BEEF PORCUPINES (CAJUN STYLE)

This is one of my daughter's favorite meals. Most recipes for Beef Porcupines that I see on the internet are either made in a tomato sauce, or with sour cream. These are in a beef gravy. Mmmmm!

Number Of Ingredients 21

1 lb ground beef
1/2 cup orzo pasta, uncooked (or 1/2 cup spaghetti, broken into small pieces)
1/2 cup rice, uncooked
1 egg, beaten
1 small onion, finely diced
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
1 pinch salt
1 tablespoon olive oil
1 large onion, chopped
1 small bell pepper, chopped
2 garlic cloves, minced
2 1/2 teaspoons beef base
2 1/2 cups hot water, divided
1 tablespoon cornstarch
1/4 cup cold water
3/4 cup frozen green pea
1 (4 ounce) can sliced mushrooms, drained
1/4 cup parsley, chopped
1/4 cup green onion, sliced

Steps:

  • Mix first nine ingredients, well.
  • Shape into elongated meatballs.
  • In large skillet, brown meatballs on medium high heat.
  • Remove from pan. Drain all but one tablespoon of the fat.
  • Saute large onion, bell pepper, and garlic until onions are transparent.
  • Return meatballs to the pan.
  • Mix beef base and 2 - 1/2 cups hot water.
  • Slowly pour into skillet over meatballs.
  • Heat over high heat until liquid comes to a boil. Reduce heat to medium low. Cover. Cook for 25 minutes.
  • Dissolve cornstarch in 1/4 cup cold water.
  • Pour over meatballs. Stir.
  • Add peas, mushrooms, parsley, and green onion.
  • Cover and simmer for 4 minutes. Serve.

My Aunt first made this for me as a teen. I still crave it every now and then. It is a very basic recipe that you can have fun "playing" with.

Number Of Ingredients 4

1 (6 7/8 ounce) package beef Rice-A-Roni
1 lb ground chuck
1 egg, beaten
2 1/2 cups water

Steps:

  • Combine rice mix from box with ground chuck and egg.
  • Season with garlic powder, season salt or just plain salt and pepper if you wish.
  • Shape this mixture into 20 1 1/4 inch meatballs.
  • In a large skillet in a small amount of oil, brown meatballs over medium high heat.
  • Drain.
  • Slowly stir in water and special seasonings.
  • Bring to a boil.
  • Cover; reduce heat to low.
  • Simmer 30 minutes or until meatballs are cooked.
  • You may thicken gravy if desired.

1/2 cup uncooked long grain rice
1/2 cup water
1/3 cup chopped onion
1 teaspoon salt
1/2 teaspoon celery salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder
1 pound ground beef
2 tablespoons canola oil
1 can (15 ounces) tomato sauce
1 cup water
2 tablespoons brown sugar
2 teaspoons Worcestershire sauce

Steps:

  • In a bowl, combine the first seven ingredients. Add beef and mix well. Shape into 1-1/2-in. balls. In a large skillet, brown meatballs in oil; drain. Combine tomato sauce, water, brown sugar and Worcestershire sauce; pour over meatballs. Reduce heat; cover and simmer for 1 hour.

This was one of my favorite meals my Mom made. It is also a recipe I made and won second place at a Scouting Camporee in a cooking contest. So, I guess you can say this is an award winning recipe.

1 lb ground beef
1/2 cup uncooked rice
3 tablespoons onions, chopped
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon poultry seasoning (optional)
3 tablespoons oil
2 (8 ounce) cans tomato sauce
1 cup water

Steps:

  • Mix ground beef, uncooked rice, onion, garlic powder, salt, pepper, and poultry seasoning if using. Form ground beef into small balls.
  • Add oil into pan and heat; add balls and brown lightly.
  • Add tomato sauce and water.
  • Cover and simmer 45 to 50 minutes, or until rice is tender.

1 pound lean ground beef
½ cup uncooked white rice
½ cup water
½ cup chopped onion
1 teaspoon salt
½ teaspoon celery salt
⅛ teaspoon garlic powder
⅛ teaspoon ground black pepper
1 (15 ounce) can tomato sauce
1 cup water

Steps:

  • In a large bowl, combine the ground beef, rice, 1/2 cup of water and onion. Blend in salt, celery salt, garlic powder and pepper. Mix well. Shape into 1 1/2 inch balls.
  • Preheat oven to 350 degrees F (175 degrees C). In a large skillet over medium heat, brown the meatballs; drain fat.
  • In an 11x7 inch baking dish, combine the tomato sauce and 1 cup of water. Place the browned meatballs into the tomato sauce, turning to coat well.
  • Cover and bake in a preheated oven for 45 minutes. Uncover, and cook for an additional 15 minutes.

This is, by far, the best recipe for porcupine meatballs I have ever had. This is a recipe that was given to my mom when she married back in 1970. The recipe also includes cooking directions for stovetop cooking or cooking in the oven. Hope you enjoy as much as our family does.

1 pound ground beef
½ cup uncooked white rice
½ cup water
⅓ cup chopped onion
1 teaspoon salt
½ teaspoon celery salt
⅛ teaspoon garlic powder
⅛ teaspoon ground black pepper
1 (15 ounce) can tomato sauce
1 cup water, or more as needed
2 teaspoons Worcestershire sauce

Steps:

  • Mix the ground beef, rice, 1/2 cup water, onion, salt, celery salt, garlic powder, and black pepper in a bowl. Roll the mixture into 12 meatballs.
  • Heat a large skillet over medium-high heat and add the meatballs. Cook meatballs, turning occasionally, until evenly browned. Drain and discard any excess grease. Pour the tomato sauce, 1 cup water, and Worcestershire sauce into the skillet; reduce heat to medium-low.
