This Beef and Snow Peas is a light and easy recipe! Tender marinated beef and crisp peas go perfectly over rice or noodles for a delicious weeknight supper.

1/3 cup reduced sodium soy sauce
1/3 cup chicken broth
2 cloves garlic (minced)
1 pound boneless beef sirloin steak (cut into 1/8 inch strips)
1 tsp cornstarch
2 cups fresh snow peas
4 tsp canola oil (divided)

Steps:

  • In a small bowl, combine the soy sauce, broth, and garlic. Reserve 1/4 cup. Place beef in a resealable plastic bag.
  • Add remaining soy sauce mixture; seal and mix. Refrigerate at least 1 hour.
  • Place cornstarch in a small bowl. Stir in reserved soy sauce mixture until smooth; set aside.
  • In a nonstick skillet, stir-fry snow peas in 2 tsp hot oil for 3-4 minutes or until snow peas are crisp-tender and bright green. Remove and keep warm.
  • Drain and discard marinade from beef. In same skillet, stir-fry beef in remaining oil for 2 minutes.
  • Stir cornstarch mixture; add to skillet. Bring to a boil; cook and stir for 1-2 minutes or until slightly thickened.
  • Combine with snowpeas. Serve with rice (serve with brown rice if you want to be really healthy!)

2 tablespoons cornstarch
2 teaspoons sugar

Steps:

  • In a small bowl, whisk soy sauce, sherry, cornstarch and sugar. Transfer 1/4 cup mixture to a large bowl; stir in 1 tablespoon oil and garlic. Add beef; toss to coat. Let stand 15 minutes., Heat a large skillet over medium-high heat. Add half of the beef mixture; stir-fry 1-2 minutes or until no longer pink. Remove from pan; repeat with remaining beef., In same pan, heat remaining oil over medium-high heat until hot. Add mushrooms and onion; cook and stir until mushrooms are tender. Add snow peas; cook 2-3 minutes longer or until crisp-tender., Stir remaining soy sauce mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until sauce is thickened. Return beef to pan; heat through. Serve with rice if desired.

Steps:

  • In a bowl, mix together soy sauce, sherry, brown sugar, cornstarch, and ginger. Pour half the liquid over the sliced meat in a bowl and toss with hands. Reserve the other half of the liquid. Set aside. Heat oil in a heavy skillet (iron is best) or wok over high heat. Add snow peas and stir for 45 seconds. Remove to a separate plate. Set aside. Allow pan to get very hot again. With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Add half the scallions. Spread out meat as you add it to pan, but do not stir for a good minute. (You want the meat to get as brown as possible in as short amount a time as possible.) Turn meat to the other side and cook for another 30 seconds. Remove to a clean plate. Repeat with other half of meat, allowing pan to get very hot again first. After turning it, add the first plateful of meat, the rest of the marinade, and the snow peas. Stir over high heat for 30 seconds, then turn off heat. Check seasonings and add salt only if it needs it. Mixture will thicken as it sits.Serve immediately over rice. Steps:

Beef Noodles with Spicy XO Sauce is a less than 20-minute easy Chinese beef stir fry recipe with crunchy vegetables and a spicy XO sauce for the perfect noodle slurping bite.

1/4 pound beef (cut against the grain)
1 tbsp rice wine (Shaoxing wine or a dry sherry)
3 tbsp tamari (soy) sauce ((1 tablespoons for marinade and 1-2 tablespoon for sauce))
1/4 tsp white pepper (or to taste)
1 tsp cornstarch
100 grams rice noodles (dried (we used medium Pad Thai noodles but if you can find the extra wine those are nice too))
water (enough hot water to cover the noodles to soak)
2 tbsp canola oil (1 tbsp to cook the beef and 1 tbsp to pan fry the rice noodles. )
1 small onion (sliced in moons)
2 cloves garlic (minced)
2 tbsp oyster sauce
2 tbsp XO Sauce (spicy or regular)
1 tsp sesame oil
1 cups bean sprouts (sprouted mung beans or sliced snow peas)
2 tsp green onions (optional - garnish)

Steps:

  • In a medium bowl add your sliced beef, shaoxing wine, 1 tablespoon of soy sauce, white pepper and cornstarch and allow to marinade while your rice noodles are soaking.
  • Soak your dried rice noodles (medium or extra wide) in a bath of hot water for about 3-5 minutes or just until they start to softened but not completely al dente. (FYI: Noodles will continue to cook when they are fried.) Rinse noodles with cool water, drain and set aside.
  • Put 1 tablespoon of oil in your wok (frying pan) and turn on medium-high heat . Once the temperature is at medium heat add the onions and garlic and fry for a minute just until the aroma hits your nose.
  • Add your marinated beef to the pan and stir fry for a minute or two or just until turns golden brown. Remove beef and onions to a plate and keep warm and set aside. If you wanted to cook some other veggies then you would add them at this point and stir fry until crisp tender and then remove from your pan. We stir fried sliced snow peas as that is what we had on hand. (Feel free to add any quick cooking thin sliced vegetables at this time and stir fry until crisp tender and then remove from pan.) If you choose to add bean sprouts (sprouted mung beans), wait to add them to the pan until you have added all the sauces at the end of the cooking process.
  • Add 1 tablespoon of oil and your presoaked noodles to the seasoned pan turn up the heat to medium high. Move the noodles quickly around in the pan keeping them separated so they do not stick. (feel free to add a little more oil or a little more water just to prevent sticking and to confirm that your noodles are aldente- test a noodle)
  • Add your beef mixture and stir fried snow peas or veggies cooked back to the noodles and add XO sauce, Tamari (soy sauce), oyster sauce, and mix until well incorporated. If you want to add in bean sprouts, you would add them to the pan at this time and just toss until warm but crisp.
  • Serve Pan Fried Beef Noodles with Spicy XO Sauce with a sprinkle of green onions for garnish and get ready to make second helpings...

1/2 cup tamari (or low-sodium soy sauce)
5 tablespoons brown sugar
6 garlic cloves (minced)
1/2 teaspoon ginger
2 teaspoons rice vinegar
10 oz snow peas
4 tablespoons olive oil
10 oz mushrooms (sliced thinly)
1 pound beef (thinly sliced (sirloin steak strips, flank steak, or any other steak))

Steps:

  • Combine all the sauce ingredients in a bowl - whisk to combine. Set aside.
  • Bring water in a medium pan to boil. Add snow peas, boil them for 5 minutes, drain. Set aside.
  • Heat a large skillet until hot, add 2 tablespoons olive oil - it should sizzle.
  • Immediately add thinly sliced mushrooms - cook them on high heat, turning occasionally, until they brown nicely. Salt them midway, just a little bit. Do not add too much salt, as you will be adding tamari sauce later.
  • Remove mushrooms to a bowl.
  • To the same skillet, on high heat, add 2 tablespoons of olive oil, which will sizzle right away. Immediately add thinly sliced meat.
  • Note: You might want to do this in 2 batches. You will want each slice of beef to touch the bottom of the skillet and for meat slices not to be crowded. This will ensure that beef will brown on high heat.
  • Cook beef on one side until it browns nicely.
  • Turn over all beef slices to the opposite side, and cook more, on high heat, until all slices brown nicely. Remove this batch to a bowl.
  • Add the second batch of beef, and repeat.
  • Return all of the cooked beef slices back to the skillet.
  • Add the snow peas and cooked mushrooms, then the Asian sauce.
  • Stir everything to combine on high heat, for about 1 minute. Turn off heat. Cover the skillet with a lid.

2 tablespoons small dried shrimp* (1/4 ounce)
1 cup water
1/4 cup dried scallops* (about 10; each 1 inch wide)
1/2 cup peanut oil
1/4 cup finely minced onion (1/2 small)
3 garlic cloves, finely minced (1 tablespoon)
1 teaspoon minced fresh hot red chile including seeds
2 tablespoons minced Virginia ham (preferably Smithfield) or fine-quality prosciutto (1/2 ounce)

For beef and snow peas
1 lb sirloin steak, sliced 1/4 inch thick against the grain, visible fat trimmed and discarded
2 tablespoons Chinese rice wine or medium-dry Sherry
2 tablespoons soy sauce
1 teaspoon cornstarch
1 teaspoon sugar
1/4 teaspoon black pepper
2 tablespoons peanut oil
1/2 lb snow peas, trimmed and strings discarded

Steps:

  • Make sauce:
  • Cover dried shrimp with boiling-hot water in a small bowl and soak 1 hour.
  • Bring 1 cup water to a boil in a 1-quart heavy saucepan and add dried scallops (scallops should be completely submerged). Remove from heat and soak 15 minutes. Return pan to heat and simmer over low heat until scallops are soft and pale, about 15 minutes, then remove from heat and cool in cooking liquid. Transfer scallops to a bowl with a slotted spoon, reserving cooking liquid. Shred scallops into "threads" with a fork or your fingers, discarding abductor muscle (abductor will remain solid but scallop meat shreds easily).
  • Drain shrimp, discarding any blemished or dark pieces, and chop very finely.
  • Heat wok over moderate heat, then add oil, swirling to coat, and heat until hot but not smoking. Add onion, garlic, and chile and cook, stirring gently, until mixture stops steaming, about 3 minutes.
  • Add shrimp, scallops, ham, and black pepper and cook, stirring occasionally, 3 minutes. Add reserved scallop cooking liquid and simmer over low heat until slightly darkened and most of liquid is evaporated (leaving only oil), 10 to 15 minutes. Transfer sauce to a bowl and cool. Wipe wok clean.
  • Make beef and snow peas:
  • Toss beef with rice wine, soy sauce, cornstarch, sugar, and pepper in a bowl until well coated, then marinate 15 minutes.
  • Heat wok over high heat until smoking, then add 1/2 tablespoon oil, swirling to coat, and heat until smoking. Add half of beef and cook, turning over once, until browned, about 1 minute total, then transfer to a clean bowl. Add another 1/2 tablespoon oil and repeat with remaining beef.
  • Pat snow peas dry if necessary. Wipe wok clean and heat until hot but not smoking, then add remaining tablespoon oil, swirling to coat. Add snow peas carefully (oil may splatter) and stir-fry until bright green, about 1 minute. Add XO sauce and stir-fry until snow peas are coated. If mixture seems dry, add 1 to 2 tablespoons water. Cover wok and cook snow peas until crisp-tender, about 1 minute.
  • Add beef with any juices accumulated in bowl and stir-fry until beef is heated through and sauce is thickened, about 1 minute.

Add half of beef and cook, undisturbed, 45 seconds, then stir-fry until beef is just browned, 1 to 2 minutes more. Transfer to plate with snow peas. Add remaining tablespoon oil and cook remaining beef in same manner.
  • Stir sauce mixture again, then add to wok and bring to a boil. Stir in beef and snow peas, then serve spooned on top of noodle cake.

  • 1. For the XO sauce, put soaked scallops on a plate and place plate in a bamboo steamer over a saucepan of rapidly boiling water. Cover and steam for 10 minutes. Remove the scallops from the steamer and, while still warm, shred with your fingers, separating all the fibres.
  • 3. Put all of the XO sauce ingredients, except for the shallot, in a large, heavy-based pot and cook over a low heat, stirring occasionally, for about 45 minutes or until they soften and the sauce turns a deep red. Remove from heat and allow to cool, then stir through the shallot.
  • 4. In a small bowl, mix together the XO sauce, sesame oil, hot bean paste, chilli oil, sugar and soy sauce.

  • In a measuring cup, whisk together soy sauce, water, cooking wine, brown sugar, and corn starch. Set aside.
  • In a skillet, over medium-high heat, add vegetable oil. Once oil is heated, add minced garlic and cook until fragrant. Add the snow peas and cook until bright green, about 3-4 minutes. Remove from skillet and set aside on a plate.
  • Add the snow peas back into the skillet then pour sauce in. Let simmer and thicken for 3-5 minutes, stirring and tossing to incorporate everything.
