Time 1h45m

Yield 8

Number Of Ingredients 15

1 pouch (6.5 oz) Betty Crocker™ cornbread & muffin mix
1/3 cup milk
2 tablespoons butter, melted
1 egg
1 can (4.5 oz) Old El Paso™ chopped green chiles
2 cups shredded Mexican cheese blend (8 oz)
1 lb lean (at least 80%) ground beef
1/2 cup chopped red bell pepper
1/2 cup chopped onion
2 cloves garlic, finely chopped
2/3 cup water
1 package (1 oz) Old El Paso™ original taco seasoning mix
1 can (15 oz) pinto beans, drained, rinsed
1 can (10 oz) Old El Paso™ mild enchilada sauce
Fresh toppings, if desired (chopped tomatoes, cilantro, sour cream, salsa, diced avocado)

Steps:

  • Heat oven to 400°F. Grease bottom and side of 10-inch cast-iron skillet with oil. Heat skillet in oven about 10 minutes or until hot.
  • In medium bowl, stir muffin mix, milk, melted butter and egg just until moistened (batter will be lumpy). Stir in green chiles and 1 cup of the cheese. Spread in hot skillet. Bake 16 to 18 minutes or until light golden brown around edge. Remove from oven; reduce oven temperature to 350°F.
  • Meanwhile, in 10-inch nonstick skillet, cook beef, bell pepper, onion and garlic over medium-high heat 5 to 7 minutes, stirring frequently, until beef is no longer pink; drain. Add water and taco seasoning mix; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes, stirring frequently, until thickened. Add pinto beans; stir until combined.
  • Using the end of a wooden spoon, poke holes in cornbread (about 1 1/2 to 2 inches apart), and pour enchilada sauce over top, spreading sauce to fill holes. Top with beef and bean mixture and remaining 1 cup cheese. Cover with sheet of foil sprayed with cooking spray; bake 25 to 30 minutes or until bubbling around edge and cheese is melted.
  • Cool 10 to 15 minutes before serving. Serve with your favorite fresh toppings.

TAVERN BEEF AND PORK PIE

Tavern Beef and Pork Pie image

Overnight preparation required (for roasting meat)

Provided by Food Network

Categories     main-dish

Time 2h

Yield 8 large or 24 small triangles

Number Of Ingredients 19

1 1/2 pounds cooked boneless pork shoulder and 1 1/2 pounds cooked beef chuck roast, cut into 1/2-inch cubes (recipe follows)
1 cup chopped yellow onions
4 cloves garlic, chopped
1 tablespoons unsalted butter
1 cup red burgundy wine
1 cup chopped button mushrooms
1 small bunch fresh basil, chopped (about 1/4 cup)
1/2 small bunch fresh parsley, chopped (about 3 tablespoons)
1 sprig fresh thyme
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 cup demi-glace
3 pounds puff pastry (homemade or store-bought)
1 egg, lightly beaten with 1 tablespoon water
1/4 cup vegetable oil
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 1/4 pounds boneless pork shoulder roast
2 1/4 pounds boneless beef chuck roast

Steps:

  • In a large skillet, saute the precooked beef and pork cubes, onions, and garlic in the butter over high heat for 5 minutes, until the onions are golden brown. Add the red wine to deglaze the pan, loosening any browned bits on the bottom of the pan with a wooden spoon. Add the mushrooms, basil, parsley, thyme, salt, and pepper and cook until the liquid has evaporate. Stir in the demi-glace and cook about 5 minutes more, until all liquid has evaporated again. Remove from the heat. Spread the mixture out onto a baking sheet and let it cool for 10 minutes. Refrigerate the mixture about 1 hour to cool completely.
  • Preheat oven to 450 degrees. On a lightly floured surface, roll out the puff pastry to 1/8-inch thickness. Cut out 6 (6 to 8-inch) squares and brush the edges with the egg mixture. Place 1 cup of the meat mixture in the center of each square. Fold each square over diagonally to form a triangle and press the edges firmly to seal. Using a fork, gently prick the center of each triangle to allow steam to escape. Lightly brush the edges again with the egg mixture.
  • Arrange the triangles 2 inches apart on a greased baking sheet. Bake for 8 to 10 minutes, until golden brown.
  • Preheat oven to 350 degrees. In a small bowl, mix together the oil, salt, and pepper. Rub the oil mixture over the meats. Roast the pork shoulder about 1 hour. Roast the beef chuck about 1 1/2 hours, until a meat thermometer registers 170 degrees for each meat. Remove the meats from the oven and let cool for 20 minutes. Cover and refrigerate up to one day or until ready to use.

TAMALE PIE

Tamale Pie image

A flavorful Mexican-inspired ground beef and vegetable casserole is nestled under a crunchy-tender cornbread topping.

Provided by Katie Workman

Categories     Main Course

Time 1h

Number Of Ingredients 25

1 pound ground beef
1 pound ground pork (or another pound ground beef)
2 teaspoons olive oil
1 onion (, chopped)
1 bell pepper (red, green, yellow or orange) (, seeded and chopped)
1 jalapeno (, seeded and chopped)
1 tablespoon minced garlic
1 tablespoon chili powder
2 teaspoon ground cumin
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 can (28-ounce) diced or crushed tomatoes
½ cup less-sodium chicken broth
1 cup corn kernels ((fresh, canned or frozen))
1 can (12-ounce) kidney or black beans (, drained and rinsed)
1 cup shredded cheddar cheese
1 cup cornmeal
¼ cup all-purpose flour
2 teaspoons baking powder
1 teaspoon kosher or coarse salt
1 tablespoon sugar
1 cup whole milk or buttermilk
1 large egg
3 tablespoons chopped scallions ((optional))
3 tablespoons unsalted butter (, melted)

Steps:

  • Preheat the oven to 375°F. Spray a 2 ½-quart casserole or a 12-inch ovenproof pan or skillet with nonstick cooking spray.
  • Heat a large skillet (if you are planning to bake the Tamale Pie in a skillet, use the one you are planning to bake it in) over medium heat. Add the beef and pork (if using) and sauté stirring to break up any lumps, until the meat is browned. Turn the meat into a colander to drain.
  • Return the pan to the heat and add the oil. When the oil is hot, add the onion and bell pepper and sauté for 4 minutes, until the vegetables are crisp tender. Add the garlic, chili powder, cumin, salt and pepper and stir until you can smell the garlic, about 1 minute. Add the tomatoes, broth, corn, beans and the drained cooked meat. Bring the mixture to a simmer and simmer, stirring occasionally for 5 minutes.
  • While the mixture simmers, combine the cornmeal, flour, baking powder, salt, and sugar in a large bowl. In a smaller bowl, mix the milk, egg, scallions (if using) and butter together. Add the milk mixture to the dry ingredients, and stir just until they are barely combined.
  • If you are baking the casserole in a casserole pan, transfer the meat mixture to that casserole. Otherwise leave the mixture in the ovenproof pan. Sprinkle the cheese over the meat mixture. Spread the cornbread topping evenly over the cheese; it helps to dollop it on by rounded tablespoons, then use a knife or offset spatula to spread it out fairly evenly.
  • Bake the casserole until the top is lightly browned and set, about 25 minutes. Place the skillet on a wire rack to cool for at least 10 minutes. Serve the Tamale Pie hot or warm.

Beef and Pork Tamale Pie image

Provided by Rachael Ray : Food Network

Time 1h25m

Yield 4 to 6 servings

Number Of Ingredients 20

1 tablespoon vegetable oil
1 pound ground pork
1 1/2 pound ground sirloin
1 onion, finely chopped
4 cloves garlic, finely chopped
2 tablespoons seeded chipotle in adobo sauce, finely chopped, plus couple spoonfuls sauce
1 tablespoon ground cumin (scant palmful)
1 tablespoon coriander (scant palmful)
2 teaspoons unsweetened cocoa powder
1/4 teaspoon ground cinnamon
Salt and freshly ground black pepper
1/4 cup tomato paste
1 (12-ounce) bottle Mexican beer (recommended: Negra Modelo)
1 cup beef stock
1 1/2 cups chicken stock or water
1 1/2 cups milk
About 1 cup quick cooking polenta
2 tablespoons butter
1 generous tablespoon honey
1 1/2 cups shredded Cheddar or smoked Cheddar cheese

Steps:

  • Heat 1 tablespoon oil in a large skillet over high heat, add pork and sirloin and brown. Add the onions, garlic, chipotle, adobo sauce, cumin, coriander, cocoa powder, cinnamon, salt, and pepper, cook 5 minutes to soften bits of onions. Stir in the tomato paste and cook 1 minute more. Add the beer and scrape up the drippings. Add 1 cup beef stock and heat through to combine the flavors then cool completely and store for make-ahead meal.
  • The night you would like to serve tamale pie, reheat in a skillet over medium heat while you make the quick-cooking polenta. Preheat broiler. Heat chicken stock and milk to a boil, then whisk in the polenta and cook until thick, 3 minutes. Cook's Note: Polenta needs to be very thick.
  • Stir in butter and honey and season with salt and coarse black pepper. Spread the thick polenta in an even layer over the tamale filling. Top the polenta with cheese and brown under broiler.
