Greek Tomato Soup with Orzo image

My recipe for manestra, which means "orzo" in Greek, is a straightforward and very easy to make recipe. You only need a few steps to transform simple ingredients into a creamy one-pot-wonder in about 30 minutes. -Kiki Vagianos, Melrose, Massachusetts

2 tablespoons olive oil
1 medium onion, chopped
1-1/4 cups uncooked whole wheat orzo pasta
2 cans (14-1/2 ounces each) whole tomatoes, undrained, coarsely chopped
3 cups reduced-sodium chicken broth
2 teaspoons dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
Optional: Crumbled feta cheese and minced fresh basil

Steps:

  • In large saucepan, heat oil over medium heat; saute onion until tender, 3-5 minutes. Add orzo; cook and stir until lightly toasted., Stir in tomatoes, broth and seasonings; bring to a boil. Reduce heat; simmer, covered, until orzo is tender, 15-20 minutes, stirring occasionally. If desired, top with feta and basil. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

1 tablespoon olive oil
1 lb beef sirloin steak, cut into 3/4 inch pieces
1/2 cup pitted kalamata olive, drained,halved
2 (14 1/2 ounce) cans diced tomatoes
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
2 (14 ounce) cans beef broth
3 1/2 ounces uncooked dried orzo pasta (1/2 cup)
4 ounces crumbled feta cheese
2 tablespoons chopped fresh parsley

Steps:

  • Heat oil in 4-quart saucepan until sizzling.
  • Add beef pieces, cook over medium-high heat, stirring occasionally, until browned (7 to 10 minutes).
  • Add all remaining ingredients except cheese and parsley.
  • Continue cooking until mixture comes to a boil (3 to 5 minutes).
  • Cook, stirring occasionally, until orzo is tender (10 to 12 minutes).
  • To serve, top each serving with cheese and garnish with parsley.

1 1/2 lbs round steaks or 1 1/2 lbs chuck steaks, cut into small cubes
2 cups chopped carrots
1/2 cup diced celery
1 large onion, chopped
4 quarts water
3 tablespoons beef base
2 tablespoons tomato paste
salt & fresh ground pepper
8 ounces orzo-small shell pasta
grated parmesan cheese

Steps:

  • In a large soup pot, brown the beef cubes on all sides with the onion. Season with salt and pepper. Add the water Bring to a boil. Skim off any residue that is on the top of the water. Lower the heat to medium and cook for an hour.
  • Add the beef soup base according to instructions on the brand you use. Add the carrots and celery. Continue to simmer on medium, while the pan is covered for an additional 30 minutes,or until the vegetables are tender.
  • Taste and add more pepper and salt if needed. In another pan cook the pasta till just done as instructed on the package. Drain and add to the soup pot. Serve with Parmesan cheese on the side.

My mother has been serving this Ground Beef and Orzo dish for as long as I can remember. It's a staple of my childhood. It's the perfect dish to come home to when you've had a rough day. Call it Greek comfort food.

3 lbs ground beef (or meatloaf mix, or ground turkey)
2 cups Greek Orzo
1 28 oz can Tuttorosso Tomato Sauce (or diced tomato, or whole tomatoes)
1 medium onion (chopped)
2 cloves garlic (chopped)
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon ground cinnamon

Steps:

  • Fill a large dutch oven halfway full withwater, cover, and bring to boil.
  • When the water comes to boil, add the orzo and 1 tbsp. salt and cook for 15 minutes, or until the orzo is opaque. Note: If you use a brand other than Misko, follow the package instructions.
  • While the pasta is cooking, heat olive oil on medium high heat in a large dutch oven. Saute the onion, garlic, and ground beef. until the beef is no longer pink, Stir in salt, pepper, and cinnamon. (about 5-7 minutes).
  • Add your tomato, bring to a boil, and simmer on low for 20 minutes. By now, your orzo should be almost ready!
  • Drain the orzo into through a fine colander (don't lose your orzo down the drain!)
  • Stir orzo into ground beef mixture and combine well. Taste and adjust your seasonings. Cook on medium to low heat for another 10 minutes to allow the flavors to combine.
