BEEF KOFTA WITH GREEK YOGURT SAUCE
Make a Mediterranean-inspired meal that the whole family will love! This Beef Kofta with Greek yogurt sauce comes together in just 35 minutes using simple ingredients combined with savory spices. A wonderful recipe for gatherings, meal prep, or even a quick and simple weekday dinner.

Steps:
- Add all of the ingredients to a small bowl and stir until fully combined.
- Enjoy with beef kofta!
- Add all of the kofta ingredients to a large bowl. With a fork or with your hands mix until just combined.
- Using your hands form small oblong patties with the meat mixture. If the meat begins to stick to your hands when forming the kofta, rub a small amount of olive oil on your hands and you should be good.
- Heat an oiled skillet on medium-high heat. Place the patties on the preheated skillet making sure not to overcrowd them. Depending on the size of your skillet you may need to cook them in batches. (See grilling and baking instructions in the Notes.) Cook uncovered 12 to 14 minutes turning the kofta every couple of minutes allowing it to brown on each side. Allow the kofta to cook long enough on one side so that when you turn them you are able to easily do so without them falling apart. Continue cooking until an instant-read thermometer inserted horizontally into the thickest part of the kofta registers 160°F,
- Serve the kofta with Greek yogurt sauce and EAT!

- 1 Wrap the cucumber in a clean tea towel and squeeze dry. Stir together with the yoghurt, lemon juice, cumin and coriander and refrigerate until needed. 2 Thread three meatballs onto each skewer, alternating with the mushrooms, onion and pepper. 3 Heat a large pan over a medium-high heat and cook the skewers for 10-12 minutes until completely cooked, turning halfway through cooking. Serve with the dip. TIME-SAVING TIP If you don't want to make the dip, serve these koftas with houmous!

Steps:
- Slice the steak, across the grain, into long, thin strips.
- Mix lemon juice with the honey, garlic, marjoram and mint. Toss beef strips with the marinade and let stand at room temperature for 30 minutes.
- Meanwhile, soak 24 wooden skewers in cold water.
- To make the dipping sauce, stir the yogurt, feta, lemon juice, garlic, pepper, hot pepper flakes and mint until combined. Let stand for 15 minutes to blend the flavours.
- Preheat broiler or grill to medium high. Thread beef onto soaked skewers and place on a broiler pan or rack set over a rimmed baking sheet. Season with salt and pepper, if desired.
- Broil or grill beef, turning once, for 4 to 5 minutes, or until it reaches medium doneness.
- Serve with dipping sauce.

- In a medium glass or ceramic bowl combine the dry seasoning ingredients: cumin, coriander paprika, turmeric, oregano, cinnamon, salt and pepper. Add the eggs, onion, garlic, parsley and torn bread. Mix all the ingredients well with a fork while mashing the bread until a thick creamy paste is achieved.
- In a large glass or ceramic mixing bowl, add the ground beef and make a well in the centre. Add the seasoning paste into the well. With your hands, lightly mix the ground beef with the seasoning paste to ensure it is distributed evenly.
- Prepare two baking sheets by lining with parchment paper. Divide mixture into 24 equal portions, about 50 grams each. Form and mold each portion into a 4” cylinder and run the skewer through it. Place the kofta kabobs on the lined baking sheets. Flatten slightly. Freeze for at least 2 hours to get them really cold or longer to freeze completely before grilling. Grill the kabobs from cold or from frozen.
