DAUBE ~ FRENCH BEEF STEW

Daube ~ French Beef Stew image

This French stew, called a daube, is simply chunks of beef, carrots, onion, mushrooms, and olives in a rich red wine sauce. Serve it by itself, over pasta, or with a thick slice of hearty peasant bread. Perfect blizzard food.

Categories     Mains

Time 4h30m

Number Of Ingredients 22

1/2 cup sliced carrots
1/4 cup sliced celery
1/4 cup chopped onion
3 tablespoons olive oil
2 tablespoons mixed herb: flat-leaf parsley, thyme, crumbled bay leaf, and rosemary or savory
2 teaspoons chopped garlic
2 cups dry red or white wine
Salt
12 black peppercorns
1 pound beef shank
1 pound beef short ribs
1 pound grainy beef chuck (cut into small chunks)
2 medium onions (thinly sliced)
1/2 cup pancetta
35 ounces canned tomatoes (seeded and chopped)
Bouquet garni of bay leaf, flat-leaf parsley sprigs, and thyme leaves (tied together)
1 tablespoon orange zest
Parchment paper (cut to fit the inside diameter of the pot)
1/4 pound fresh mushrooms (sliced)
2 dozen brine-cured black olives (rinsed and pitted)
2 tablespoons chopped flat leaf parsley
Cooked noodles (optional) (for serving)

Steps:

  • In a skillet over low heat, warm the oil. Add the carrots, celery, and onion and cook, stirring occasionally, until softened. Add the herbs and garlic and continue cooking until the flavors and aromas are released, just a minute or two. Add the wine, salt, and peppercorns, bring the liquid to a boil, and then simmer for 10 to 15 minutes, until the liquid is reduced somewhat. Remove the skillet from the heat and let cool completely.
  • Place the various cuts of beef in a bowl and pour the cooled wine mixture over the beef. Cover and refrigerate overnight, turning the meat once or twice.
  • Preheat the oven to 350°F (175°C). Place the meat and the marinade in a heavy casserole or Dutch oven with a tight-fitting lid. Scatter the sliced onions and then add the pancetta, tomatoes, bouquet garni, and orange zest. Wet the parchment circle and place it on top, pressing down to remove any air bubbles. Cover and cook for 1 hour. Lower the temperature to 250°F (120°C) and cook an additional 3 to 4 hours, until the meat falls apart easily when prodded with a fork.
  • Set the pot on top of the stove over very low heat. Remove the parchment and stir in the mushrooms and olives. Cook until the mushrooms are tender, about 10 minutes. Remove the bouquet garni and skim the fat from the top of the cooking liquid. Adjust the seasoning. Sprinkle with chopped parsley and serve over cooked noodles, if desired.

PROVENçAL WHITE WINE BEEF DAUBE

Provençal White Wine Beef Daube image

A classic Provençal beef daube, or slow-baked stew, is made with quantities of red wine, like the recipes that Julia Child often made in her house in Provence, La Pitchoune. Patricia Wells, a former New York Times food writer in Paris, also lives part-time in the South of France, and she has adapted the daube for white wine, which plays a more subtle part in flavoring the stew. The large amount of liquid makes a tender braise that can also be served as a sauce for pasta: penne, gnocchi and long noodles like tagliatelle are familiar in the region, which borders Italy on the east.

Categories     soups and stews, main course

Time 5h

Yield 8 to 10 servings

Number Of Ingredients 15

4 tablespoons extra-virgin olive oil
2 tablespoons brandy, eau-de-vie or Cognac
6 pounds boneless stewing beef, such as round, shin, blade or chuck, cut into 3-ounce chunks
Salt and freshly ground black pepper
2 large onions, thinly sliced
4 carrots, peeled and thickly sliced
4 ounces mushrooms, trimmed and thickly sliced
1 head garlic, cloves separated, smashed and peeled
Grated zest of 1 orange, more for garnish (optional)
2 ripe tomatoes, chopped, or 1 cup canned tomato purée
2 bottles white wine
1 bouquet garni (1 small bunch fresh parsley, 6 to 8 sprigs fresh thyme and 2 bay leaves, tied together or bundled in cheesecloth)
1/2 to 1 teaspoon whole black peppercorns
1/4 cup freshly chopped parsley, for garnish
Small pasta, such as orzo, mezze penne or conchiglie, for serving

Steps:

  • In a large bowl or sealable plastic bag, combine 2 tablespoons olive oil, the Cognac, the beef and a generous sprinkling of salt and pepper. Cover and set aside to marinate at room temperature for 2 hours.
  • Place a rack in the center of the oven and heat to 325 degrees.
  • In a wide, heavy casserole with a tight-fitting lid, heat remaining 2 tablespoons oil over medium-high heat until it shimmers. Add onions, carrots, mushrooms, garlic, orange zest and 2 big pinches salt; stir well to coat and heat through. Reduce heat to low, cover, and sweat (cook without browning) for 8 to 10 minutes, until onions and garlic are softened.
  • Add beef and its marinade, tomatoes, wine, bouquet garni and peppercorns. Stir to combine.
  • Cover and bake in the center of the oven until meat is ultratender, 3 to 4 hours. There is no need to stir or baste, but check from time to time to make sure the liquid is at a very gentle simmer; boiling will make the meat tough.
  • When the stew is ready, adjust the seasonings with salt and pepper and serve immediately. Or, refrigerate overnight or longer, skim any hardened fat from the top, and reheat before serving.
  • Serve over hot pasta, garnished with parsley and orange zest, if desired.

BEEF DAUBE WITH MUSTARD, HERBS, AND WHITE WINE

Beef Daube With Mustard, Herbs, And White Wine image

Provided by Global Cookbook

Number Of Ingredients 7

2 lb boneless beef stew meat * see note Salt and pepper
3 Tbsp. extra virgin olive oil
750 ml Chardonnay or possibly similar dry white
2 Tbsp. Dijon mustard
16 ounce canned plum tomatoes with juice
3 med onions halved and sliced
3 x Cloves garlic halved Bouquet Garni * see note

Steps:

  • *Notes: For stew meat, use shoulder, chuck, blade, rump or possibly brisket. Bouquet garni: 4 sprigs each fresh parsley, thyme, and tarragon, and 1 bay leaf, tied in a bundle Pat the meat dry, cut into 3" cubes and season with salt and pepper. Heat the oil in a Dutch oven over medium-high heat. Add in the meat in batches and brown on all sides, being careful not to crowd the pan or possibly scorch the meat. Remove with a slotted spoon and set aside. Pour off all but a light film of fat from the pan. Add in the wine and bring to a boil, scraping up any browned bits on the bottom of the pan. Reduce the heat and gently simmer, uncovered, till the wine is reduced by about half, 7 to 10 min. Add in the mustard and whisk to blend. Return the beef and any accumulated juices to the casserole. Add in the tomatoes, onions, garlic and bouquet garni. Cover and simmer over low heat till the meat is fork tender, 2 to 3 hrs. Remove and throw away the bouquet garni. With a slotted spoon, remove the beef, onions and tomatoes to a platter. Increase the heat to high and boil the sauce till slightly thickened and reduced by one-third, about 10 min. Reduce the heat to medium, return the solids to the sauce, and reheat gently. Serve the daube in warmed shallow soup bowls. Makes 4 to 6 servings. NOTES : I use 2 Tbsp. of oil, 5 cloves of garlic and more herbs in the bouquet garni - maybe about 1/3 again as much, especially the tarragon!

  • Soak the anchovies in the milk for 10 minutes to soften and remove excess salt. Soak the capers in cold water for 10 minutes to remove excess salt.
  • In a large bowl, combine the tomatoes, onions, garlic and cornichons. Drain and rinse the anchovies and capers and add to the bowl. Add 1 teaspoon sea salt and toss with a wooden spoon to blend, lightly breaking up the tomatoes.
  • In a large nonreactive saucepan, simmer the wine to cook off the alcohol, about 10 minutes. Meanwhile, spread about one-third of the tomato mixture in a large, heavy, nonreactive flameproof casserole. Add the bay leaf and thyme sprig and set 2 pieces of beef on top. Season lightly with sea salt and pepper. Repeat with the remaining tomato mixture and beef to make 2 more layers. Pour in the simmered wine.
  • Cover and bring to a simmer over moderate heat. Reduce the heat to moderately low and simmer gently until the meat is very tender, about 4 hours. Check the daube from time to time, stirring the ingredients and distributing them well to keep the meat submerged; do not let the mixture boil. Discard the bay leaf and thyme.
