SHEET PAN NACHOS



Sheet Pan Nachos image

This easy Sheet Pan Nacho recipe layers crispy tortilla chips with beef, beans, and cheese and is loaded with all your favorite nacho toppings.

1 tablespoon olive oil
1 pound lean ground beef
2 tablespoons chili powder
2 teaspoons ground cumin
½ teaspoon salt
¼ teaspoon black pepper
1 12 ounce bag tortilla chips
1 15 ounce can black beans (, drained and rinsed)
2 cups shredded cheddar cheese
1 cup prepared salsa
½ cup sour cream
4 scallions (thinly sliced)
1 jalapeño (thinly sliced (optional))
2 small avocados (peeled and diced)
Fresh lime wedges (for serving)

Steps:

  • Preheat the oven to 425˚F and line a rimmed baking sheet with foil.
  • In a large skillet, add olive oil and set over medium heat. Add ground beef and cook, breaking up the beef with a fork, for 5 to 7 minutes, or until only some pink remains. Add chili powder, cumin, salt and pepper and cook for 1 to 2 minutes more, or until cooked through. Remove from heat.
  • Scatter tortilla chips in a single layer on the prepared baking sheet. Top with beef, black beans and cheddar cheese. Place in the oven and bake for 5 to 7 minutes, or until the cheese is melted.
  • Let cool slightly, then distribute the salsa and sour cream evenly on top of the nachos. Scatter scallions and jalapeño slices (if using), and avocado on top. Serve with fresh lime wedges on the side, and squeeze lime juice on top right before enjoying.

1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, well drained
3 to 4 jalapeno peppers, seeded and sliced
4 cups multigrain tortilla chips
1 cup shredded cheddar cheese
Optional toppings: Sour cream, chopped fresh cilantro and additional jalapeno slices

Steps:

  • Preheat oven to 350°. Mix beans, tomatoes and jalapenos. Arrange chips in an even layer in a 15x10x1-in. pan. Top with bean mixture and cheese., Bake, uncovered, until cheese is melted, 10-12 minutes. Serve immediately with toppings as desired.

  • Spray large skillet with nonstick cooking spray and heat over MED-HIGH heat. Add ground beef and cook about 5-7 minutes, using a wooden spoon or potato masher to crumble finely. Drain if needed.
  • Return pan to heat, add cooked beef back to skillet. Add chili powder, Chile powder, and cumin, stirring to combine.
  • Add half the black beans to pan and use a potato masher to mash them in with the beef. Stir in picante sauce. Remove pan from heat and set aside.
  • To a small bowl, add cornstarch and 1/4 cup evaporated milk. Whisk to combine. Pour remaining evaporated milk into a small saucepan and heat over MED until simmering.

  • Cook and crumble the ground beef in a skillet over medium high heat. My beef had almost no grease, however, if yours has a good bit, drain most of it off before continuing. Season generously with the Mexican Spice Mix as it is cooking and stir to coat well. Add the corn and beans and stir to combine. Cover with lid and cook for a couple minutes, until everything is warm.
