I came up with this recipe on one of those "what in the world can I fix for dinner" days. I usually have the ingredients in the freezer and pantry, so it's handy when I need to fix a meal in a hurry.-Dorothy Buttrill, Fairfield, Texas

Number Of Ingredients 11

1 pound ground beef
1/2 cup chopped onion
1 tablespoon Worcestershire sauce
1 teaspoon garlic salt
1 teaspoon Italian seasoning
1 cup uncooked instant rice
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup water
2 pounds fresh broccoli, chopped or 6 cups frozen chopped broccoli, cooked and drained
6 ounces sliced part-skim mozzarella cheese
Chopped fresh parsley, optional

Steps:

  • Preheat oven to 400°. In a skillet, cook beef and onion in oil until meat is no longer pink; drain. Stir in the Worcestershire sauce, garlic salt, Italian seasoning, rice, soup and water. , Place cooked broccoli in an 11x7-in. baking dish; spoon meat mixture over top. Sprinkle with mozzarella cheese. Bake, uncovered, until heated through, 15-20 minutes. Garnish with parsley if desired.

A friend shared this with me. I don't like broccoli and she was trying to get me to try it. It took one bite and I was hooked! It is so yummy and easy to make. I usually make ahead and freeze or store in fridge for a day. Add at least 10 more minutes bake time if you do this.

Number Of Ingredients 7

4 cups frozen potato slices (1/2 30 oz bag)
1 lb cooked and drained ground beef
1 (10 ounce) package frozen chopped broccoli, thawed
1 (2 7/8 ounce) can French-fried onions
2 cans cream of celery soup
1/3 cup milk
2 cups shredded cheddar cheese

Steps:

  • Place potatoes on bottom and sides of 8x12 inch casserole dish (like a pie crust).
  • Bake uncovered at 400 degrees for 10 minutes or until golden brown.
  • Mix soup, milk and 1 cup of cheese together.
  • Add cooked ground beef, broccoli and 1/2 can of french fried onions and mix well.
  • Place in potato shell and bake uncovered at 400 degrees for 20 minutes.
  • Top with rest of cheese and french fried onions and bake 2-3 minutes until cheese is melted and bubbling.

Number Of Ingredients 10

1 lb browned lean ground beef
8 c par boiled broccoli florets
1 box rigatoni's cooked aldente
3 Tbsp butter, cold
3 Tbsp flour
1 1/2 c parmesan cheese, fat-free
2 to 3 c half and half
To taste sea salt
To taste fresh ground pepper
1 Tbsp minced garlic

Steps:

  • 1. Pre-Heat Oven to 400* Cooking time 4౦ minutes Prep time approx 35 minutes
  • 2. Brown your ground beef and drain any excess grease.
  • 3. Par boil your broccoli florets for 5 minutes.
  • 4. Cook your rigatoni's to aldente (9-11) minutes then drain.
