PORK FAJITAS
My family likes to take a break from traditional beef dishes by substituting pork. Since we are big fans of Mexican food, these fajitas are a much-requested menu item.

Steps:
- Cut pork into 4x1/2x1/4-in. strips; set aside. In a bowl or resealable plastic bag, combine orange juice, vinegar, garlic, oregano, cumin, seasoned salt and hot pepper sauce; mix well. Add pork; cover or close bag and chill for 1-2 hours. , In a skillet over medium heat, cook pork with marinade, onion and green pepper in oil until pork is not longer pink and vegetables are tender; drain., Place about 3/4 cup filling down the center of each tortilla; top with lettuce, tomatoes, salsa and sour cream if desired. Fold in sides of tortillas and serve immediately.

BEEF FAJITAS
This yummy steak filling is sure to tingle your taste buds. It's easy to make ahead and when ready, it cooks quickly for a filling meal. Optional: serve with shredded lettuce or any condiments of your choice.

- Whisk olive oil, lime juice, cilantro, onion, garlic, cumin, salt, and black pepper in a bowl, and pour into a resealable plastic bag. Add steak strips, coat with the marinade, squeeze out excess air, and seal bag. Marinate in the refrigerator for 4 hours to overnight.
- Heat a large skillet over medium heat; cook and stir beef in hot skillet until all liquid is absorbed, 15 to 20 minutes.
- Serve cooked beef with tortillas, salsa and Mexican cheese blend.

- In a small bowl, combine cilantro, garlic powder, chili powder and cumin; set aside. In a large skillet, saute pork in oil until no longer pink. Add onion and green pepper; cook until crisp-tender. , Sprinkle with seasoning mixture; toss to coat. Spoon onto tortillas; serve with cheese and sour cream if desired.

Steps:
- 1. For this recipe I used pre cooked beef & Pork, but you can also use chicken or ground beef or any meat of your choice. This was a way for me to use my left over Seasoned Beef Filet, and Center Pork Loin Roast. So use what ever you have on hand.
- 2. Wash & Cut the red and green bell peppers into strips, as well as slice the onions into thick slices but separate the rings. Cut the beef & pork also into nice size strips.
- 3. Add the olive or canola oil and butter to a 12 inch skillet and heat over medium high heat. Then add the sliced peppers and onions.
- 4. Cook till crisp tender, then remove from skillet.
- 5. Add sliced meat to same skillet, then add the seasoning packets and water, cook and allow to simmer for about 3 to 5 minutes or until heated through.
- 6. Add the vegetables back into the skillet with the meat and stir to mix together, and allow to simmer over low heat.
- 7. Fill large tortilla with a generous serving of the meat mixture, fold and wrap and serve as desired, adding additional condiments if desired. Makes 6 generous servings.
