1 lb. extra-lean ground beef
3 cloves garlic, minced
1-1/2 tsp. dried oregano leaves
1 can (28 oz.) diced tomatoes, undrained
1 pkg. (9 oz.) frozen green beans, thawed, drained
1 cup KRAFT 2% Milk Shredded Mild Cheddar Cheese

Steps:

  • Heat oven to 375°F.
  • Prepare Dinner as directed on package. Meanwhile, brown meat with garlic and oregano in large nonstick skillet; drain. Stir in tomatoes and beans.
  • Spoon meat mixture into 13x9-inch baking dish; top with Dinner. Cover.
  • Bake 30 min. or until heated through. Remove from oven. Top with cheese; let stand, covered, 5 min. or until melted.

2 celery sticks, thickly sliced
1 onion, chopped
2 really big carrots, halved lengthways then very chunkily sliced
5 bay leaves
2 thyme sprigs, 1 whole and 1 leaves picked
1 tbsp vegetable oil
1 tbsp butter
2 tbsp plain flour
2 tbsp tomato purée
2 tbsp Worcestershire sauce
2 beef stock cubes, crumbled
850g stewing beef (featherblade or brisket works nicely), cut into nice large chunks

Steps:

  • Heat oven to 160C/140C fan/gas 3 and put the kettle on.
  • Put 2 thickly sliced celery sticks, 1 chopped onion, 2 chunkily sliced carrots, 5 bay leaves and 1 whole thyme sprig in a flameproof casserole dish with 1 tbsp vegetable oil and 1 tbsp butter.
  • Soften for 10 mins, then stir in 2 tbsp plain flour until it doesn't look dusty anymore, followed by 2 tbsp tomato purée, 2 tbsp Worcestershire sauce and 2 crumbled beef stock cubes.
  • Gradually stir in 600ml hot water, then tip in 850g stewing beef and bring to a gentle simmer.
  • Cover and put in the oven for 2hrs 30 mins, then uncover and cook for 30mins - 1hr more until the meat is really tender and the sauce is thickened.
  • Garnish with the picked leaves of the remaining thyme sprig.

3 cups uncooked spiral pasta
1 pound ground beef
1/2 pound bulk pork sausage
1 medium onion, chopped
1 medium green pepper, chopped
1 jar (24 ounces) meatless pasta sauce
1 can (15 ounces) pizza sauce
1 teaspoon brown sugar
2 cups shredded part-skim mozzarella cheese
1 package (3-1/2 ounces) sliced pepperoni
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions for al dente; drain. Meanwhile, in a Dutch oven, cook and crumble beef and sausage with onion and pepper over medium-high heat until meat is no longer pink and vegetables are tender, 6-8 minutes; drain., Stir in pasta sauce, pizza sauce and brown sugar. Bring to a boil. Reduce heat; simmer, uncovered, 10 minutes, stirring occasionally. Stir in pasta. Transfer to a greased 13x9-in. baking dish. Top with mozzarella cheese and pepperoni. Sprinkle with Parmesan cheese., Bake, uncovered, until lightly browned and cheese is melted, 20-25 minutes.

This beef casserole recipe is full of flavour and easy to make. There is nothing better than a bowl of nourishing comfort food, and here is one of our all-time winners.

1 kg (2lb 11oz) braising steak, cut into 4cm (1½in) cubes
2 tbsp. vegetable oil
8 shallots, halved
250 g (9oz) portobello mushrooms, thickly sliced
1 tbsp. plain flour
150 ml (5fl oz) red wine
800 ml (1 pint 7fl oz) beef stock
Handful dried wild mushrooms
3 thyme sprigs
1 bay leaf
25 g (1oz) cornflour
Handful chopped fresh parsley

Steps:

  • Preheat oven to 160°C (140°C fan) mark 3. Pat beef dry with kitchen paper and season. Heat 1½tbsp of the oil in a large ovenproof casserole dish and brown beef in batches. Set aside.
  • Heat remaining oil and fry the shallots for 2-3min until golden, then add the portobello mushrooms and fry for 2-3min until softened.
  • Return beef to the pan with any juices and stir in the flour. Add the wine, stock, dried mushrooms, thyme and bay leaf. Bring to the boil, then cover and cook in oven for 2hr or until beef is tender.
  • Strain the stew, reserve beef mixture and return liquid to the pan. In a small bowl, mix together cornflour and 3tbsp water. Add to the pan and heat on the hob. Boil the sauce for 4-5min, stirring continuously until the mixture thickens. Add the strained beef mixture and heat through (don't boil or the meat will toughen). I found this recipe on the box of instant rice. I have definitely added it to my recipe collection! This is a fairly quick dish to put together and tastes great! We prefer to make this with venison instead of ground beef but both are good!

1 lb ground beef
1 15 oz can(s) tomato sauce
1 1/2 tsp salt
1/8 tsp garlic
2 Tbsp minced onion
2 Tbsp chopped green pepper
1 1/2 c water
1 1/2 c instant white rice
1 c cottage cheese
3 oz cream cheese
1 Tbsp minced parsley
3/4 c cheddar cheese

Steps:

  • 1. Brown beef; drain. Add tomato sauce, 1 tsp. salt, garlic, onion, and green pepper. Simmer 1-2 minutes. Bring water to a boil, and add rice and remaining salt. Cover let stand for 5 minutes. Blend cottage cheese and softened cream cheese well, add parsley. In a two-quart casserole layer rice, cheese mixture, and meat sauce. Top with cheddar cheese. Bake 30 minutes at 350 degrees.

Steps:

  • Heat oven to 400ºF.
  • Brown meat in large nonstick skillet; drain. Stir in tomatoes and oregano; cook 5 min. or until heated through, stirring occasionally. Meanwhile, prepare Dinner as directed on package, omitting the butter.
  • Add prepared Dinner to meat mixture; mix well. Spoon into 9-inch square baking dish; top with cheddar.
  • Bake 10 min. or until cheddar is melted and casserole is heated through.

This comforting beef casserole is a perfect winter warmer and, although it seems rich, it is actually suitable for a low-calorie diet of 1200-1500 calories a day. Each serving provides 429 kcal, 43g protein, 18g carbohydrates (of which 11g sugars), 16g fat (of which 5g saturates), 6g fibre and 1g salt.

700g/1lb 9oz braising steak, trimmed of excess fat and cut into 3-cm/1¼-in chunks
2 tbsp olive or sunflower oil
2 onions, thinly sliced
2 tbsp plain flour
2 tsp dried mixed herbs
150ml/5fl oz red wine
450ml/16fl oz beef stock, made with 1 stock cube
2 tbsp tomato purée
1 bay leaf
3 carrots (about 300g/10½oz), peeled and thickly sliced
300g/10½oz closed cup mushrooms, sliced
sea salt and freshly ground black pepper
handful fresh flatleaf parsley, roughly chopped, to garnish
575g/1lb 4½oz floury potatoes, preferably Maris Piper or King Edward, peeled and cut into roughly 5-cm/2-in chunks
25g/1oz butter
4 tbsp semi-skimmed milk
100g/3½oz kale, trimmed, hard stalks removed, roughly chopped
sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4. Season the beef well with salt and pepper.
  • Heat half of the oil in a large, non-stick frying pan and fry the beef in two batches for 2-3 minutes, or until browned on all sides. Transfer to a casserole dish using a slotted spoon or spatula once each batch is done.
  • Add the remaining oil and the onions to the pan and fry over a medium-high heat for 4-5 minutes, or until lightly browned. Place the onions into the casserole dish and sprinkle with the flour and dried herbs. Toss well together.
  • Pour the red wine and stock into the casserole dish and add the tomato purée and bay leaf. Stir well and bring to a simmer on the hob. Cover with a lid and bake in the oven for 1½ hours.
  • Carefully remove the casserole from the oven and stir in the carrots and mushrooms. Cover and bake for a further 45 minutes, or until the beef and vegetables are just tender.
  • Meanwhile, to make the kale mashed potato, place the potatoes into a large saucepan and cover with cold water. Bring to the boil and cook for about 15 minutes, or until very tender. Drain well then return to the saucepan. Mash with the butter and milk until smooth. Season with salt and pepper.
  • Place the kale into a saucepan and add 500ml/18fl oz water. Cover with a lid and bring to the boil for 5 minutes, or until tender, removing the lid and stirring the kale three or four times as it cooks. Drain well then stir into the mash.
  • Serve the kale mash alongside the casserole, garnished with the parsley.
