MEXICAN BEEF SUPREME
My boyfriend is from Mexico and he whipped this up one night and it turned out great. Beef, onions, garlic and peppers cooked in a delicious salsa verde sauce. Serve with rice, beans and tortillas. You may also add some sour cream to the sauce to make it creamier or add it after as a garnish.

Steps:
- Heat olive oil in a large skillet over medium-high heat. Add the onion, and cook for a few minutes, then stir in the beef, and garlic. Cook, stirring frequently until meat is evenly browned.
- While the meat is cooking, stir together the lime juice, jalapeno, cilantro and green onion. When the meat is browned, stir in the cilantro mixture and oregano. Pour in the salsa, cover and cook for about 10 minutes, stirring occasionally, until the meat is cooked through.

- Place herbs, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in a food processor; pulse until herbs are chopped. Gradually add oil, vinegar, lemon juice and pepper flakes, processing just until blended., Sprinkle steaks with remaining salt and pepper. Grill, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). CILANTRO BEEF CUBES
Cilantro Beef Cubes get better and better with slow cooking. For maximum flavor, always sear the cubes in a very hot pot or Dutch oven until they are nice and brown before stewing. These beef cubes are extremely flavorful and easy to make. They also allow you to utilize a cheaper cut of meat, typically considered grisly and tough, into something that melts in your mouth. The recipe is very simple to make and uses every day ingredients.

Steps:
- Cube beef chunks into 1-1/2" squares.
- Add olive oil to pan and bring to high heat.
- Toss beef cubes in garlic powder, thyme, salt, pepper, onion powder mixture.
- When the oil begins to smoke, carefully place the seasoned beef cubes into the pan, stirring frequently to evenly brown meat.
- Add beef cubes, bay leaves and garlic cloves to pot, adding enough water to cover the meat. Cover pot and bring to rapid boil for 30 minutes.
- Reduce heat to low for 30 minutes or more (until beef is tender enough to shred with a fork). Add water if necessary to barely cover most of the beef cubes.
- Add chopped cilantro, stir, cover and continue to simmer for 15 minutes.
- Turn off heat, keep pot on burner for 15 minutes to rest on burner.
- Serve with rice, couscous, noodles, potato, broccoli or on its own. Enjoy!

SKIRT STEAK WITH CILANTRO GARLIC SAUCE

- Make sauce:
- Mince garlic and mash to a paste with salt. Transfer to a blender and add remaining sauce ingredients, then blend until smooth.
- Grill steak:
- Stir together cumin, salt, and pepper in a small bowl. Pat steak dry, then rub both sides of pieces with cumin mixture.
- Heat an oiled well-seasoned ridged grill pan over high heat until hot but not smoking, then grill steak in 2 batches, turning over occasionally, about 2 minutes per batch for thin pieces or 6 to 8 minutes per batch for thicker pieces (medium-rare). Serve steak drizzled with sauce.

- Marinate the beef with potato starch, cooking wine, soy sauce, oyster sauce, black pepper and oil for about 15 minutes.
- Sauté the beef for a minute or until no longer pink, remove from pan and set aside.

I imagine that if I ordered a taco on the streets of Mexico, this is what it would taste like. I've never been to Mexico, so it's possible I'm totally off with my assessment. That being said, this is a nice change from the typical shredded lettuce and saucy beef tacos - which are also super yummy, but serve a different purpose. This taco is light, fun, and colorful. Even as I eat it with the heat turned up in my apartment, I think of sun-soaked streets and the cheerful brightness of summer. Yields 8 tacos

- Preheat grill or set oven to broil.
- Combine olive oil, soy sauce, brown sugar, and spices and smear over the meat.
- Grill the steak for four minutes on each side or broil in the oven for four minutes on each side.
- Combine all the slaw ingredients in a bowl.
- Mix the avocado cream ingredients and blend until mostly smooth with an immersion blender. (Leave some chunks for best results.)
- Grill the tortillas for two to three minutes each side.
- Add London broil, chopped tomatoes and cilantro, cilantro slaw, and avocado cream.

- 1. Puree first 6 ingredients in food processor until almost smooth. Add onion and process until finely chopped, but not ground. Season with salt & pepper. (can be prepared 1 day ahead) 2. Preheat broiler. Place beef and peppers into separate bowls. Mix enough oil into beef and peppers to coat. Spread beef onto large baking sheet and Sprinkle with salt & pepper. Broil beef to desired doneness ( about 3 minutes per side for medium-rare) Broil peppers until tender and beginning to brown (about 3 minutes) Skewer 1 beef cube and 1 pepper square with a toothpick. 3. Serve with the cilantro dipping sauce.

- In a large saucepan, heat the olive oil. Add the onion, garlic and chile and cook over moderate heat until softened, about 5 minutes.
