DUTCH CROQUETTEN
This yummy Dutch snack is sure to please! Seasoned veal dumplings are breaded and then fried. Replace ground veal with lean beef, chicken, or stuff with spiced Gouda!

- Place ground veal in a skillet over medium heat. Cook, stirring to crumble, until evenly browned. Set aside.
- Melt butter in a saucepan over low heat. Stir in flour until smooth, and cook for about 2 minutes. Gradually stir in milk, then chicken broth to make a smooth thick sauce. Add the cooked ground veal, and season with paprika, chili powder, curry powder, salt, pepper , Worcestershire sauce, and parsley. Stir to blend well. Remove from heat, and set aside to cool to room temperature.
- When the meat mixture is cooled and slightly firm, shape into cylinders 3 to 4 inches long, and 1 1 /2 inches wide. If you wish, press a strip of the spiced Gouda cheese into the center, making sure it is completely surrounded. In a small bowl, whisk together the egg and water. Place bread crumbs on a plate or tray. Coat croquettes with flour, then dip in the beaten egg mixture, then roll the croquettes in the crumbs to coat. Repeat the coating process if a thicker breading is desired.
- Heat oil in a large skillet over medium-high heat. When oil is hot, fry croquettes until golden brown on all sides. If you have a deep-fryer, they can be deep-fried instead. Remove to paper towels to drain, and serve hot.

- To make the pastry, combine the flour, salt, baking powder, and curry powder in a large mixing bowl. Cut the butter into small pieces and add to the bowl. Working quickly and using your fingertips, squeeze together the flour mixture and butter and toss it together by scooping under the mixture with both hands. When the mixture resembles a very coarse meal, add the water to the bowl.
- With floured hands, mix and squeeze the dough just until it forms a ball. Knead it once or twice to combine it fully (the less kneading, the better). Spread the dough into 2 pieces, flattening each into a thick pancake. Wrap in plastic and set them in the refrigerator to chill for at least 15 minutes. (The dough will keep in the refrigerator up to 5 days. Remove it from the refrigerator a few minutes before using it.)
- For filling, mix together the beef, onion, scallions, garlic, peppers, and thyme in a large bowl. In a large skillet, heat the oil over high heat until it is very hot, and add the beef mixture. Fry until the meat is brown and the moisture is evaporated, about 8 minutes. Add the curry powder, salt, and black pepper, stirring occasionally over high heat, allowing a crust to form on the bottom of the pan.
- Add the water and stir the mixture, scraping the bottom to incorporate the browned crust. Add the breadcrumbs and stir. The consistency should be like a thick stew. Add more water as needed. Cover, reduce the heat to very low, and cook for 15 minutes. Set it aside to cool.
- Preheat the oven to 400 degrees. Cut each piece of the dough into 9 pieces. Using a rolling pin on a floured surface, roll out each piece of pastry into a rectangle shape with rounded edges. Spread a large spoonful of the cooled meat mixture over one side of the dough, leaving at least 1/2- to 3/4-inch border on the outside edge. Using your finger, paint water around the border. Fold the other side of the dough over, and roll and crimp the edges. Lightly press a floured fork around the edge of the patty.
- Place the patty onto a cookie sheet and repeat the procedure with the remaining dough. The patties may be covered in plastic and frozen at this point for later use. Brush each patty with the egg wash and bake for 15 to 20 minutes, or until the patties begin to turn a golden color.
YUMMYLICIOUS JAPANESE BEEF CROQUETTES
Yummy Japanese croquettes combine ground beef with mashed potatoes and onions; formed into patties, then coated with panko and deep fried to a golden brown. Absolutely mouth-watering! They make a delicious snack! I prefer to make them in smaller bite-size pieces so it's easier to pick up with fingers. Serve with Tonkatsu sauce available at Japanese stores or major supermarkets.

- Add potatoes to a large pot of salted water, and bring to a boil; cook until tender, about 15 minutes. Drain, pour potatoes into a large bowl. Stir in butter, and mash with a fork or potato masher. Set aside.
- Heat 1 tablespoon oil in a large skillet over medium heat. Stir in onions, and cook until soft. Stir in beef and soy sauce. Cook, stirring continuously, until beef is browned and all the liquid is evaporated. Combine beef and onions with potatoes, and stir well.
- Heat 1/2 cup oil in a deep skillet or wok over medium-high heat.
- Shape potato and beef mixture into 10 similar-size balls, and flatten into patties. Dredge patties in flour. Then dip in egg, and coat with panko bread crumbs. Carefully place patties into oil, and fry until golden brown on each side.

- Saute onion in butter (or broth) until tender.
- Add crumbs (or bread or mashed potatoes) to onion.
- Add seasonings, aroma and parsley to mixture.
- Add meat.
- Add broth or water if too dry.
- The mixture should be firm and stick together to form and hold shape.
- Form into 8 cylinder, balls, or pattie shaped croquettes.
- Coat with bread crumbs, then dip in the egg white, then in the bread crumbs again.
- Cook quickly in preheated hot oil until the outside is brown and the croquette is heated/cooked throughout.
- Serve hot with french fries and salad.

- Cut the meat into pieces. Place the meat, chorizo slices and the oregano in a food processor and pulse until slightly chopped. Season with salt, pepper and nutmeg and mix the spices into the meat with your hands.
- Place the olive oil, the chopped onion and the chopped garlics in a saucepan and saute over low heat until the onion starts to turn golden brown. Add the meat, stir and simmer about 15 to 20 minutes, stirring occasionally. Remove briefly the saucepan from heat and mix well the egg yolk into the meat. Then, sprinkle with flour, stir and place the pan back on the stove about 3 to 4 minutes. Turn off the heat and sprinkle with chopped parsley.
- Place the meat in a dish and let cool to room temperature. Mold with your hands small portions of the meat in the shape of croquette.
- In a bowl, whisk the eggs with a fork. Coat the croquettes in breadcrumbs, then dip in the eggs mixture and finally, coat once more in breadcrumbs.
- Heat the oil in a skillet. When the oil is hot, add the croquettes and fry them until golden. Once the croquettes are fried, place them on a plate with absorbent papper.
- Serve the meat croquettes with rice or just with salad.

- 1. Heat milk in the microwave.
- 2. In a small saucepan, melt butter.
- 3. Stir in flour to make a paste cook for 3 minutes while continually stirring.
- 4. Then gradually mix in hot milk.
- 5. Bring to a boil, lower the heat and simmer for 5 minutes.
- 6. Add salt and pepper to taste.
- 7. Then pour into a bowl to cool.
- 8. Place all remaining filling ingredients into a food processor and pulse until smooth.
- 9. Add to bowl with cool sauce. Stir well to make a thick paste. Taste and season with salt and pepper if needed.
- 10. Prepare coating stations - flour, egg beaten with the milk and bread crumbs into dipping plates.
- 11. Form paste into small logs (like large sausages).
- 12. Then coat with crumb topping. Roll your logs into flour.
- 13. Then dip in egg/milk mixture.
- 14. Then coat with bread crumbs (make sure to thoroughly cover with each of these three steps).
- 15. Preheat oven to 200 degrees and heat oil to about 350 degrees. Cook for 5 to 10 minutes turning halfway through frying.
- 16. Place fried croquettes on a baking sheet. Keep warm in the 200 degree oven until ready to serve.
- 17. You can eat these just as they are or if you want to try it in the Dutch style slice them lengthwise top with mustard (Dijon or brown) and place on a slice of white bread.
- 18. You know you've done well if the filling is separated from the coating after frying.

- In a large frying pan, heat the oil over medium high heat. When visibly hot, add the chopped onions and fry until soft and translucent. Now stir in the chillies, diced tomatoes and garlic and ginger paste. Mix it all up well and add the ground beef and Goan sausage meat if using. Stir in the ground spices and stir until the meat is nicely coated with the onion mixture. Cover the pan. This will help the meat get rid of any excess water. - When ready to cook, heat about 2.5cm (1 inch) rapeseed oil in a frying pan. Coat each croquette with the semolina and fry until nicely browned and heated through. You may need to do this in batches.
