BEEF MEDALLIONS WITH CARAMELIZED PAN SAUCE
This is one of those dishes that unless someone watched you make it, they'd never believe how fast and simple it is to prepare. By the way, this wonderful sauce would work just as well with pork, veal, or chicken.

Steps:
- Season beef medallions with salt and pepper to taste and set aside.
- Heat vegetable oil in a skillet over high heat. Cook beef until browned, about 2 minutes per side. Remove beef to a warm plate.
- Reduce heat to medium; cook and stir mushrooms, 1 tablespoon unsalted butter, olive oil, and a pinch of salt in the skillet until mushrooms are very well browned, about 10 minutes.
- Mix in tomato sauce; cook and stir until tomato sauce thickens, about 5 minutes.
- Pour in Marsala wine and increase heat to high. Cook, scraping browned bits from bottom of skillet. Once most of the wine has evaporated, stir in broth and bring to a boil; cook and stir until broth mixture has reduced by half, about 5 minutes.
- Reduce heat to low and return beef to broth mixture; simmer until beef is cooked to medium-rare, about 2 to 3 minutes. Transfer beef to serving plates.
- Remove skillet from heat. Cook and stir 1 1/2 tablespoons butter and oregano into the sauce until butter melts. Taste for seasoning and adjust if necessary.
- Spoon sauce over beef and serve immediately.

SEAR-ROASTED BEEF TENDERLOIN WITH COGNAC-PEPPERCORN CREAM SAUCE
Sophisticated yet comforting, this sauce is a sure-fire crowd pleaser.

- Fold the thinner end of the tenderloin under to create an evenly thick roast; secure with twine. Rub the beef all over with 1 Tbs. salt. Wrap it in butcher paper or plastic wrap, put it on a platter or rimmed baking sheet, and refrigerate for at least 2 hours.
- Remove the beef from the refrigerator and let sit for about an hour before roasting. Meanwhile, position a rack in the center of the oven and heat the oven to 475°F.
- In a small bowl, combine the mustard, Worcestershire sauce, garlic, honey, soy sauce, thyme, and a few grinds of pepper; set aside.
- Heat a flame-proof roasting pan over medium-high heat, using 2 burners if necessary. Add the oil, swirling the pan to coat, and then add the beef. Cook, turning with tongs, until well browned on all sides, about 12 minutes total. Transfer to a cutting board; wipe out the pan.
- Brush the glaze over all of the beef, return it to the roasting pan, and roast to an internal temperature of 120°F for rare, 16 to 20 minutes, or 125°F for medium rare, 22 to 26 minutes. Transfer to a cutting board, tent with foil, and let rest for 15 minutes.
- Melt the butter in a 3-quart saucepan over medium-low heat. Add the shallot and cook, stirring occasionally, until tender, about 3 minutes.
- Add the Cognac, turn the heat up to high, and boil until reduced by half, 2 to 3 minutes. Add the stock and thyme and boil until the mixture has reduced to just over 1 cup, 15 to 20 minutes. Discard the thyme sprigs.
- Stir in the cream and black pepper and lower the heat to maintain a gentle boil. Cook, stirring occasionally, until the sauce is reduced to 2 cups and is a bit thicker than heavy cream, about 20 minutes.
- Remove from the heat and whisk in the Parmigiano, mustard, lemon juice, and Worcestershire sauce. Once the cheese has melted, season to taste with more salt, pepper, or lemon juice.
- Slice the tenderloin 1/2 inch thick and pour any juice that has accumulated over the sliced beef. Serve the beef with the sauce.

- For the roast: Break the cauliflower and broccoli into florets. Blanch the carrots, zucchini, celery root and kohlrabi. Remove the cherry tomatoes from the stems.
- Blanch the vegetables in the beef broth. Remove and keep warm.
- Season the beef with salt and pepper. Cook all over in butter. Tie with kitchen string and hang on a wooden spoon so that the meat can be submerged in the broth without touching the wall or bottom of the pot. Simmer in the broth about 30 minutes to poach.
- For the mustard sauce: Mix the yolks with the Creme fraiche. Move approximately 125 ml (approximately 1/2 cup) of the broth to a mixing bowl. Whip the cold pieces of butter with a hand blender little by little with the broth until a creamy sauce is achieved. Pour the sauce back into the pan and heat, but do not boil. Stir in the crème fraîche mixture. Add the mustard and whipped cream. Season the sauce with lemon juice, sugar, salt and pepper. Keep warm.
- Heat the vegetables in the broth. Cut the tenderloin into slices and serve.
- Sauce with fillet and vegetables arrange on warmed plates.

- Preheat oven to 350 degrees. Coat steaks with pepper on both sides. Heat a cast-iron skillet over medium heat until very hot. Sear steaks for 5 minutes on each side, then transfer to oven to finish cooking, about 8 minutes for medium rare. Transfer to a plate to rest while you make the sauce.

- Slice 1-1/2 to 2 pounds of beef medallions into rounds, about 3/4-inch thick.
- Chop 2 shallots and 2 large cloves of garlic and transfer to a bowl.
- Add 1/2 cup cognac and 1/2 cup sherry to a hot saucepan and stir in the shallots and garlic.
- Cook mixture over medium heat until mixture is reduced to 1/4 cup.
- Add 1-1/2 cups heavy whipping cream to a saucepan and bring to a low boil, being careful not to scorch cream.
- Cook over medium heat until mixture is reduced to about 1 cup, stirring constantly.
- Crack 2 teaspoons of mixed peppercorns in a mortar and pestle to a coarse grain.
- Do this in 2 or 3 small batches.
- Add 1-1/2 teaspoons of dry mustard, 2 to 3 tablespoons Dijon mustard, 2 tablespoons of coarse grain mustard and 1 tablespoon chopped parsley.
- Add salt and 2 teaspoons cracked peppercorn to taste.
- Season the medallions with salt and pepper.
- Melt 2 tablespoons butter over medium high heat in a skillet.
- Add medallions do not crowd the pan.
- Brown medallions on both sides until desired doneness.
- Serve with peppercorn mustard sauce.
