MEATLOAF WITH ITALIAN SAUSAGE
My mom gave me this recipe, and everyone agrees it is the best ever, I think it's because of the Italian sausage. It's great the next day too. But we usually don't have many leftovers.

MOZZARELLA MEAT LOAF
My five kids weren't fans of meat loaf until I "dressed up" the usual recipe with pizza toppings. These days, they eat this hearty dinner with their own families. -Darlis Wilfer, West Bend, Wisconsin

SAMMY'S BEEF AND SAUSAGE MEATLOAF
I got the idea of using sausage in this from my hubby, and I built it from there. This makes an excelent, juicy, and very tasty meat loaf. Note: I mince my onions because I like the flavor, I just don't want to know they are there, but obviously you can chop them to your liking.

HOMESTYLE SAUSAGE/GROUND BEEF MEATLOAF
This is the meatloaf my mom made and it was always one of her most requested recipes. I'm not sure if it's one of her recipes or not, since she was always clipping recipes from magazines and newpapers. It's still a big hit with family and friends and remains one of my most requested recipes. My hubby is a hunter, so I do make it with ground vension and vension sausage and it's wonderful. You can also make meatballs with the meat mixture and brown them in a skillet, pop them in a crockpot with spaghetti sauce and it's great served over pasta. The meatballs also make a wonderful appetizer served with your favorite sweet & sour or BBQ sauce. Any leftover meatloaf or meatballs make a mean sandwich the next day as well. I usually make two recipes and bake both loaves on a large baking sheet so I have enough for sandwiches the next day, LOL.

Steps:
- Preheat oven to 400 degrees and prepare a loaf pan with cooking spray or parchment paper.
- In a small bowl, toss cubed bread with milk. Set aside for 3-4 minutes to absorb.
- In a large mixing bowl, or the base of a stand mixer, combine fresh bread cubes soaked in milk, finely ground or micrograted onion, garlic Italian seasoning and salt. Mix to combine.
- Add crumbled ground beef and sausage, breaking into small pieces.
- Before mixing, top with Worcestershire sauce, lightly beaten egg, dry bread crumbs, Parmesan cheese, 1/2 cup shredded mozzarella and 1/4 cup marinara sauce.
- Blend until just mixed, either using your fingers to toss or putting the stand mixer on low. Too much mixing will make your meatloaf tough, so only mix until barely blended.
- Transfer meat mixture to cooking vessel of your choice, forming into a loaf as you go. You can make it free-form on a rimmed baking sheet, but I prefer using a meatloaf or bread loaf pan. Top with 1/2 cup marinara sauce.
- Bake, uncovered, for 40 minutes. Remove and top with remaining shredded mozzarella cheese and another shake of Italian seasoning (if desired).
- Cook for an additional 5 minutes. Allow to sit for 5-10 minutes before cutting and serving. Serve with additional marinara sauce, if desired.
- If you've tried this recipe, come back and let us know how it was!

- Here's a thought for meatloaf-lovers: mix some minced beef and pork sausage meat, roll it around a filling of spinach and mozzarella, bake until crusty, then serve with home-made tomato sauce. Serve with a pile of steamed green beans, or roast halved brussels sprouts and chunks of potato alongside the meatloaf until golden.
- Heat oven to 200C. Soak bread in milk for 10 minutes, then lightly squeeze dry. Cook spinach in very little water until wilted, then drain, squeeze dry and roughly chop. Mix spinach with diced mozzarella, parmesan, salt and pepper.
- In a large bowl, combine bread with minced beef, sausage meat, tomato paste, oregano, cayenne, nutmeg, parsley, salt and pepper. Add egg and knead until well mixed. Shape mixture into flat rectangle (22 x 28-centimetres) on large sheet of baking paper. Scatter spinach and cheese on top and use baking paper to form tight roll. Flip roll over so join is underneath and pat ends to seal.
- Transfer, with baking paper, to a baking tray, add wine or water to the pan and bake for one hour until lightly browned. Cut into slices and serve with home-made tomato sauce and parsley.
