BEEF GRAVY

Beef Gravy image

Your favorite meat and potatoes dinner isn't complete without this easy and delicious Beef Gravy recipe. The deep color and rich flavor makes this gravy the perfect topping to so many meals!

Provided by Echo Blickenstaff

Categories     Dinner     Main Course     Sauce

Time 10m

Number Of Ingredients 8

3 tablespoons butter ((optional, see notes above))
4 cups beef broth ((or beef drippings, or combination of both))
3 teaspoons onion powder
1 teaspoon garlic powder
4 tablespoons cornstarch
1/3 cup water
beef bouillon (to taste)
ground black pepper (to taste)

Steps:

  • In a medium-sized sauce pan, combine butter, beef broth, onion powder, and garlic powder. Bring to a boil, stirring occasionally.
  • Reduce heat and bring to a simmer.
  • In a small bowl or liquid measuring cup, combine cornstarch and water, stirring until well combined.
  • While whisking the broth CONSTANTLY, slowly add cornstarch mixture to the saucepan. I like to pour in about a tablespoon at a time to gauge consistency. You may not need all of the cornstarch mixture, add only until desired consistency is reached.
  • Add beef bouillon (or Kosher salt-- I just like the depth of flavor the beef bouillon adds as compared to straight up salt) and pepper to taste.
  • Allow to simmer 2-3 minutes. Serve over potatoes, rice, poutine, or your favorite beef dishes.

ROAST BEEF WITH GRAVY

Roast Beef with Gravy image

Provided by Trisha Yearwood

Categories     main-dish

Time 4h15m

Yield 4 servings

Number Of Ingredients 5

One 5-pound boneless chuck roast
Salt and black pepper
1 large red onion, sliced
1/4 cup cider vinegar
4 tablespoons all-purpose flour

Steps:

  • Preheat the oven to 450 degrees F. Line a 9-by 13- by 2-inch pan or your oven's broiler pan with a sheet of heavy-duty aluminum foil large enough to fully wrap the roast. The shiny side of the foil should be up. Sprinkle the roast on all sides with salt and pepper and place it in the center of the foil. Spread the onion slices over the top of the roast and pour the vinegar around it. Bring the ends of the foil together and fold several times, and then fold the ends together to completely enclose the roast. Pour about 1 inch of water into the pan around the foil-wrapped roast. Bake until the meat is fork tender and brown, 3 to 4 hours. Check the water level in the pan regularly during cooking and replenish it if necessary. If any juice seeps from the foil seals during roasting, save it to use in making the gravy. When the roast is done, remove the package from the baking pan and let it cool for a few minutes. Open the package carefully to preserve all the juices and transfer the meat to a platter. Cover with a tent of foil to keep it warm while you make the gravy. Pour the roasting juices into a measuring cup and let the fat rise to the surface. Skim off the fat, reserving 4 tablespoons in a saucepan and discarding the rest. (If the fat measures less than 4 tablespoons, add enough butter to make up the difference.) Measure the remaining defatted pan juices and reserve. If you have less than 2 cups, add water to make 2 cups. Add the flour to the fat in the saucepan and stir with a wire whisk to make a roux. Cook over medium-low heat until the flour is lightly browned, about 1 minute. Slowly whisk in the reserved pan juices and stir until thickened. Slice the roast or cut it into chunks (it will be very tender), and serve it with the gravy.

EASY BEEF GRAVY

Easy Beef Gravy image

Easy beef gravy. This recipe works with beef that doesn't have too much juice and/or when boiling potatoes for mashing. Or with just a can of beef broth and water. I like this as it works well when making mashed potatoes and beef, when not too many drippings from the main beef course are available.

  • Add some thyme and a sliced onion or a couple of shallots when roasting the beef as this will caramelise with the meat juices to flavour the gravy.
  • When the joint is cooked, remove it from the oven tray and set aside. Cover the meat with foil and leave to rest while making the gravy.
  • Spoon off any excess fat, then place the roasting tin on the hob and heat gently. Add a couple of heaped teaspoons of plain flour (2 teaspoons is enough to thicken about 300ml liquid) and stir into the meat juices, scraping up all the sticky, caramelised meat and onion sediment as you go. Cook for a minute or so until the flour turns golden and thickens, then gradually add a little red wine, stirring well and bringing up to the boil before splashing in a little more liquid, until you have the pouring consistency you like.Taste and season well.
  • Strain the gravy through a sieve into a clean pan, add a little English or wholegrain mustard for a rich flavour, then return to the boil and serve.

  • In a pan fry the onion in the vegetable oil for one minute. Then add the ground beef to the pan and fry it until it is fully browned.
  • Then add the crushed OXO cube, a few cups of water and bring to a simmer. Then add the Worcestershire sauce, HP sauce, Marmite and Bisto granules. [These are all pretty specific British ingredients which add a particular bite to the gravy. But I am sure if you have your own gravy ingredients they would do fine.]
  • Now simmer the meat for about 10 minutes, stirring regularly and adding water if necessary to keep a good level of gravy.

21+ USES FOR LEFTOVER GRAVY - COOK THE STORY

  • Freeze it: OK, this isn’t technically using it. But it’s keeping it until you can use it on one of the delicious dishes below. It freezes well in a air tight container.
  • Meatballs: Make up a batch of these oven-baked meatballs but skip the gravy step and use your leftover gravy instead. Or make quick sausage meatballs like the ones in this soup to put into your gravy.
  • Speaking of Soup: You can always add gravy to any soup. It’s going to give it a bit of body and lots of flavor. Get some broth going in a pot with some leftover meat and veggies.
  • Pasta Sauce: Gravy is fantastic as a pasta sauce. I especially love it on egg noodles. Think Stroganoff. One way to do it is to heat up your gravy and then swirl in some sour cream.
  • Shepherd’s Pie: This is the thing to do if you have leftover mashed potatoes too. Fry up some ground meat and add your gravy. You want it well moistened but not soupy.
  • Fries and Gravy: Where I come from in Central Canada, whenever you order fries they ask if you want gravy. It’s a standard question. “An order of fries please.”
  • Poutine: Have you had this? Have you heard of it? It’s insane. It’s a Canadian dish from the province of Quebec. You basically put hot French fries on a plate, top with cheese and then slosh on hot gravy.
  • Newfoundland Fries: OK, so we Canadians like our fries and gravy. Clearly. Here’s another Canadian fry and gravy combo, this one coming from Newfoundland.
  • Stew: It’s very simple to take your gravy, add leftover meat (or new cooked meat), vegetables and potatoes. If you don’t have enough gravy to justify a stew, you can make a basic sauce first.
  • Hot Sandwiches: This is one of the best ways to use leftover gravy. Get out some good sliced bread. Top it with hot cooked meat (leftover roast chicken…mmmm) and then add your hot gravy.
