Steps:
- Preheat oven to 350°F.
- Brown beef, onion and garlic until no pink remains. Drain any fat.
- Combine beef mixture with all remaining ingredients except cheese.
- Spread mixture into a 9x13 pan and bake covered for 40-45 minutes or until rice is tender.
- Add cheese, broil for 3 mins or until golden.

Steps:
- In a large skillet, brown the beef over medium high heat with the onion and mushroom until the beef is no longer pink and the onions are translucent.
- Drain any fat, then transfer the beef mixture to a large casserole dish (9x13) mix in the mushroom soup, sour cream, rice, and beef broth. Combine well, and spread evenly in the dish.
- Spread cracker crumbs over the top of the casserole and drizzle with butter.
- Bake at 350˚F for 30-40 minutes, uncovered, or until the rice is tender.

- Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add carrots and celery; cook and stir for 5 minutes or until vegetables are crisp-tender. Add garlic; cook 1 minute longer., Stir in the potatoes, corn, tomato sauce, salt and pepper; heat through. Drain pasta and add to skillet; toss to coat. Sprinkle with cheese. Cover and cook until cheese is melted.

- melt butter in a skillet on top of the stove and sauté onions until clear in the butter.
- then add in rice and fry the rice until well colored and slightly browned. (Its kind of like rice a roni).
- place mixture into a covered casserole dish.
- add consomme`.
- drop in the mushrooms and parsley; add salt and pepper to taste and bake at 350F for about 45 minutes until the mushrooms rise to the top of the rice mixture.
- uncover and mix the mushrooms and fluff the rice.
- Then serve!

- Preheat the oven to 350 degrees F. Brown the ground beef and onion in a skillet over medium-high heat; drain off any excess grease. Combine the beef and onions with the onion soup mix, cream of mushroom soup, water, and rice and mix well. Transfer the beef mixture to a baking dish and bake, covered, at 350 degrees F for 1 hour or until the rice is cooked. Uncover the baking dish and sprinkle the top with the cheese. - Add ground beef, salt, pepper and garlic to a large skillet then brown and crumble over medium-high heat. When beef is about half cooked, add onion, celery and red pepper flakes then continue cooking until beef is cooked through and veggies are starting to become translucent. Do not drain. Spray a medium-sized casserole dish (1.5 quart) with cooking spray or rub with butter. In a separate bowl, whisk together broth and soup until smooth. Pour soup mixture and rice into skillet and stir until all ingredients are thoroughly incorporated. Pour into prepared casserole dish, cover tightly with aluminum foil then bake at 350 degrees for 1 hour or until rice is tender. Remove casserole from oven and let rest, covered, for 15 minutes before serving. Garnish with chopped green onions if desired. Notes: You can use other creamed soup flavors such as cream of onion or cream of mushroom. Use uncooked rice. I don't know if this can be made with Minute rice or brown rice because I've never cooked either type of rice. This recipe doubles easily in a 3-qt 13x9 dish. Cook 15-30 minutes longer or until rice is tender. You must cover the dish TIGHTLY with foil to ensure the moisture stays inside to cook the rice through. I don't know how this could be converted to a slow cooker recipe.
MEXICAN BEEF AND RICE CASSEROLE

- Add the soup and water to the beef and mix well.
- Add the uncooked instant rice, stir well and allow to heat through, appr 10-15 minutes.
- Add the onion and mushrooms, cover, and allow to cook until onions start to soften, about another 15-20 mins, stirring occasionally.
