I got the original recipe from The American Heart Association recipe collection but I changed it up a little to make it better suited for what I wanted.

2 cups uncooked pasta (made with wheat is lower sodium)
1 lb lean ground beef
1 lb fresh mushrooms, sliced (Portobellos & Shitake)
1 cup sweet onion, chopped
2 cloves garlic, minced or chopped
1 (8 ounce) can no-salt-added tomato sauce
1 cup heinz no-salt-added ketchup
1 teaspoon sugar or 1 teaspoon Splenda sugar substitute
1/2 teaspoon ground black pepper or 1/2 teaspoon white pepper
1/2 teaspoon oregano
1/2 teaspoon basil
1 cup sweet peppers or 1 cup jalapeno pepper

Steps:

  • Cook macaroni according to package directions, omitting salt.
  • Drain and set aside.
  • Brown ground beef with mushrooms, onion, peppers and garlic.
  • Pour off fat.
  • Add remaining ingredients.
  • Simmer gently for 15 minutes.
  • Add cooked macaroni.
  • Simmer for 10 minutes.
  • Serve.

1 pound Ground beef
1 each Onion chopped
1 each Bell pepper chopped
1 teaspoon Garlic powder
1 tablespoon Paprika
1 teaspoon Black pepper
1 tablespoon Red wine vinegar
16 ounce Diced tomatoes
16 ounce Tomato sauce
1 tablespoon cheese shredded
2 tablespoons Olive oil
1 serving Pasta

Steps:

  • 1. In a large saute pan or pot, add the oil, ground beef, garlic, onion and peppers and cook over medium high heat until the beef is browned and the onions and peppers are turning translucent. 2. Add the paprika, black pepper, red wine vinegar, tomatoes, and sauce and let simmer for 10 minutes, stirring occasionally. 3. While the meat mixture is simmering, cook the pasta to an almost al dente status, then drain the pasta and add to the meat and sauce to finish cooking for 5 more minutes. 4. Serve into bowls and top with some shredded cheese and serve.

  • Set the Instant Pot to the sauté setting and adjust to high. When it reads HOT add in broken up ground beef. Add in the onion, pepper and pre-minced garlic. Brown the beef for about 5 minutes. Drain off any excess grease. Turn off the sauté setting. Scrape any bits off the bottom of the Instant Pot.
  • Add to pot in order: Lay the cabbage on top of the beef. Then sprinkle paprika and the rice on top of the cabbage. Pour broth over the top of the rice. Then add the whole cans of diced tomatoes and tomato sauce and spread evenly around. Do not stir though.
  • Cover the Instant Pot and secure the lid. Set the valve to sealing. Set the manual pressure cook button to 8 minutes. When the time is up let the pot sit for 10 minutes and then move the valve to venting. After fully venting remove the lid.
