Beef Fajitas made extra juicy and extra tasty with a wicked marinade that tenderises and flavours the beef! But if you don't have time to marinade, see Note 7 for a faster version. Adapted from this recipe by Tyler Florence (mine is easier and I think it is just as tasty!)

1 lb / 500g beef steak ((rump and skirt are ideal) (Note 1))
4 tbsp / 1/4 cup orange juice (, fresh (1 orange))
2 tbsp lime juice
2 garlic cloves (, minced)
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp onion powder ((optional))
1 tsp chipotle powder ((Note 2))
1/2 tsp salt
Black pepper
2 - 3 tbsp oil
2 bell peppers/capsicum (, sliced (Note 3))
1 large onion (, halved and sliced (brown, yellow, white))
Salt and pepper
12 tortillas (, small)
Avocado
Cilantro/coriander
Sour cream
Lime wedges
Tomatoes (, sliced, or Pico de gallo)

Steps:

  • Place the Marinated Beef ingredients in a ziplock bag, massage to coat then refrigerate for 2 hour to overnight.
  • Remove beef from marinade 30 minutes prior to cooking (to bring to room temperature) and pat dry with paper towels. Discard marinade.
  • Drizzle 1/2 tbsp of oil on each side of the beef (1 tbsp in total).
  • Heat the BBQ or a skillet on high heat. Cook beef to your liking. (Note 4)
  • Remove beef onto a plate and cover loosely with foil.
  • Return skillet to stove, still on high heat, and heat 1/2 tbsp oil. Add onions, sprinkle with salt and pepper, and cook until soft and charred. Remove onto serving plate.
  • Heat remaining 1/2 tbsp oil in the skillet. Add bell pepper/capsicum, sprinkle with salt and pepper, and cook until charred. Remove onto plate.
  • Slice beef thinly against the grain (Note 5).
  • Serve with warmed tortillas and fixings of choice. (Note 6)

1 cup uncooked regular long-grain rice
1 pound boneless beef sirloin steak
2 tablespoons vegetable oil
1 Old El Paso™ flour tortilla for burritos (8 inch) (from 11.5-ounce package), cut into 4x1/2-inch strips
1 bag (1 pound) frozen stir-fry bell peppers and onions
1/2 cup frozen corn
1 cup Old El Paso™ Thick 'n Chunky salsa
2 tablespoons lime juice
2 tablespoons chili sauce
1/2 teaspoon ground cumin
2 tablespoons chopped fresh cilantro

Steps:

  • Cook rice as directed on package.
  • Meanwhile, cut beef with grain into 2-inch strips; cut strips across grain into 1/8-inch slices.
  • Heat 12-inch nonstick skillet over medium-high heat. Add oil; rotate skillet to coat bottom. Cook tortilla strips in oil 1 to 2 minutes on each side, adding additional oil if necessary, until golden brown and crisp. Drain on paper towel.
  • Add beef to skillet; cook and stir over medium-high heat 4 to 5 minutes or until beef is no longer pink. Remove from skillet.
  • Add bell pepper mixture and corn to skillet; cook and stir 1 minute. Cover and cook 2 to 3 minutes, stirring twice, until crisp-tender. Stir in beef, salsa, lime juice, chili sauce and cumin. Cook 2 to 3 minutes, stirring occasionally, until hot. Stir in cilantro. Divide rice among bowls. Top with beef mixture and tortilla strips.

1/4 cup fresh lime juice
1/4 cup tequila
4 cloves garlic, peeled and smashed
2 tablespoons roughly chopped cilantro leaves
2 tablespoons vegetable oil
2 teaspoons Worcestershire sauce
1 teaspoon dried crushed Mexican oregano
1 teaspoon red pepper flakes
1 teaspoon ground cumin
1 teaspoon ground coriander
2 pounds flank steak, fat trimmed
2 teaspoons salt
1 teaspoon ground black pepper
6 large flour tortillas
1 red bell pepper, stemmed, seeded, and thinly sliced
1 green bell pepper, stemmed, seeded, and thinly sliced
1 yellow bell pepper, stemmed, seeded, and thinly sliced
1 large white onion, thinly sliced
1 tablespoon minced garlic
Lime wedges, accompaniment
Cold Mexican beer, or tequila shots

Steps:

  • In a bowl, whisk together the lime juice, tequila, garlic, cilantro, 1 tablespoon of the oil, the Worcestershire sauce, oregano, pepper flakes, cumin and coriander. Pour into a large zip-lock bag, add the steak, and seal. Place in a baking dish and refrigerate for at least 12 and up to 24 hours, turning occasionally.
  • Remove the meat from the bag and pat dry. Season on both sides with 1 teaspoon of the salt and 1/2 teaspoon of the pepper.
  • Preheat the grill to high, and preheat the oven to 325 degrees F.
  • Wrap the tortillas in foil and place in the oven for 15 minutes to warm and soften. Remove from the oven and keep warm in the aluminum foil.
  • Cook the steak over the grill to preferred temperature, 3 to 4 minutes per side for medium rare. Remove from the heat and let rest for 10 minutes before slicing.
  • Meanwhile, in a large skillet, heat the remaining oil over medium-high heat. Add the peppers and onions, and cook, stirring, until soft and slightly caramelized, 12 to 15 minutes. Add the garlic, remaining teaspoon salt, and 1/2 teaspoon pepper and cook, stirring, until the garlic is fragrant and soft, 1 to 2 minutes. Remove from the heat.
  • Thinly slice the steak against the grain. Divide among the warmed tortillas and top with the vegetables. Squeeze with lime juice and serve immediately with cold beer or tequila shots.

1 pound beef top sirloin steak or flank steak, trimmed and cut against the grain into 1/4-inch strips
MARINADE:
3 tablespoons canola oil
2 tablespoons lemon juice
1 teaspoon dried oregano
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon pepper
FAJITAS:
1/2 medium onion, sliced
1 medium sweet red pepper, sliced into thin strips
2 tablespoons canola oil, divided
8 flour tortilla shells, warmed
2 avocados, peeled and sliced
Salsa
Sour cream

Steps:

  • In a large resealable bag, combine marinade ingredients; add beef. Seal and refrigerate for 3-6 hours or overnight, turning several times. , Discard marinade. In a skillet, saute onion and pepper in 1 tablespoon oil until crisp-tender; remove from pan. Pat steak strips dry with paper towels. Add remaining oil and saute meat until no longer pink, about 4 minutes. Return vegetables to pan and heat through. , To assemble, place a spoonful of meat and vegetable mixture on a warmed tortilla and top with avocado, salsa and sour cream. Roll tortilla around filling.

1/2 pound stir-fry beef strips
1 pound frozen pepper stir-fry, thawed
2 tablespoons extra-virgin olive oil
2 tablespoons taco seasoning mix
1 (12-inch thin) pizza crust (recommended: Boboli)
1/2 cup lime-garlic salsa (recommended: Pace)
2 cups shredded Mexican blend cheese
Sour cream, for serving
Refrigerated guacamole, for serving
Fresh cilantro, for garnish

Steps:

  • Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.
  • In a bowl, combine beef strips, pepper stir-fry, oil and taco seasoning. Grill beef and pepper strips on hot oiled grill about 5 minutes total.
  • Remove pizza crust from package and place on grill. Top with salsa, cheese, beef and pepper strips.
  • Turn heat down to medium and cook pizza covered for 8 to 10 minutes or until cheese has melted and starts to bubble.
  • Serve hot garnished with sour cream, guacamole, and cilantro.
  • INDOOR: Preheat oven to 450 degrees F. Combine and season beef and pepper strips as directed. Heat 2 tablespoons of oil in a large frying pan. When oil is hot, saute beef and pepper strips for 5 minutes. Remove from pan; set aside. Remove pizza crusts from package and top with salsa and cheese. Top with beef and peppers and bake in preheated oven for 8 to 10 minutes or until cheese is melted and begun to bubble. Garnish as directed.

1/2 c. olive oil
3 tbsp. Worcestershire sauce
1/3 c. fresh-squeezed lime juice
3 cloves garlic, minced
1 tbsp. cumin
1 tbsp. chili powder
1/2 tsp. red pepper flakes
1 tsp. salt
1/2 tsp. black pepper
1 tbsp. sugar
2 medium onions, halved and sliced
1 red bell pepper, sliced
1 orange bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
Oil, for frying
Flour tortillas, warmed
Cheese (grated cheddar/Jack or crumbled queso fresco), for topping

Steps:

  • In a dish, mix together the olive oil, Worcestershire sauce, lime juice, garlic, cumin, chili powder, red pepper flakes, salt, pepper, and sugar until combined. Pour half of the marinade into a separate dish. In one dish, place the flank steak, turning it over to coat. In the second dish, place all the veggies, turning to coat. Cover the dishes with plastic wrap and place in the fridge for at least 2 hours.
  • Prepare the tortillas and toppings.
  • Heat a heavy skillet over medium-high heat and drizzle in some oil. Add the veggies and cook them for a few minutes, until they're cooked but still slightly firm and have nice black/brown pieces. Remove to a plate and set aside.
  • Heat the same same skillet (or a grill pan if you have it) over high heat and drizzle in some oil. Cook the meat for about 2 minutes per side until medium rare. Remove and allow to rest on a cutting board for 5 minutes. Slice the meat right before serving and serve with all the fixins. Delicious!

KETO STEAK FAJITA PIE

3 1/2 cups shredded mozzarella cheese
1 1/2 cups almond flour
1 egg
1 teaspoon baking powder
1 teaspoon xanthan gum
2 tablespoons avocado oil
1 pound pre-cooked or leftover steak or roast, diced into bite sized chunks
1/4 red bell pepper, sliced
1/4 green bell pepper, sliced
1/4 yellow onion, sliced
4 ounces cream cheese, softened
1 1/2 cups shredded Mexican blend cheese
2 teaspoons taco seasoning

Steps:

  • Preheat the oven to 400 degrees Fahrenheit.
  • Start by making the keto pie crust. Melt the mozzarella cheese using a microwave safe bowl in the microwave for 2 minutes or in a non-stick skillet over the stove top until melted. To a food processor, add almond flour, egg, baking powder, xanthan gum and melted cheese. Pulse until combined and a dough ball forms. If you don't have a food processor, see suggestions below.
  • Place dough into between two pieces of parchment paper. Roll out keto pie dough into a circle until the diameter is 2 inches larger than your pie plate. Remove the top layer of parchment paper. Place pie pan upside down on top the center of the pie crust. Flip upside down so the pie crust lands on top of the pie plate. Remove the parchment paper.
  • Press the pie dough into the pie pan. Get rid of excess if needed. Poke holes in the bottom of the crust to allow for air to escape and to prevent the crust from bubbling up when baking. Bake in a 400 degree Fahrenheit oven for 10 minutes.
  • While the keto pie crust is baking, move on to making the fajita filling. Add avocado oil to a preheated large skillet. Heat over medium-high heat, then add bell pepper, onions and left over beef. Saute until the vegetables are slightly softened. Remove from heat and set aside until pie crust has finished baking.
  • In a small bowl, add cream cheese, 1 cup of shredded Mexican blend cheese and taco seasoning. Cream together with an electric mixer or a combine with a spoon.
  • Remove pie crust from the oven and decrease oven heat to 375 degrees Fahrenheit. To the bottom of the pie crust, sprinkle 1/4 cup shredded Mexican blend cheese. Using half of the mixture, drop dollups of the cream cheese mix over the base of the pie crust.
  • Add the steak and pepper mixture to the pie crust. Then add remaining cream cheese mixture. Top with remaining cheese. Bake at 375 degrees Fahrenheit for 6-8 minutes or until the cheese is melted and bubbly.

  • Combine the olive oil, soy sauce, vinegar, honey, garlic, oregano, cumin, and pepper in a large resealable freezer bag. Place the beef in the bag, seal it, and then smush it around in the marinade to coat it evenly. Place the bag in the refrigerator for at least two hours or up to eight.
