- Preheat oven to 375°. In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in cornstarch, onion, chili powder and garlic powder. Stir in tomato sauce. Cook and stir 2 minutes or until thickened. Remove from heat., In a large bowl, whisk flour, cornmeal, sugar and baking powder. In another bowl, whisk eggs, milk and oil until blended; stir in corn. Add to flour mixture; stir just until moistened. Stir in cheese., Spread half the batter into a greased 2-qt. baking dish. Top with beef mixture. Spread remaining batter over filling., Bake, uncovered, until a toothpick inserted in cornbread portion comes out clean, 25-30 minutes. Let stand 5 minutes before serving. If desired, serve with sour cream and salsa.

- Pre-heat oven to 400 degrees.
- Brown the ground beef.
- mix corn bread mix, eggs, and milk while the ground beef is cooking.
- drain ground beef.
- return to heat ground beef, taco seasoning, corn, black beans, and Rotel.
- Once, beef mixture is heated through, pour into baking dish.
- Sprinkle on a layer of shredded cheese.
- pour corn bread mixture on top and spread around evenly.
- Bake for 20 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Heat vegetable oil in a large skillet over medium heat. Add onion; cook and stir until softened, about 5 minutes. Add ground chuck; cook and stir until juices run clear, about 5 minutes. Drain grease. Stir in chili with beans, corn, salsa, Cheddar cheese, water, cumin, chili powder, salt, and black pepper.
- Spoon meat mixture into a 2-quart casserole dish, smoothing the top.
- Blend cornbread mix, milk, and egg together in a bowl to make cornbread topping. Spread thinly on top of the meat mixture in the casserole dish.

BEEF AND BLACK BEAN CORNBREAD CASSEROLE
I created this recipe for the Ready, Set, Cook! game (RSC) that we occasionally feature on another cooking site that I frequent. It goes together quickly, so it It makes a great mid-week casserole or hearty lunch dish. The Poblano pepper, black beans, and cumin give it a distinct south-of-the-border flair.

- 1. Preheat oven to 375°F. Lightly spray a 9x13-inch baking dish with nonstick cooking spray; set aside.
- 2. In a large skillet, saute beef, onion, garlic and jalapeño in olive oil until onion is soft and no pink remains in the beef, about 6 to 7 minutes.
- 3. Add mushrooms, drained black beans, tomatoes, cumin, pepper and salt, and cook about 5 minutes or until most of the liquid from the canned tomatoes is absorbed.
- 4. Pour beef mixture into prepared baking dish. Use the back of a wooden spoon to smooth the top to make a level surface.
- 5. Sprinkle the cheese over the top of the beef layer.
- 6. Add cornmeal, flour, baking power, baking soda and salt to a medium mixing bowl, and stir until well blended. Add milk, beaten egg and hot sauce (if using). Stir until well blended.
- 7. Pour the cornbread batter over the top of the cheese layer, making sure to completely cover the cheese and beef layers.
- 8. Bake 25 to 30 minutes or until the cornbread layer is evenly browned. Turn baking dish halfway through baking for even browning. Remove from oven and serve immediately with avocado slices on the side.

- Cook first 3 ingredients in a large saucepan, coated with cooking spray, over medium-high heat, stirring until beef crumbles and is no longer pink. Drain and pat with paper towels. Wipe dripping from skillet with a paper towel.
