1.5 tsp cumin
1 tsp pepper
1 1/4 tsp salt
1 tsp paprika
1 tsp garlic powder
1 tsp Sriracha (dry, powdered)
3 tbsp olive oil
1/3 c water (or beef broth)

Steps:

  • Mix all spices together well, add olive oil and mix. Then add water or broth and combine well.
  • Add to a bowl or gallon freezer bag with meat and mix well (using your hands to massage it into the meat works best).
  • Put mixture into a gallon bag, zip, and store in fridge overnight.

⅓ cup fresh lime juice
¼ cup tequila
2 cloves garlic, minced
1 tablespoon chopped cilantro
1 teaspoon dried, crushed Mexican oregano
2 teaspoons ground cumin
1 teaspoon freshly ground black pepper

Steps:

  • Whisk together lime juice, tequila, garlic, cilantro, oregano, cumin, and pepper in a bowl.
  • To use the marinade, pour into a resealable bag, and add 1 to 1 1/2 pounds of flank steak. Press the air out of the bag and seal tightly. Marinate in the refrigerator 8 to 24 hours.

¼ cup lime juice
⅓ cup water
2 tablespoons olive oil
4 cloves garlic, crushed
2 teaspoons soy sauce
1 teaspoon salt
½ teaspoon liquid smoke flavoring
½ teaspoon cayenne pepper
½ teaspoon ground black pepper

Steps:

  • In a large resealable plastic bag, mix together the lime juice, water, olive oil, garlic, soy sauce, salt, and liquid smoke flavoring. Stir in cayenne and black pepper.
  • Place desired meat in the marinade, and refrigerate at least 2 hours, or overnight. Cook as desired.

1 cup(s) pineapple juice
1/2 cup(s) tamari sauce, or liquid aminos
2 tablespoon(s) lime juice, freshly squeezed
1 tablespoon(s) grapeseed oil
1 tablespoon(s) ground cumin
2 clove(s) garlic, minced
1 - 2 pinch(es) cayenne pepper

Steps:

  • PREP/PREPARE
  • My favorite steak for fajitas is the flat-iron. A good steak with good flavor.
  • Gather your ingredients (mise en place).
  • Whisk all the ingredients together in a small bowl.
  • Add the steaks, and marinade to a Ziploc bag, and refrigerate for six hours.
  • Remove the steaks, discard the marinade, and cook them up on a hot griddle, or cast-iron pan.
  • PLATE/PRESENT
  • Cut the beef against the grain, and serve with roasted veggies tortillas, cheese, sour cream, and anything else you can think of. Enjoy.
  • Keep the faith, and keep cooking.
