ROAST BEEF WITH CARAMELISED ONION GRAVY



Roast beef with caramelised onion gravy image

Rare roast topside is the ultimate centrepiece - make it extra special with Marmite and sweet onion gravy

1 tbsp black peppercorn
1 tbsp English mustard powder
1 tbsp dried thyme
1 tsp celery seeds
1 tbsp olive oil
about 2kg/4lb 8oz topside joint of beef
4 tbsp plain flour
2 beef stock cubes
3 tbsp caramelised onion chutney or marmalade
2-3 tsp Marmite

Steps:

  • Crush the peppercorns, mustard powder, thyme and celery seeds together with some salt, using a pestle and mortar. Stir in the oil, then rub it all over the beef. (If you have time, cover and chill the joint overnight to marinate. Bring the beef out of the fridge 1 hr before roasting.)
  • Heat oven to 190C/170C fan/gas 5 and sit the joint in a snug-ish roasting tin. Roast for 12 mins per 450g/1lb (about 55 mins for a 2kg/4lb 8oz joint) for medium-rare, or 15 mins per 450g/1lb (about 1 hr 10 mins) for medium-well.
  • Remove from the oven, lift onto a platter, cover with foil and rest for 30 mins. If you're making the Yorkies (p90), increase oven to 220C/200C fan/gas 7.
  • For the gravy, pour any juices from the roasting tin into a jug. Let the juices separate, then spoon 2 tbsp of the fat back into the tin - if there is no fat, use 2 tbsp butter instead. Discard any other fat. Sit the roasting tin on the hob and stir in the flour, stock cubes, onion chutney or marmalade and Marmite. Cook for 1 min, stirring well to scrape up any beefy bits stuck to the tin, then gradually stir in 750ml hot water from the kettle. Bubble to thicken to a nice consistency, then gently keep warm until ready to serve with the beef, carved into slices.

8 sausages of choice ((Note 1))
1 large onion (, halved and finely sliced (yellow, white or brown) (Note 2))
2 garlic cloves (, minced)
3 tbsp flour ((plain))
2 cups beef stock/broth
1/4 tsp salt
1/2 tsp black pepper
Mashed potato

Steps:

  • Cook sausages: Heat oil in a large skillet / fry pan over medium high heat. Add sausages and cook, turning, until browned as much as possible all over and cooked through. Cook time will differ depending on sausage size - mine take around 8 minutes.
  • Remove sausages onto a plate. Turn heat down to medium.
  • 2 tbsp oil remaining: You need around 2 tbsp oil left in the skillet. If you have much less, add a bit of butter or oil.
  • Saute onion and garlic: Add onion and garlic, cook until golden brown - around 4 minutes.
  • Cook off flour 2 minutes: Add flour and mix through. Then cook, stirring constantly for 2 minutes.
  • Gradually add beef stock: Add about 3/4 cup of beef broth and mix into the onion so it becomes a sludge. Then add remaining beef broth and mix until combined. If it's lumpy, use a whisk to help make it smooth.
  • Thicken gravy: Simmer, stirring, for 2 to 3 minutes until the gravy thickens but is slightly thinner than you want - it will thicken more as you serve it.
  • Season: Add salt and pepper. Stir, taste, then add more salt if you want.
  • Serve sausages with plenty of gravy, with mashed potato and peas on the side. (Low carb option - Creamy Cauliflower Mash)

Steps:

  • In a medium-sized sauce pan, combine butter, beef broth, onion powder, and garlic powder. Bring to a boil, stirring occasionally.
  • Reduce heat and bring to a simmer.
  • In a small bowl or liquid measuring cup, combine cornstarch and water, stirring until well combined.
  • While whisking the broth CONSTANTLY, slowly add cornstarch mixture to the saucepan. I like to pour in about a tablespoon at a time to gauge consistency. You may not need all of the cornstarch mixture, add only until desired consistency is reached.
  • Add beef bouillon (or Kosher salt-- I just like the depth of flavor the beef bouillon adds as compared to straight up salt) and pepper to taste.
  • Allow to simmer 2-3 minutes. Serve over potatoes, rice, poutine, or your favorite beef dishes.

2 large yellow onions
2 cups beef broth
1 cube beef bouillon (or 1 tsp better than bouillon)

  • Slice the onions to about ½ inch thick, try to make them the same size so they cook evenly.
  • Melt 4 TBS butter in a pot over medium heat and add the sliced onions. Cover partially and let them simmer, soften, and reduce for about 25 minutes. Stir every few minutes and reduce heat if they start cooking too quickly.
  • Meanwhile, whisk the cornstarch and COLD water together until well-combined. Add the seasonings and beef broth and stir to combine. Store in the fridge until ready for use.
  • Once the onions are reduced, whisk the cornstarch/broth/seasonings once more, then add them to the pot. (If the cornstarch has settled to the bottom, a silicone spatula can be used to lift it up.)
  • Use the liquid to "clean" the bottom of the pot from the onions. This gives the gravy more flavor.
  • Bring to a boil, then reduce to a simmer. Continue to simmer until desired thickness is obtained.
  • Optional: Remove from heat and melt 1 Tablespoon cold butter at the end for a silky, velvety finish. This is a technique that chefs use called "monter au beurre".

  • Place the flour and seasoning salt in a bowl and whisk to mix.

1/2 stick (56 grams) unsalted butter
2 large yellow onions (, peeled, cut in half and thinly sliced (or diced if you prefer smaller pieces))
2 teaspoons sugar
1/2 cup red wine
2 sprigs fresh thyme
1 large sprig fresh sage
2 cups strong beef broth
1 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon prepared yellow mustard
1/4 teaspoon freshly ground black pepper
1 tablespoon dark balsamic vinegar
1 tablespoon cornstarch dissolved in 1 tablespoon water
2 tablespoons cold unsalted butter

Steps:

  • Melt the butter in a saucepan over medium high heat. Add the sliced onions and sugar and cook for about 30 minutes until caramelized (deep golden). Add the red wine and herbs, bring to a rapid boil for 2 minutes, reduce the heat and simmer for 10 minutes. Add the stock, mustard, salt, pepper and Worcestershire sauce, bring to a boil, reduce the heat to a low simmer and simmer, covered, for 20 minutes. Remove sprigs of herbs. Add the vinegar, whisk in the cornstarch and simmer another minute or two until thickened, whisking continuously. Add the cold butter and whisk until dissolved. Add salt and pepper to taste and more mustard if desired.

1/3 cup all-purpose flour
2 3/4 cups unsalted (or low-sodium) beef broth
1 teaspoon Worcestershire sauce
3/4 teaspoon Kosher salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Steps:

  • Add the butter or the meat drippings to a saucepan over medium heat. Immediately after the butter has melted, sprinkle with the flour and whisk to combine. Allow to cook and whisk constantly for about 30 seconds to 1 minute.
  • Begin adding the beef broth a splash at a time (about a 1/4 cup), whisking well after each addition. Once the mixture begins to resemble a pudding-like texture, you may begin streaming the remaining broth in slowly, whisking all the while.
  • Once all of the broth has been incorporated, add the Worcestershire sauce, salt, pepper, garlic powder, and onion powder. Adjust the heat to maintain a simmer, and simmer for about 5-7 minutes, stirring occasionally.

Instant Pot Beef Tips with Gravy (using onion soup mix) image

On chilly days there is nothing better than a warm bowl of comfort food! These Instant Pot Beef Tips with Gravy definitely will NOT disappoint! Cooked with a few simple ingredients (including onion soup mix!) in the Instant Pot, the meat is tender, juicy and swimming in pool of rich, delicious gravy. It's truly good to the last bite!

2 tbsp flour
1 tsp garlic powder
1 tsp seasoned salt
1/2 tsp pepper
1 1/2 lbs beef tips or stew meat, cut into bite-sized 1" pieces (See Note 1)
2 tbsp olive oil, divided
1 large onion, sliced
1/4 cup red wine (or beef stock)
1 10.5 oz. can beef stock (or beef broth)
1 packet dry onion soup mix (such as Lipton's)
1 tbsp Worcestershire sauce
3-4 sprigs fresh thyme (not ground)
2 tbsp cornstarch + 1/4 cup water or beef stock (optional, for thickening)

Steps:

  • Set Instant Pot to Sauté (high heat) and allow to come to temperature for a few minutes.
  • Meanwhile, place meat in a medium bowl. Season with salt, pepper and seasoned salt. Then toss with flour until evenly coated.
  • Add 1 tbsp of olive oil to Instant Pot then add beef in an even layer (you may have to do two batches depending on the size of your pot). Cook on one side for 3-4 minutes until a nice brown "crust" has formed on one side. Then flip the meat and cook another 3-4 minutes on the other side. Remove beef from pot, cover and set aside.
  • Add remaining 1 tbsp of olive oil to the Instant Pot. Add onion and wine and cook for 2-3 minutes making sure you scrape the bottom of the pot with a wooden spoon to get all the browned bits ((THIS IS VERY IMPORTANT so you don't get a BURN warning on your Instant Pot)).
  • Turn Instant Pot OFF. Add beef (and all juices) back into the Instant Pot, along with dry onion soup mix, beef stock, Worcestershire sauce, and thyme sprigs.
  • Cover and set Instant Pot to "Pressure Cook" and cook on high pressure for 25-30 minutes (see Note 2). Allow AT LEAST 10 minutes of natural pressure release. After 10 minutes, you can manually release the rest of the pressure.
  • Optional, to thicken the gravy: Turn Instant Pot to Sauté (high heat). Mix 2 tablespoons of corn starch with 1/2 cup of COLD water or beef stock. Mix until smooth, then add to Instant Pot. Give everything a big stir. Gravy should thicken up in 2-3 minutes!

1 large yellow onion (peeled and cut into ¼ inch-thick slices)
3 cloves garlic (peeled and minced)
1 Tablespoon vegetable oil
2 Tablespoons unsalted butter
3 Tablespoons all-purpose flour
2 cups chicken broth

Steps:

  • Heat a skillet on the stove over medium heat and add vegetable oil. Once hot, add sliced yellow onion and cook, stirring occasionally, until the onions begin to caramelize, about 10-15 minutes. Stir in minced garlic and cook until fragrant, about 30 seconds to 1 minute.
  • Push the onions and garlic to the side of the pan. Add butter to the center of the pan and, once it melts, mix in flour. Continue to stir until the mixture becomes golden.
  • Slowly add chicken broth while continuously whisking to remove any lumps. Then, mix the mixture with the onions and garlic, scraping up any brown bits from the bottom of the pan. Bring the broth to a boil, then reduce to medium-low and simmer until it starts to thicken, about 15 minutes.
