GIFT IN A JAR COWBOY CASSEROLE
I love gifts in a jar! When I give this gift, I put it in a basket with all the items needed to make the casserole (except the ground beef and cheese). There are several single men that I make baskets for... and they really appreciate having everything along with the recipe... They only have to pick up the meat and...

Steps:
- 1. Pour gravy mix into wide-mouth quart jar.
- 2. In a small bowl, mix together all the spices and the bouillon. Make a paper funnel or use a canning funnel to put the spice layer into the jar.
- 3. Pour the wagon wheel pasta into the jar. Place lid and ring onto jar.
- 4. Cut a piece of cloth in a circle that is 3 - 4 inches wider than the jar ring. (I use a pinking sheers to cut the material for a nice edging. I use a rubber band to hold the cloth in place on the jar. Then I tie a pretty ribbon over the rubber band and attach the recipe card that has a hole in it to put the ribbon through. Then tie a pretty bow.
- 5. Preheat oven to 375 degrees.
- 6. The gift tag/ recipe card: Cowboy Casserole In a large skillet: Brown and cook well 1-1/2 pounds ground beef. Drain.
- 7. Add the ingredients in the jar to the skillet. Add 4 cups water Add 1 cup chunky salsa Add 1 (15 ounce) can black beans Add 1 (15 ounce) can Mexican Corn (drained)
- 8. Stir together well. Bring to a boil. Remove from heat. Either use cooking spray or oil to put a thin layer on 9 x 13 -inch baking pan. Pour the well stirred mixture into baking pan.
- 9. Cover baking pan tightly with aluminum foil. Bake for 65 to 75 minutes (or until pasta is cooked and tender). Remove foil. Add 1-1/4 cups shredded cheddar cheese over the top of the casserole.
- 10. Return to the oven for about 10-15 minutes until the cheese is melted. Makes 10 servings.
CHEESECAKE IN A JAR
Perfect for summer picnics, this is a no-bake version of cheesecake in a portable jar with fresh strawberries.

Steps:
- Stir together cookie crumbs, butter, and 2 tablespoons sugar in a bowl until blended. Divide mixture evenly among jars (about 3 1/2 tablespoons each) and gently press (do not pack) into bottoms.
- Halve 6 strawberries for garnish, and set aside. Chop remaining strawberries.
- Beat together cream cheese, lemon juice, and 1/2 cup sugar in bowl with an electric mixer at medium speed until smooth. Fold in whipped cream and chopped berries, and divide evenly among jars (about 1/2 cup each). Top each with a 2 berry halves and cover with lids. Chill at least 2 hours and up to 3 days.

- Wash and thoroughly dry a 1-quart, wide-mouth canning jar. Place the macaroni in a plastic sandwich bag.
- Layer the ingredients as level as possible in this order: split peas, lentils, pearl barley, onion flakes, celery flakes, parsley, pepper and bagged macaroni.
- Secure the lid and decorate the jar as desired. Be sure to attach the recipe for making the soup!
- Coat a large pot or Dutch oven with cooking spray and warm over medium-high heat. Add beef and cook, stirring constantly, about 4 minutes, or until no pink remains. Drain off excess fat.
- Add broth and all of the jar ingredients (except the bag of macaroni) to the pot. Bring to a boil over medium-high heat. Reduce heat to low, cover and simmer for 30 minutes, stirring occasionally.
- Add macaroni and continue to simmer another 10 minutes, or until peas are tender and macaroni is cooked. Serve hot. Refrigerate any leftover soup in an airtight container for up to a week.

- 1. For the Noodle Base: 1 oz broken spaghetti or macaroni noodles (about 1/4 cup) 1 tsp granulated garlic or 1/2 tsp garlic powder 2 Tbls Freeze Dried Bell Peppers 1/4 cup Freeze Dried Mushrooms 2 Tbls Freeze Dried Onion 1/4 cup Freeze Dried Ground Beef or Sausage
- 2. Classic Italian Tomato Sauce To each Noodle Base Jar add: 3 T Tomato Powder 1 tsp Italian Seasoning To prepare: Bring 1 1/3 cups water to a rolling boil. Remove and discard oxygen absorber (they are only good once). Pour contents of jar into boiling water and stir. Boil 8-10 minutes until noodles are tender. Serve hot.
- 3. Cheeseburger Sauce To each Noodle Base Jar add: 1/4 cup Cheese Sauce Powder 2T Instant Dry Milk 2T Freeze Dried Cheddar Cheese To prepare: Put contents of mix in a 12 inch skillet (with a lid). Add 1 1/3 cups water. Bring to a boil and cover. Simmer 12-15 minutes until noodles are tender. Sauce will thicken a little more as it cools. Yield 1 1/2 cups prepared.
- 4. Tex Mex Sauce To each Noodle Base Jar add: 2 tsp Tomato powder 2 T Freeze Dried Cheddar Cheese 1 1/2 T Taco seasoning 1/4 tsp chili pepper flakes To prepare: Put contents of mix in a 12 inch skillet (with a lid). Add 1 1/3 cups water. Bring to a boil and cover. Simmer 12-15 minutes until noodles are tender. Sauce will thicken a little more as it cools. Yield 1 1/2 cups prepared.
