CARIBBEAN-STYLE BURGER WITH JERK KETCHUP AND BEER BATTERED ONIONS

- For the ketchup: Combine the ketchup with the allspice, cayenne, chile flakes, garlic powder, onion powder, sugar, thyme and lime juice.
- For the onion rings: Preheat a deep fryer with canola oil to 375 degrees F. Combine the flour with some beer until the batter is the consistency of pancake batter, a quarter to half of the bottle. Slice the onion into 1/2-inch rings, then separate the individual rings. Add the onions into the wet mixture. Fry until golden brown, 3 to 5 minutes. Drain the onion rings and immediately sprinkle with some salt and pepper.
- For the burger: Preheat a grill to medium-high heat. Combine the beef with the allspice, cayenne, chile flakes, garlic powder, onion powder, sugar and thyme. Form the beef into 2 to 4 patties then press the center of each with your thumb to create an indent. Drizzle the patties with olive oil. Sprinkle each side with salt and pepper. Cook until the center is medium pink, 5 to 8 minutes per side.
- Assemble the burgers on the buns topped with the jerk ketchup and serve with the onion rings.

- Heat oven to 190C/170C fan/gas 5. Scrub the potatoes and cut into chips. Lay the chips in a single layer on a baking tray, drizzle with oil, season and toss to coat. Bake for 40 mins until crisp.
- Mix together the grated onion, carrot, mince and jerk seasoning in a large bowl, then shape into 4 evenly sized patties.
- Heat a non-stick frying pan till hot, then cook the burgers for 5-6 mins each side.
- To make the relish, mix the chopped onion, pineapple, chilli, coriander and lime juice. To serve, place the burgers in split buns with some lettuce and the spicy relish. Serve with the crispy chips.

- Mix all the ingredients in a large bowl until thoroughly combined.
- Shape into patties, it will make 6 large burgers and about 8 smaller ones.

- Combine Ground Beef and jerk seasoning in large bowl, mixing lightly but thoroughly.
- Shape into four 3/4-inch thick patties.
- Place patties on grid over medium, ash-covered coals.
- Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill, covered, 13 to 14 minutes), until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally.
- Season with salt, as desired.
- Meanwhile, combine salsa ingredients in medium bowl, mixing lightly.
- About 2 minutes before burgers are done, place buns, cut sides down, on grill.
- Grill until lightly toasted.
- Serve burgers with salsa.

- Heat the oil in a large sauce pan over medium-high heat, add the beef and brown on all sides before setting aside.
- Add the onion and cook until tender, about 3-5 minutes, before adding the garlic, ginger and pepper(s) and cooking until fragrant, about a minute.
- Add the beef broth and deglaze the pan by scraping up the brown bits on the bottom of the pan with a wooden spoon as the broth sizzles in the hot pan.
- Add the beef, potatoes, carrots, orange juice, lime juice, soy sauce, Worcestershire sauce, brown sugar, thyme, allspice, cinnamon and nutmeg and either reduce and simmer cover until the beef is tender, about 2-3 hours, OR transfer to a preheated 350F/180C oven and roast, covered, until the beef is tender, about 2-3 hours, OR transfer to a slow cooker and cook on low for 6-10 hours or on high for 3-5 hours.
