BEEF AND BARLEY CASSEROLE

This is a lovely recipe with a 'down home' appeal for those of us who like barley. I serve it with English muffins.

⅔ cup uncooked barley
1 pound ground beef
1 onion, chopped
1 cup sliced carrots
2 tablespoons soy sauce
2 tablespoons molasses
1 ½ cups water
1 pinch salt and pepper to taste

Steps:

  • Soak the barley in warm water for 3 hours, then drain and set aside.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat and stir in the ground beef and onion. Cook and stir until the beef is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease, then stir in the carrots, soy sauce, molasses, drained barley, and 1 1/2 cups of water. Stir until the molasses has dissolved and the mixture has begun to simmer. Season to taste with salt and pepper, then pour into a lidded 2 quart casserole.
  • Bake, covered, in the preheated oven until the barley is tender and has absorbed the water, about 1 hour.

1 pound lean ground beef (90% lean)
1/4 cup chopped onion
1 garlic clove, minced
1 can (14-1/2 ounces) reduced-sodium beef broth
1 can (8 ounces) tomato sauce
1 cup water
2 small carrots, chopped
1 small tomato, seeded and chopped
1 small zucchini, chopped
1 cup medium pearl barley
2 teaspoons Italian seasoning
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add the broth, tomato sauce and water; bring to a boil. Stir in the remaining ingredients. Reduce heat; cover and simmer until barley is tender, about 20-25 minutes.

1 tablespoon corn oil
1 medium onion, chopped
2 garlic cloves, chopped
1 cup uncooked barley
1/2 cup diced celery
1 (20 ounce) can whole tomatoes, cut up (undrained)
2 1/2 cups water
2 teaspoons salt
1/8 teaspoon ground black pepper (pinch)

Steps:

  • In a saucepan, over medium heat, stir and cook ground beef until browned; remove and place into a 2 1/2 quart baking dish.
  • Drain all but 1 tablespoon drippings.
  • Add corn oil, onion, garlic and barley to saucepan; stir and cook until browned.
  • Add remaining ingredients; mix well and stir into ground beef.
  • Bake 2 hours at 350 degrees.
