There's no need to spend all day at the stove with this vegetable beef soup recipe. Made with onions, ground beef, frozen vegetables and tomato sauce, it tastes just like a slow-cooked soup, but comes together in just 45 minutes.

1 tablespoon vegetable oil
1 lb ground beef (at least 80% lean)
1 cup chopped onions
5 cloves garlic, finely chopped
1 teaspoon Italian seasoning
1/2 teaspoon pepper
3 cups Progresso™ beef-flavored broth (from 32-oz carton)
1 bag (16 oz) frozen mixed vegetables
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
1 can (8 oz) tomato sauce

Steps:

  • In 5-quart Dutch oven, heat oil over medium-high heat. Add beef, onions and garlic. Cook 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Stir remaining ingredients into beef mixture in Dutch oven. Heat to boiling over high heat; reduce heat. Cover; simmer 20 minutes, stirring occasionally, until hot. Ladle soup into 6 bowls.

My mother never made soup from scratch so I never learned how. After trying a number of soup recipes from Zaar, I came up with this recipe as a guideline for a basic veggie beef soup. I often throw in whatever veggies I have around so the soup is never exactly the same two times running; however, soup-making isn't an exact science as is baking. I'm posting the recipe so that I can give it out easily; evidently, folks seem to really like it!

1 lb ground round
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrot
1 (15 ounce) can diced tomatoes
2 cups tomato juice or 3 cups v 8 vegetable juice
2 (10 1/2 ounce) cans condensed beef broth
2 1/2 cups water
1 (15 ounce) can cut green beans, drained
3 cups vegetables, of choice (yellow corn, shoe-peg corn, lima or butter beans, green peas, large potato, peeled and diced, whatev)
1 1/2 tablespoons parsley flakes
1/2 teaspoon black pepper

Steps:

  • Brown meat in large pot along w/ onions, celery, and carrots.
  • Add remaining ingredients, bring to a boil.
  • Reduce heat, cover and simmer 30-45 mins til veggies and barley are done.
  • Note #1: I've been adding ½ cup pearl barley to the soup, which will be done in the amount of simmering time. Quick barley takes only 10 minutes to cook so you could add later.
  • Note #2: I've found that adding pasta, while good at first, it continues to absorb the soup liquid and get really big and the soup becomes more like a stew. If you'd like noodles, I would cook them separately and add them to the bowl just before ladling in the soup.
  • Note #3: You could also add rice, if you would like.

A pot of yummy deliciousness, that's what this soup is. Good for a chilly day when a bowl of warm soup is just what you need, or when you want to use up your fresh summer veggies. Goes well with a loaf of crusty Italian bread. You can put pretty much any vegetable combination in this soup. I have used chopped fresh okra; it's good for a nice pop in your mouth. You can also use pearled barley in place of the oro pasta. Just add it to the soup when you put in the veggies, and an extra cup of water. I like that it makes a big pot, because it's even better as leftovers.

2 pounds beef stew meat, cut into bite-size pieces
1 large onion, chopped
2 bay leaves
3 carrots, diced
4 small red potatoes, diced
2 quarts beef stock

Steps:

  • Heat the olive oil in a stock pot over medium-high heat; cook the beef in the hot oil until completely browned, 7 to 10 minutes. Add the onion and bay leaves, reduce heat to medium, cook until the onion is softened, 5 to 7 minutes. Use a wooden spoon to scrape any bits stuck to the bottom of the pot. Stir the carrots, potatoes, and beef stock into the mixture; bring to a simmer and cook until the vegetables are just barely tender, about 5 minutes.
  • Stir the green beans, corn, peas, zucchini, cabbage, tomatoes, Italian seasoning blend, garlic powder, salt, and pepper into the beef mixture. Cover the stock pot, reduce heat to medium-low, and simmer the soup until the beef is cooked through and the vegetables are tender, 45 to 50 minutes.
  • Stir the orzo pasta into the soup; replace the cover to the stock pot and continue cooking until the pasta is tender, about 5 minutes more.

2 lbs cubed stew meat (or 2lb pot roast)
1 small onion (diced)
2 tbsp butter
2 cups mixed vegetables ((corn, carrots, green beans and peas))
3 potatoes (diced)
3 1/2 cups beef broth
1 beef bullion cube
14 oz petite diced tomatoes
1 tbsp Worcestershire sauce
2 bay leaves
Salt and pepper to taste

Steps:

  • Heat butter in a dutch oven or large pot over high heat. Add stew meat and sear so that outside edges are brown, turning over as needed to brown all sides of the meat. Add diced onion to saute while searing the beef. Continually stir onions to prevent sticking. Cook for about 3 minutes total.*If finishing in a slow cooker, transfer both onions and beef to your crockpot set on low once fully seared.
  • Add mixed vegetables, cubed potatoes (I leave the skin on like my grandma did for extra vitamins and flavor but you can peel them if you prefer), diced tomatoes, beef broth, beef bullion, Worcestershire sauce, and bay leaves.
  • Bring to a boil then reduce heat to a low boil. Cook for 20 minutes or until potatoes are soft all the way through. Add salt and pepper to taste before serving.*If using a crockpot, cook for 1 hour on high (or 2 hours on low). Check potatoes to be sure they are fully cooked through, then serve.

10 cups water
3 tablespoons beef-flavor instant bouillon

4 cups vegetable juice
3 cups cubed potatoes (3 medium)
3 cups coarsely chopped cabbage
2 cups frozen small whole onions (from 16-oz bag)

Reduce the heat to low, and skim off and discard any foam. Simmer, partially covered, stirring occasionally, for 3 hours, or until the meat is mostly tender.
  • Remove the beef shanks from the soup. Skim excess fat from the surface of the soup with a ladle or spoon. Remove the meat from the bones, cut it into small pieces, and add it back to the broth. Add the tomatoes, cabbage, green beans, potatoes, carrots, celery, Worcestershire sauce, and sugar, if using. Continue to simmer for about 45 minutes longer, or until the vegetables and meat are tender. Taste and adjust the seasonings.
  • Remove the bay leaf and ladle the soup into bowls. Serve hot and enjoy.

1 pkg beef soup bones ...most fat removed.
2 medium carrots, cubed
1 medium onion.... chopped
2 medium potatoes....peeled & cubed,

  • 1. Heat oven to 350. wash and put bones on a cooking sheet. Put in oven. Bake about 1 hour. Keep an eye on them, you don't want to burn them. Just brown them, and any meat on the bones will be cooked.
  • 2. Take bones out of oven. Add bones to a crock pot with a 1-1/2 quarts of water. Cook for 2-3 hours on medium. This will get all the flavor out of the bones!
  • 3. Strain cooked broth. Cut any meat off the bones. Put broth and meat in the crockpot.
  • 4. Prepare your choice of fresh vegetables. PLEASE, no canned veggis!
  • 5. Remove tomato skins. Dipping them in boiling water will do the trick, remove and cool.
  • 6. Chop up the tomatoes, and get ride of seeds along with the skins. Add to pot .
  • 7. Soup ready to serve. ENJOY the pure flavor!!!! I do hope you will like it.
  • 8. do not give cooked bones to dogs.... they could splinter, when cooked. it will hurt or kill a dog. a dog [put in the garbage)

1 pot roast (about 2 pounds)
2 russet potatoes, chopped
1 bag frozen seasoning blend (or just chopped onions)
1 bag frozen peas
1 bag frozen green beans
1 bag frozen corn
4 large carrots, chopped
1 (32 oz) container beef broth
2 (10.75 oz) cans tomato soup
1 can filled with water
Salt and pepper, to taste

Steps:

  • Season roast with salt and pepper and place in your slow cooker with half a can of beef broth. Cook on LOW for about 10 hours and shred with two forks.
  • In a very large pot, saute carrots and seasoning mix in 1 tablespoon oil until tender.
  • Add beef, potatoes, remaining veggies, remaining beef broth, tomato soup, water, salt and pepper.
  • Bring to a boil, lower the heat, cover and simmer for about an hour.
  • Add water as desired while it cooks.

This is how I make beef soup. It's a day-long process and produces a beef soup with amazing depth and flavor. Much of the stock process comes from the advice of my father. If you have large and meaty soup bones, use two, otherwise use 3. Roasting the bones prior to making the stock makes a world of difference in flavor. Be sure to leave the skin on the onion. It will also add significantly to the flavor and color of the stock. The soup (after the stock is made) is mostly taken from Jeff Smith's (Frugal Gourmet) recipe for Beef Barley Soup, but I swap yellow potatoes for the barley because it is better in texture. For the lemon peel, just use the zest. Simply use a grater to peel a small 1" x 1/2" or so piece and drop it in the soup. The lemon is really surprisingly wonderful.

1 cup madeira wine or 1 cup other cooking wine
2 carrots, roughly chopped
1 onion, sliced

1 cup yellow onion, peeled and chopped

Steps:

  • Place the soup bones into a pyrex or jelly roll pan with a lip to catch the juices. Roast at 450 degrees for 45 minutes to an hour.
  • Remove bones and place in large stockpot. Add Madeira or other wine to pan to deglaze. Pour over bones. Add carrots, onion, garlic, bay leaves and salt.
  • Cover everything with water.
  • Bring to a rolling boil. Lower to simmer. Simmer for 3 hours.
  • Strain stock into bowl. Discard solids (I always eat the carrots or give them to my toddler) and return stock to stockpot.
  • Heat to low simmer. Add celery, carrot, onion, potatoes, garlic, lemon peel.
  • Simmer for 1 hour.
  • Add the herbs and chopped tomato and paste, and continue cooking for 1 more hour. Correct for salt and pepper before serving.

1 cup white mushrooms (chopped)

1 cup beef (shredded beef scraped from bones of the broth, or thin slices of fondue beef)
1 cup baby spinach
1 package rice noodles (cooked according to instructions)
salt and pepper (to taste)

Steps:

  • Heat olive oil in large soup pot then add onions and cook until translucent. Add carrots and cook for another 5 minutes.
  • Add homemade bone broth to the pot and bring to a boil. Add the mushrooms and simmer for 5-10 minutes until the mushrooms are cooked.
  • Stir in the beef to the soup pot and continue to simmer for 2 more minutes.
  • Add the fresh spinach leaves to the soup and stir until the spinach leaves are wilted. Do not overcook the spinach.
  • Cook rice noodles according to instructions on package. Rinse and drain noodles.
  • To serve, place noodles in an empty soup bowl and use a soup ladle to place broth and soup fillings on top of the noodles.
