BEEF RENDANG

Beef Rendang image

RECIPE VIDEO above. Beef Rendang is a Malaysian curry and is an extravagantly rich dish that is easy to prepare but takes time and patience to slow cook. Unlike many curries, this is a "dry" curry which means the beef is not swimming in sauce. Though you may think that the sauce is often the best part of a curry, the beef is "fall apart at a touch" tender and covered in a thick, saucy curry which then mixes through the rice so it is not in the least bit "dry"! This can be made in a slow cooker (see notes) but I recommend making this on the stove for best results.

Time 3h20m

Number Of Ingredients 20

12 dried chilies, rehydrated in boiling water, or 12 large fresh (Note 1a)
1 small onion, finely chopped (Note 1b)
5 cloves garlic, minced
3 lemongrass stalks, white part only, sliced (Note 2)
1 1/2 tbsp fresh galangal, finely chopped (Note 3)
1 1/2 tbsp fresh ginger, minced
2 tbsp oil (vegetable, canola or peanut oil)
2 lb/ 1 kg chuck steak, or other slow cooking beef, cut into 4cm / 1.6" cubes (Note 4)
1 tbsp oil (vegetable, peanut, canola)
1 cinnamon stick
1/4 tsp clove powder
3 star anise
1/2 tsp cardamon powder
1 lemongrass stick, bottom half of the stick only and smashed (Note 5)
400ml / 14 oz coconut milk (1 standard can)
2 tsp tamarind puree / paste, or tamarind pulp soaked in 1 tbsp of hot water, seeds removed (Note 6)
4 large kaffir lime leaves (or 6 small) , very finely sliced (Note 7)
1/3 cup desiccated coconut (finely shredded coconut)
1 tbsp brown sugar or grated palm sugar
1 1/2 tsp salt

Steps:

  • Place Spice Paste ingredients in a small food processor and whizz until fine. NOTE: If using dried chilli and you know your food processor is not that powerful, chop the chilli first.
  • Heat 1 tbsp oil in a large heavy based pot over high heat. Add half the beef and brown, then remove onto plate. Repeat with remaining beef.
  • Lower heat to medium low. Add Spice Paste and cook for 2 - 3 minutes until the wetness has reduced and the spice paste darkens (don't breathe in too much, the chilli will make you cough!).
  • Add remaining Curry ingredients and beef. Stir to combine.
  • Bring to simmer, then immediately turn down the heat to low or medium low so the sauce is bubbling very gently.
  • Put the lid on the pot and leave it to simmer for 1 hr 15 minutes.
  • Remove lid and check the beef to see how tender it is. You don't want it to be "fall apart at a touch" at this stage, but it should be quite tender. If it is fall apart already, remove the beef from the pot before proceeding.
  • Turn up heat to medium and reduce sauce for 30 - 40 minutes, stirring every now and then at first, then frequently towards the end until the beef browns and the sauce reduces to a paste that coats the beef. (Note 9)
  • The beef should now be very tender, fall apart at a touch. If not, add a splash of water and keep cooking. Remove from heat and serve with plain or Restaurant Style Coconut Rice.

BEEF RENDANG & TURMERIC RICE

Beef rendang & turmeric rice image

Cover beef shin in coconut milk and spices and add toasted desiccated coconut to thicken the rich sauce in this slow-cooked Malaysian favourite

Provided by Good Food team

Categories     Main course

Time 3h10m

Number Of Ingredients 21

3 tbsp vegetable oil
2kg beef shin or skirt, cut into bite-sized cubes
2 lemongrass stalks, bashed (see 'Tip' for how to prepare)
2 x 400ml cans coconut milk
4 tbsp desiccated coconut
2 kaffir lime leaves, torn
1 ½ tbsp chicken stock powder (we used one from an Asian supermarket)
2 tbsp tamarind paste
1 tsp golden caster sugar
¼ tsp salt
15 dry chillies
6-8 baby shallots
thumb-sized piece ginger, chopped
thumb-sized piece galangal, peeled and chopped (use ginger if you can't find it)
3 lemongrass stalks, chopped
2 tbsp oil
2 tsp mustard seeds
2 tsp turmeric
10 curry leaves (optional)
700g jasmine rice
2 tsp chicken stock powder

Steps:

  • For the paste, soak the chillies in boiling water for 15 mins. Drain, remove seeds and whizz with the rest of the paste ingredients in a small food processor until smooth.
  • Heat the oil in a wok or a heavy-based flameproof casserole dish. Fry the paste for 5 mins until the aroma is released. Add the beef and the lemongrass, and mix well. Once the beef starts to lose its pinkness, add the coconut milk and 250ml water. Bring to the boil, then lower to a simmer, uncovered. Stir occasionally to avoid sticking, and more often towards the end.
  • Meanwhile, toast the coconut in a frying pan on a low heat for 5-7 mins until golden brown. Set aside to cool. Using a blender, coarsely blend it to finer pieces - but not too fine. Put to one side.
  • After 2 hrs, add the coconut, kaffir lime leaves, chicken stock powder, tamarind paste, sugar and salt to the pan. Simmer for 30 mins more. You should start to see the oil separating from the mix. It's ready when the meat is tender and almost falling apart.
  • For the rice, use a heavy-based saucepan with a lid. Heat the oil in the pan and add the mustard seeds. Once the seeds start popping, add the turmeric, curry leaves (if using) and rice, and mix well. Add the chicken stock and 1 litre of water. Bring to the boil, then turn down to the lowest simmer and cook, covered, for 5 mins. Remove from the heat, with the lid on and leave to steam for 25 mins.

CHEF JOHN'S BEEF RENDANG

Chef John's Beef Rendang image

The sauce in this amazing Indonesian curry might be invisible, but you'll know it's there. As it reduces, the water evaporates, leaving behind the fat and flavor that make this dish so unique and addictive. Originally, cooking meat this way helped preserve it in hot and humid Indonesia. Turns out, people continued making it long after refrigeration came around. Serve with steamed rice, garnished with cilantro and lime if desired.

Categories     World Cuisine Recipes     Asian     Indonesian

Time 4h30m

Yield 8

Number Of Ingredients 17

2 ½ pounds beef chuck
4 shallots, sliced
6 cloves garlic
1 (1 1/2 inch) piece ginger, peeled and sliced
1 ½ inch piece galangal, peeled and sliced
2 serrano chile peppers - stemmed, seeded, and sliced
1 Fresno chile pepper - stemmed, seeded, and sliced
1 tablespoon Korean red pepper flakes
1 teaspoon ground coriander
½ teaspoon ground turmeric
⅛ teaspoon ground cardamom
⅛ teaspoon freshly grated nutmeg
2 tablespoons vegetable oil
1 (14 ounce) can full-fat coconut milk
2 teaspoons tamarind paste
1 tablespoon brown sugar
½ stalk lemongrass, light part

Steps:

  • Cut beef chuck into 2-inch pieces.
  • Combine shallots, garlic, ginger, galangal, serrano and Fresno chiles, salt, red pepper flakes, coriander, turmeric, cardamom, and nutmeg in the bowl of a food processor. Pulse until paste is very finely ground, stopping occasionally to scrape down the sides with a spatula.
  • Heat oil in a pan over medium heat. Add the curry paste. Cook and stir until it starts to dry out, then stir in the beef. Add coconut milk, tamarind paste, and brown sugar. Stir to combine. Fill up the empty can of coconut milk with water and pour it into the pan. Increase heat to medium-high; bring to a simmer.
  • In the meantime, bruise lemongrass with the back of your knife. Cut into 1- to 2-inch pieces and add to the curry. Reduce heat to medium. Cook, uncovered, stirring occasionally, until beef is fork-tender and sauce is fully reduced, about 4 hours. Stir more frequently as water reduces; add more water or lower the heat if sauce is reducing faster than beef is softening.
  • Remove lemongrass to serve. For best results, let cool and serve the next day.

INDONESIAN RENDANG

Indonesian Rendang image

Rendang is a dish which originated from the Minangkabau ethnic group of Indonesia and now commonly served across the country. Rendang is one of the famous dish among 30 Indonesian Culinary Icons. One of the characteristic foods of Minangkabau culture, it is served at ceremonial occasions and to honour guests. Also popular in Malaysia and Singapore, rendang is traditionally prepared by the Malay community during festive occasions.Though rendang is sometimes described as being like a curry, and the name is sometimes applied to curried meat dishes in Malaysia, authentic rendang is NOTHING LIKE A CURRY. In Malay classical literacture, rendang is mentioned in Hikayat Amir Hamzah.(from year 1550).Rendang is made from beef (or occasionally chicken, mutton, water buffalo, duck, or vegetables like jackfruit or cassava) slowly cooked in coconut milk and spices for several hours until almost all the liquid is gone, allowing the meat to absorb the spicy condiments. The cooking process changes from boiling to frying as the liquid evaporates. The slow cooking process allows the meat to absorb all the spices and to become tender. The spices may include ginger, galangal, turmeric leaf, lemon grass and chillies. Chicken or duck rendang also contains tamarind and is usually not cooked for as long as beef rendang. There are two kinds of rendang: dried and wet. Dried rendang can be kept for 3-4 months, and it is for ceremonial occasions or to honour guests. Wet rendang, also known as kalio, can be found in Minangkabau restaurants, and without refrigeration, it should be consumed within a month. (Source: Wikipedia).Anyway before I forget....thx and all credit goes to Filma, my friend as well as ex colleague who taught me first how to cook authentic rendang properly ;-)

Categories     Main Course

Number Of Ingredients 12

1 kg beef, topside or silverside, diced about 3 cm on a side
2 stem lemon grass, bruished, cut into two pieces
1 pc fresh turmeric leaf (if any)
2 tbsp tamarind water (1 tsp tamarind pulp soak in 2 tbsp water
5 pc kaffir-lime leaves
2 l thick coconut milk
2 tsp salt or to taste
250 g large red chillies, de-seeded, chopped
10 pc shallots, chopped
5 gloves garlic, chopped
25 g galangale, peeled and chopped
25 g ginger, peeled, chopped

Steps:

  • Put all ingredients for the paste in a blender or food processor.
  • Add 50 ml coconut milk to help the blending process and blend until smooth.
  • Put the beef and spice paste into a Wok or a large saucepan (minimum capacity 4 liters).
  • Pour in the coconut milk, add the lemon grass, kaffir lime leaves and turmeric leaves. Stir to mix.
  • Cook over medium-high heat until the coconut milk get boiled.
  • Adjust the heat into medium and simmer for 1.5 hours uncovered until the coconut milk becomes thicker and oily. Stirring occasionally.
  • Add the tamarind water and salt to taste. (Note: If you like to eat it with sauce you can stop the cooking now. This dish is called: Kalio /Wet Rendang)
  • If you like to eat it as rendang then continue cooking on low heat for about 30 minutes.
  • Cook until the coconut milk is driven off and the beef and sauce becomes brown and almost dry. (At this stage you will probably need to stir all the time to prevent burning)
  • Serve hot with rice and "Minangkabau Green Sambal".
  • Many Indonesians prefer a black colour rendang. To get this kind of rendang you need to add roasted grated coconut which's smoothly blended.
  • I personally prefer to stop the cooking earlier to reserve it's thick delicates sauce as you see in the pic :-)
