded
1 shallots, minced (2 to 3 tablespoons) or 1 green onion, both white and green parts, trimmed and minced
1 small hot red chili pepper, stemmed, seeded, and minced (such as a bird or cayenne pepper)
2 tablespoons rice vinegar
1 tablespoon sugar
coarse koscher salt or sea salt
fresh ground black pepper

Steps:

  • Cut the steaks, including the fat, into 1/2-inch cubes and place them in a ziplock bag. Stir together the brown sugar, coriander, turmeric, cumin, pepper, fish sauce and oil. Pour over the beef cubes the marinade mixture and massage contents to coat evenly. Refrigerator for at least 2 hours; the longer it marinates, the richer the flavor will be.
  • Drain the cubes of beef, discarding the marinade. Season with salt. Thread the beef onto bamboo skewers, leaving the bottom half of each skewer bare for a handle and 1/4 inch exposed at the pointed end.
  • Set up the grill for direct grilling and preheat to high.
  • When ready to cook, brush and oil the grill grate. Arrange the sates on the hot grate. Grill the sates until cooked to taste, 1 to 2 minutes per side for medium-rare, a little longer for medium.
  • To Make Singapore Cucumber Relish: Cut the cucumber into 1/4-inch dice. Place the cucumber, shallot, chile, rice vinegar and sugar in a mixing bowl and toss gently to mix. Season with salt and pepper to taste. The relish can be made up to 2 hours ahead.

Yield Makes 26 hors d'oeuvres

Number Of Ingredients 29

For beef marinade
1 lb (1-inch-thick) piece beef rump roast, halved crosswise for easier cutting
2 fresh lemongrass stalks (about 3/4 inch wide at base), 1 or 2 outer leaves discarded
1/2 cup finely chopped shallots (from 2 large)
1 tablespoon sugar
2 teaspoons ground coriander
1 teaspoon ground turmeric
1 teaspoon salt
1/2 teaspoon cayenne or Indian pure red-chile powder
1/4 cup vegetable oil
For peanut sauce
6 to 8 (2-inch-long) dried red chiles such as prik haeng
1 rounded tablespoon tamarind froma pliable block
1/3 cup hot water
1 teaspoon fennel seeds
2 cups unsalted shelled roasted peanuts (10 1/2 oz)
1 fresh lemongrass stalk (about 3/4 inch wide at base), 1 or 2 outer leaves discarded
1 medium onion, chopped
2 teaspoons finely chopped peeled galangal (fresh or thawed frozen)
2 teaspoons finely chopped peeled fresh ginger
1 tablespoon ground coriander
1 teaspoon cayenne or Indian pure red-chile powder
3 tablespoons vegetable oil
1 1/4 cups well-stirred canned unsweetened coconut milk (10 fl oz; not low-fat)
2 1/2 to 3 tablespoons packed dark palm sugar or dark brown sugar
3/4 teaspoon salt
3/4 cup water
Special Equipment
a mini food processor; an electric coffee/spice grinder; 26 (10-inch) wooden skewers, soaked in warm water 30 minutes

Steps:

  • Slice and marinate beef:
  • Arrange beef in 1 layer on a plate and put in freezer 15 minutes to quick-chill (to facilitate cutting). Cut beef across grain into 1/8-inch-thick slices, to make 1-inch-wide strips.
  • While beef chills, very thinly slice bottom 6 inches of lemongrass, then mince with a knife, discarding remainder. Finely grind lemongrass and shallots in mini food processor, scraping down side occasionally, until a fluffy paste forms.
  • Stir together lemongrass paste, sugar, coriander, turmeric, salt, and cayenne in a bowl until combined well, then add beef strips and toss until coated well. Marinate, covered and chilled, 24 hours.
  • Make peanut sauce:
  • Soak chiles in boiling-hot water to cover in a bowl until softened, 30 to 45 minutes. Drain in a sieve, discarding soaking liquid and stems, then mince with a knife (including seeds).
  • While chiles soak, gently mash tamarind with hot water (1/3 cup) in a bowl using your fingertips until pulp is softened, then force with a rubber spatula through a medium-mesh sieve into a small bowl, discarding solids. Finely grind fennel seeds in grinder.
  • Finely grind peanuts in a standard food processor, being careful not to grind to a butter, then transfer to a medium bowl. Very thinly slice bottom 6 inches of lemongrass, then mince with a knife, discarding remainder. Pulse lemongrass, onion, galangal, ginger, coriander, ground fennel, cayenne, and minced chiles in food processor, scraping down side occasionally, until finely ground.
  • Heat oil (3 tablespoons) in a 4-quart wide heavy pot over moderate heat until hot but not smoking, then add onion mixture and reduce heat to moderately low. Cook, stirring occasionally, until onion mixture begins to stick, 5 to 6 minutes. Add coconut milk and bring just to a boil over moderate heat, stirring constantly. Add peanuts, tamarind purée, palm sugar, and salt and simmer gently, stirring constantly, 3 minutes. Purée peanut sauce with water (3/4 cup) in cleaned food processor until the consistency of chunky peanut butter, then cool to room temperature, about 30 minutes. Reserve half for another use. Thread and grill beef: Prepare grill for cooking over indirect heat with medium-hot charcoal (moderately high heat for gas), leaving half of bottom rack free of coals; see Grilling Procedure If using a gas grill, see cooks' note, below.
  • Meanwhile, thread 2 or 3 pieces of beef lengthwise onto each skewer (discard marinade), bunching meat slightly to leave half of skewer empty (for holding skewer) and transferring as threaded to a large platter. Drizzle beef with oil (1/4 cup) and turn to coat well.
  • To cook using a charcoal grill: Put half of satés on lightly oiled grill rack, arranging them with beef directly over coals and empty part of skewers over side with no coals underneath. Grill, turning over once, 2 minutes total for medium-rare. Grill remaining satés in same manner.
  • To cook using a gas grill: If grill has 3 burners, do not turn off middle burner; turn off burner closest to you. Put beef over lit burners with empty part of skewers over side with turned-off burner. Grill, covered, turning over once, 2 minutes total for medium-rare. Grill remaining satés in same manner.
  • Serve satés with peanut sauce.
