The BEST homemade burger patties ever! Josh's secret recipe. Perfect for summer BBQ's or delicious homemade burgers any time of year.

500 grams minced beef
2 eggs
1/2 cup breadcrumbs
1 tsp mixed herbs
1 1/2 tsp crushed garlic
1 beef stock cube ((about 1 tsp powder))
2 TBSP BBQ sauce

Steps:

  • Crack 2 eggs into a bowl and whisk together. Add the breadcrumbs and whisk again. Add mixed herbs, garlic, beef stock cube and BBQ sauce and combine.
  • Add mince and mix it all together using your hands.
  • Split the mixture into 4 (or 6 if you prefer smaller burgers) and shape into patties. Coat each pattie lightly in flour and place on a baking tray in the freezer for 30 minutes. This helps the patties to hold together better when cooking and makes them much juicier!
  • Heat a tablespoon of olive oil in a frying pan over a medium-high heat and fry the patties until cooked through (about 7-8 minutes each side).
  • Put the burger in a bun, add your salads and sauces and enjoy the best burger ever!

This is a very popular Danish dish. It goes well with new nugget potatoes and pickled beets. You can add other spices to the patties ( eg Mace) but they are really good plain so you can savour the beef and onion flavors.

1 lb onion, sliced
5 ounces butter
3 tablespoons water
2 lbs hamburger
1/2 cup flour, seasoned with salt & pepper
1 1/2 cups beef consomme

Steps:

  • Fry the onions in 2 oz of butter until they are turning brown.
  • Add the water and continue cooking until it has evaporated.
  • Remove onions and keep them warm.
  • Shape the beef into round flat hamburgers (about 1" thick) and dip into seasoned flour.
  • Melt remaining butter and fry the hamburgers flipping once.
  • The hamburgers should be crispy brown on the outside.
  • ,about 7 min each side.
  • Arrange cooked hamburgers on a platter, cover with the onions, keep warm.
  • Pour stock into the fry pan and bring to a boil, add salt& pepper to your taste.
  • Serve with the hamburgers.

  • Light a grill. In a mini food processor, pulse the cornichons with the parsley leaves, capers and garlic clove until finely chopped. Add the mayonnaise and mustard and pulse until blended.
  • In a large bowl, gently mix the ground beef with the ground lamb and season generously with salt and pepper. Form the meat mixture into four 1-inch-thick patties and make a slight indentation in the center of each one with your thumb. Season the burgers with salt and pepper.
  • Grill the English muffin halves cut side down until toasted, about 1 minute. Flip the muffins and grill for 30 seconds longer. Transfer to a work surface cut side up and spread the bottom halves of the muffins with the caper remoulade.
  • Grill the burgers over high heat until they are nicely charred on the bottom, about 4 minutes. Flip the burgers, top them with the cheddar cheese and grill until cooked to medium and the cheese melts, about 4 minutes longer. Transfer the burgers to the toasted English muffins and let rest for 5 minutes. Top the burgers with the tomatoes and cucumbers if desired, close the burgers and serve.
