EASY JAPANESE FRIED BEEF WONTONS
These easy Japanese fried wontons are a staple in our family's New Years Day lunch. They are also commonly found sold at Japanese summer festivals.

Steps:
- Finely chop water chestnuts and green onions.
- In a large bowl, mix water chestnuts, green onions, pork, and beef. Add soy sauce and mix well.
- Take one wonton skin out of the pack. Using your finger, wet the edges of the wonton.
- Scoop about a teaspoon of filling into the middle of the wrap and fold like a triangle. Press the edges firmly to seal.
- Finish wrapping the rest of the wontons until all the filling is gone. If you stuff your wontons well, this will only take one pack of wonton skins, but I often go over by about 3-5 wontons.
- When ready to fry, heat up oil in a deep skillet or wok to 350 degrees F.
- Fry wontons until cooked through, flipping halfway through cooking. This takes me about 2 minutes per side. I can comfortably fit about 7-8 wontons in my 12 inch cast iron skillet.
- Line a serving platter with paper towels to absorb the leftover oil as the cooked wontons cool. Wontons can be enjoyed at room temperature, but keep leftovers in the fridge.
AIR FRYER BEEF WONTONS
This air-fried version of one of our family's favorite recipes is low on guilt while still crispy and satisfying. We serve ours with soy sauce for dipping.

Steps:
- Combine ground beef, green onions, salt, garlic powder, pepper, and ginger in a bowl; mix well.
- Preheat the air fryer to 350 degrees F (175 degrees C).
- Place several of the wonton wrappers on a plate or a cutting board without overlapping. Pour some water into a small bowl next to the plate.
- Form about 1 tablespoon of beef mixture into a ball and place on one side of each wrapper. Dip your fingertips in the bowl of water and swipe some water around the edges of the wonton wrappers. Fold the wontons in half so that they form a triangle around the beef mixture. Wet your fingers with additional water and pinch the edges of the wrapper together. Place folded wontons onto plates, making sure they don't overlap, while you assemble the remaining wontons.
- Brush one side of the wontons lightly with sesame oil. Place a single layer of wontons into the air fryer basket, oiled side down. Brush the tops lightly with additional sesame oil.
- Air fry for 4 minutes, then carefully flip the wontons with tongs. Cook on the second side until the wontons are crispy and the edges are golden brown, 3 to 4 more minutes. Transfer wontons to a paper towel-lined plate and let cool while you cook the rest of the wontons in batches.

- In a large cast-iron or other heavy skillet, stir-fry cabbage, bean sprouts and carrots in 1-1/2 teaspoons oil until tender; set aside. , In a small skillet, cook beef over medium heat until no longer pink, crumbling the meat; drain. Add to the vegetable mixture. Stir in the onions, sesame seeds, ginger, garlic, sesame oil, salt and pepper., Place about 1 tablespoon of filling in the center of each wonton wrapper. Combine egg and water. Moisten wonton edges with egg mixture; fold opposite corners over filling and press to seal. , Heat remaining oil in a large cast-iron skillet. Cook wontons in batches until golden brown, 1-2 minutes on each side, adding more oil if needed.

WON TON WRAPPER APPETIZERS
Cheesy sausage-based filling in little cups made from baked won ton wrappers. The baked cups and filling may be prepared a day or two in advance (store covered in the refrigerator) and assembled shortly before serving.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray a miniature muffin pan with cooking spray.
- Insert wonton wrappers into the muffin pan so as to form small cups. Bake 5 minutes in the preheated oven. Allow the baked wrappers to cool. Remove from the pan.
- In a medium bowl, mix the sausage, Monterey Jack, Cheddar, black olives and Ranch-style dressing. Fill the baked wonton wrapper cups with the mixture.
- Bake the filled wonton wrappers 10 to 15 minutes, until the sausage mixture is bubbly and slightly brown. Watch closely so the wonton wrappers do not burn.
