Recipe courtesy of Santos Loo and Cooking Channel. Chile Verde - a favorite in Colorado - gains its rich green color from small, firm and tart tomatillos. Pork shoulder is slowly cooked until tender in the verdant broth - thinner than some bean-and-beef-based chilis - and has subtle heat thanks to milder Anaheim chiles. 3 anaheim chilies
1/4 cup vegetable oil
2 lbs boneless pork shoulder, cut into rough 1-inch chunks
kosher salt & freshly ground black pepper
1 teaspoon whole cumin seed
1 medium yellow onion, cut into small dice
1/2 cup finely chopped fresh cilantro, with tender stems
6 garlic cloves, minced
1 tablespoon all-purpose flour
1 (16 ounce) can crushed tomatillos
4 cups chicken stock
tortilla chips and lime wedge, for serving

Steps:

  • Preheat the oven to 400 degrees F. Coat the Anaheim chiles in 1 tablespoon of oil and roast in the oven until the skin blisters and the peppers soften, about 20 minutes. Remove the chiles from the oven and allow to cool. Once cooled, stem and seed the chiles, keeping the skin on (if there is some charring on the skin it's ok). Chop.
  • Heat the remaining oil in a large pot over medium-high heat. Add the pork and sprinkle with salt and pepper. Add the cumin and cook until the pork is golden brown all over, about 15 minutes, stirring as needed. Remove the pork with a slotted spoon and set aside. Lower the heat to medium. Add the chiles, onions, cilantro and garlic to the oil remaining in the pot. Sprinkle with salt and pepper. Saute the vegetables, scraping any brown bits from the bottom of the pot, until the onions are soft and golden, about 10 minutes. Stir in the flour and cook until the flour absorbs the excess liquid and is cooked through, about 3 more minutes. Return the browned pork to the pot along with the tomatillos and chicken stock. Bring to a boil, reduce to a simmer and cover with the lid. Cook until the pork is tender, about 45 minutes. Uncover and simmer until the liquid reduces slightly and the flavors concentrate, about 15 more minutes. Serve with tortilla chips and lime wedges.

1 cup beef broth
1 cup tomatillo salsa
1 green pepper, large, diced and seeded
1 yellow onion, large, diced
3 garlic cloves, chopped
1 teaspoon cumin
1 teaspoon dried ancho chile powder
3/4 teaspoon salt
1 lb ground pork
1 lb ground beef
1 (15 1/2 ounce) can butter beans, drained and rinsed
1/4 cup fresh cilantro, chopped
optional- sliced scallion, lime wedges, and sour cream, for garnish*

Steps:

  • *I had a hard time finding ancho chile pwd so I just used regular chile pwd. Worked just fine.
  • * You can definately use less meat. I've used both the 2 lbs. and just 1 lb. before and it was still delicious!
  • Combine broth, salsa, green pepper, onion, garlic, cumin, chili powder, and salt, in base of slow cooker.
  • Crumble in pork and beef.
  • Mix.
  • Cover and cook on HIGH for 6 hours or LOW for 8 hours.
  • Break up meat with spoon
  • Stir in beans and cilantro.
  • Garnish with scallions, lime, and sour cream.

3 -4 tablespoons olive oil
2 lbs lean ground beef
1 -2 teaspoon crushed red pepper flakes (or to taste)
1 1/2 lbs sirloin, cut into about 1-inch cubes
2 tablespoons chopped fresh garlic
2 cups water (or use 1 cup water and 1 cup beer)
2 -3 tablespoons cumin (can use more to taste)
2 -3 tablespoons chili powder (I use ancho chili powder in place of the chili powder)
3 teaspoons dried oregano
1 tablespoon salt (or to taste)
1 teaspoon cayenne pepper (can use more)
3 (6 ounce) cans tomato paste (YES 3 cans!)
1 tablespoon sugar
3 -4 medium tomatoes, diced (use very red and ripe tomatoes for this)
2 large onions, chopped
2 green bell peppers, chopped
4 cups black beans, rinsed and drained
2 cups beef broth (more if needed to thin)
grated cheddar cheese

Steps:

  • Heat oil in a large heavy pot.
  • Add in ground beef; cook for 5 minutes.
  • Add in the cubed sirloin, crushed red pepper flakes and fresh garlic and brown about 5 minutes.
  • Add in 2 cups beer or water; bring to a boil.
  • Add in cumin, ancho chili or chili powder, oregano, salt and cayenne pepper; reduce the heat, cover and simmer for about 15 minutes.
  • Add in tomato paste and sugar; simmer for 5-6 minutes.
  • Add in chopped tomatoes, onions and green peppers; simmer for about 50-60.
  • Add in drained black beans, beef broth, starting with 2 cups adding in more to thin to desired consistancy; simmer for 20-25 minutes, stirring occasionally.
  • Ladle into bowls and sprinkle with cheddar cheese.

I have a lot of leftover green tomatoes from my monstruous tomato plants, so I decided to put them to use. They really absorb any flavor you add to them and make this recipe bold and robust. The chili peppers (thai hot) and cayenne, as well as the cilantro are all from my garden, but please feel free to work with what you have. Try roasting your peppers a little bit on a pan or in the oven to give it some smokiness. Season your meat beforehand and go a little heavy on your pepper and other spices. You can substitute beef for chicken or turkey, but make sure you season very well. For a vegetarian alternative, mix refried beans into the tomato puree as it's heating up to make it thick and add your veggies of choice 30 mins before serving.

2 cups green tomatoes, put through food processor
1/2 cup red ripe tomato (or tomato paste or sauce)
1/4 cup paprika
1/2 cup fresh chili pepper (or 1 cup roasted sweet peppers )
1 1/2 cups onions (chopped)
1 lb beef steak (cubed)
1 lb ground beef
1 1/2 cups beans (chickpeas, red, pinto, whichever you like)
1 tablespoon ground black pepper (and or or red pepper)
1 tablespoon fresh cilantro

Steps:

  • Season the steak (pretty heavily) and chop into cubes. Season ground beef also. Set aside.
  • In a skillet on medium-high, throw peppers on there to heat up and roast for 10 minutes or until they have dark spots.
  • In the meantime, chop up green tomatoes (about 5 large ones) and, if using ripe tomatoes, chop those up also. Once the peppers have started showing dark spots, remove from skillet and throw into food processor, along with the tomatoes and onions.You can add the paprika then to the tomato puree or wait until everything's combined.
  • Add the cubed steak to the skillet and sear until it is just pink in the center.
  • Throw into crockpot (or wherever you will make the chili).
  • Cook seasoned ground beef.
  • Add tomato/onion/pepper puree to crockpot (or pot on stove) and mix with steak.
  • Finally, add the cooked ground beef.
  • Once the contents are hot and have been boiling for 15 minutes, add the beans. If they are not canned, add between 1/2 and 1 cup of water to the pot. This will depend on if you want the chili to be ready quickly or if you want to let it simmer in the crockpot for a few hours. I think that the more you let it simmer, the better it tastes.
