BEEF BRISKET GYROS



Beef Brisket Gyros image

These Beef Brisket Gyros are loaded with Mediterranean flavors, super quick to prepare and totally delicious. Cook the Beef Brisket in your oven, slow cooker or Instant Pot, but the end result is always the same. Tender, juicy, fall apart in your mouth beef!

4 pound beef brisket
2 tablespoon olive oil
1 cup beef broth (low sodium)
1 teaspoon oregano (dried)
1 tablespoon dill (dried)
1 teaspoon Italian seasoning
1 teaspoon garlic powder
½ teaspoon salt (or to taste)
1 teaspoon black pepper (or to taste)
8 medium pita breads
1 cup tzatziki sauce
2 cups Greek salad

Steps:

  • Preheat your oven to 325 F degrees.
  • Add all the dry rub ingredients to a small bowl and stir to combine.
  • Rub the dry rub all over the brisket on both sides, using your hands.
  • Add the olive oil to a large skillet (mine is 10 1/2 inches in diameter) and heat over medium-high heat. Add the brisket to the skillet and sear on both sides until browned.
  • Turn off the heat and add the beef broth to the skillet. Cover the skillet with aluminum foil and place the skillet in the oven on the middle rack. Bake for 4 hours.
  • Remove the skillet from the oven and remove the aluminum foil. Place the brisket on a cutting board then cover with the aluminum foil and let the brisket rest for 10 to 15 minutes.
  • Slice the brisket as thinly as you can.
  • Assemble gyros. Warm up pita breads first in the microwave for about 30 seconds to 1 minute. Place a pita bread on a piece of parchment paper. Add a few slices of brisket, then top with some tzatziki sauce and finally with Greek salad. Roll up the wrap, enclosing it with the parchment paper. Twist the end of the paper if needed. Repeat with remaining ingredients.

1 pound ground beef
1 teaspoon each dried oregano, ground thyme, ground cumin, garlic powder, onion powder, and salt
1/2 teaspoon black pepper
1/4 teaspoon ground nutmeg
4 pitas
Optional toppings: lettuce, sliced tomato, sliced cucumber, sliced red onion, fresh dill and feta cheese
3/4 cup greek yogurt
3/4 cup grated cucumber ((I like to use an English cucumber))
2 tablespoons fresh dill, finely chopped
1/2 tablespoon lemon juice
2 garlic cloves, minced
1/2 teaspoon salt
1/4 cup feta cheese, crumbled

Steps:

  • Add the ground beef to a skillet over medium-high heat and cook until browned, about 5-7 minutes. Add the seasonings and 1/2 cup of water. Simmer over medium heat until the sauce has thickened around the meat, about 5 minutes.
  • While the beef cooks, make the Tzatziki sauce. Start by squeezing the excessive liquid out of the grated cucumber, discarding the liquid. In a small bowl, mix the grated cucumber with the remaining ingredients.
  • To assemble a gyro, layer a pita with lettuce, tomato, cucumber, onion, and ground beef, then finish with tzatziki sauce, fresh dill and feta cheese.

1 pound flank steak
⅓ cup olive oil
3 teaspoons minced garlic
2 teaspoons dried oregano (or 1 tablespoon finely chopped fresh oregano)
1 teaspoon salt
¼ teaspoon black pepper
juice of ½ lemon (plus additional wedges for squeezing)
4 white or wheat pitas
½ red onion (thinly sliced)
1 tomato (thinly sliced)
romaine lettuce
1 medium cucumber + ½ teaspoon salt (peeled and sliced )
2 cups cold plain Greek yogurt
4 teaspoons minced garlic
⅓ cup chopped dill (fresh or frozen, (may sub 2 tablespoons dried dill))
1 ½ tablespoons freshly squeezed lemon juice
½ teaspoon salt (or to taste)
⅛ teaspoon black pepper (or to taste)

Steps:

  • Place steak, olive oil, garlic, oregano, salt, pepper, and juice from 1/2 lemon in a large resealable bag. Press excess air out and seal bag. Refrigerate for 1-8 hours.
  • Spread cucumber slices out on a paper towel. Sprinkle generously with salt on both sides and allow to rest for 5 minutes. Wrap cucumber slices in paper towels, squeeze excess liquid out, and transfer to a food processor or blender.
  • Add remaining sauce ingredients to blender and pulse until smooth and creamy. Cover and chill until ready to use.
  • Preheat grill, grill pan, or cast iron skillet, to medium-high heat. Use tongs to transfer steak to grill and discard excess marinade. Cook steak for 6-8 minutes on each side until desired doneness (I recommend leaving just a hint of pink in the center for super juicy, tender meat with lots of flavor!)
  • Transfer steak to a cutting board and allow meat to rest for a few minutes before slicing very thinly across the grain.
  • Assemble gyros with lettuce, sliced onions and cucumbers, and steak. Drizzle with tzatziki sauce, top with black pepper and fresh squeezed lemon and serve immediately.

½ large red onion (chopped)
2 Tbsp Minced Garlic
2 tsp Marjoram
2 tsp Rosemary
2 tsp Oregano
2 tsp Salt
2 tsp Black Pepper
7 Pita Breads
7 Lettuce leaves
7 Tomato slices
4 Onion slices

Steps:

  • Place red onion in a food processor and process until finely chopped.
  • Remove the onion from the food processor and place in a tea towel, squeezing to remove all the juices.
  • Return the onion back to the food processor with the remaining ingredients and pulse for approximately 1 minute until you get a paste like consistency. TIP: The gyro meat mixture will form together in the food processor, similar to a ball of dough.
  • Place mixture in a glass baking dish. Flatten and smooth the meat into a nice meatloaf.
  • Place in a water bath and cook at 325°F for 60-75 minutes or you have an internal temp of 165°F-170°F.
  • Once removed from the oven, drain the fat.
  • Allow to cool for 5-10 minutes and place on a wire rack (I also put a pan under the rack to catch any drippings) and place a heavy object on top to compress the gyros meat. I used a cast iron skillet with 3 cans inside the skillet for additional weight.
  • Remove the weight and let rest for 30 minutes.
  • Slice the meat into desired sized slices.
  • Place meat slices on a baking sheet and broil for 3-5 minutes until crispy!
  • Serve in pita bread with lettuce, sliced onion, sliced tomato and this Authentic Greek Tzatziki Sauce.

½ cup olive oil
1 tablespoon dried oregano
1 tablespoon red wine vinegar
2 garlic cloves (grated)
1 ½ pounds flank or skirt steak (trimmed)
salt and pepper (to taste)
4 pocketless small pitas (warmed)
romaine lettuce (shredded)
½ red onion (thinly sliced)
1 tomato (thinly sliced)

Steps:

  • In a large, shallow bowl, mix oil, oregano, vinegar, and garlic. Add steak and toss to fully coat. Cover with plastic wrap and marinate at least 30 minutes or up to 4 hours, flipping the steak halfway through. Remove from fridge at least 1 hour prior to cooking.
  • Preheat grill, grill pan, or large cast iron skillet, to medium-high heat. Season both sides of steak generously with salt and pepper. Let excess marinade drip off steak and transfer steak to pan. Cook until golden brown, 5-7 minutes per side for medium rare.
  • Transfer steak to a cutting board and allow meat to rest for 5 minutes. Slice steak into 1/2-inch pieces across the grain.
  • Assemble gyros by stuffing pita halves with lettuce, onions, tomatoes, and steak. Drizzle with tzatziki sauce and serve immediately.
