Beef Lo Mein with Asparagus is a quick stir fry dish with thinly sliced steak, Ramen noodles and asparagus. It's the perfect weeknight meal that is fancy enough to serve to company!

1 lb beef top sirloin steak (cut into thin strips)
2 pkg beef ramen noodles (3 oz each)
2/3 c. hoisin sauce
2 1/4 c. water (divided)
2 Tbsp olive oil (divided)
1 garlic clove (minced)
1 lb fresh asparagus (trimmed and cut into 2 1/2 in. pieces)

Steps:

  • In a small bowl mix together hoisin sauce and 1/4 c. water.
  • Toss beef with 1/2 tsp seasoning from a ramen seasoning packet, discard the rest of the packet.
  • Bring water to bowl in saucepan. Add noodles and contents of the unopened seasoning packet; cook, uncovered for 3 minutes. Remove from heat, let stand, covered, until noodles are tender. Drain before serving.
  • In a skillet, heat 1 Tbsp oil over medium-high heat; stir-fry beef until browned, 3-4 minutes. Remove.
  • In same pan heat remaining oil over medium-high heat; stir-fry garlic and asparagus until crisp-tender, 1-3 minutes. Stir in hoisin mixture; bring to a boil. Cook until thickened. Stir in beef; heat through. Serve over ramen.

1 (8 ounce) package spaghetti
1 teaspoon dark sesame oil
1 tablespoon peanut oil
4 cloves garlic, minced
1 tablespoon minced fresh ginger root
4 cups mixed vegetables
1 pound flank steak, thinly sliced
3 tablespoons reduced-sodium soy sauce
2 tablespoons brown sugar
1 tablespoon oyster sauce
1 tablespoon Asian chile paste with garlic

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water until cooked through but firm to the bite, about 12 minutes; drain and transfer to a large bowl. Drizzle sesame oil over the spaghetti; toss to coat. Place a plate atop the bowl to keep the noodles warm.

1 pinch pepper
1 cup water
4 teaspoons sherry wine
1 teaspoon sugar
1 tablespoon soy sauce
4 teaspoons cornstarch
8 ounces spaghetti (uncooked) or 8 ounces egg noodles (uncooked)
1 lb lean beef or 1 lb elk meat, chopped
1 tablespoon olive oil (for frying)
1 onion, finely chopped
3 garlic cloves, finely chopped
2 teaspoons salt

Steps:

  • In a bowl, mix together marinade ingredients; marinate the beef in marinade for 10-15 minutes.
  • In a small bowl, mix together the sauce ingredients; set aside.
  • In a large pan, over high heat, bring 2 quarts of salted water to a boil; boil the noodles until tender (5-7 minutes).
  • Strain and set aside.
