BEEF AND BROCCOLI CASSEROLE
Our Beef and Broccoli Casserole is made with flank steak, tons of veggies, and a homemade Asian brown sauce that is savory and a little bit sweet.

Steps:
- First, preheat oven to 375ºF and spray a 9-inch x 13-inch casserole dish with nonstick cooking spray.
- Then, sprinkle the white rice onto the bottom of the casserole dish.
- Next, prepare veggies. Cut broccoli into bite-sized pieces and finely dice a large red pepper and half a yellow onion. Add those to the casserole dish.
- Prepare sauce by mixing together soy sauce, hoisin, minced garlic, maple syrup, red chili sauce, beef broth, and water. Set aside.
- Prepare flank steak by placing it in between 2 pieces of parchment paper. Then, using a meat tenderizer, tenderize meat until it's around 1/2-inch thick. This will help break down the beef and make it a lot less chewy.
- Next, slice the beef into 1/2-inch pieces and add it to the casserole dish.
- Pour the sauce over steak, veggies, and rice, and use a large wooden spoon to mix everything together.
- Cover casserole dish with a piece of tin foil and bake at 375ºF for 20 minutes.
- Remove from oven and mix. Cover again and bake for an additional 15 minutes.
- Remove from oven and uncover. Then, bake for an additional 10-15 minutes, uncovered or until the beef is fully cooked and the rice is no longer crunchy.
- Let sit for around 5-10 minutes before serving to let the sauce fully soak up.

- Preheat oven to 350 degrees F (175 degrees C). Prepare the broccoli according to package directions.
- In a skillet over medium heat, mix the ground beef, mushrooms, and onion. Cook until beef is evenly brown; drain grease. Season with salt and pepper, and mix in cream of celery soup and sour cream. Continue cooking until heated through. Transfer to a medium baking dish, and evenly layer with broccoli. Top with cheese.
- Bake 1 hour in the preheated oven, until bubbly and lightly brown.

BEST BEEF AND BROCCOLI
I've had this recipe for years. It's a great way to use leftover beef or you can buy an inexpensive cut and do it from scratch. My kids love it because of the soup. Tenderize the steak with a mallet prior to cooking, if desired.

- In a large skillet, heat the olive oil over high heat. Stir in the steak and season with salt and pepper. Cook until beef is almost completely browned.
- Stir in onions and saute until tender. Stir in broccoli, condensed cream of broccoli soup, water and soy sauce. Blend well.

A friend shared this with me. I don't like broccoli and she was trying to get me to try it. It took one bite and I was hooked! It is so yummy and easy to make. I usually make ahead and freeze or store in fridge for a day. Add at least 10 more minutes bake time if you do this.

- Place potatoes on bottom and sides of 8x12 inch casserole dish (like a pie crust).
- Bake uncovered at 400 degrees for 10 minutes or until golden brown.
- Mix soup, milk and 1 cup of cheese together.
- Add cooked ground beef, broccoli and 1/2 can of french fried onions and mix well.
- Place in potato shell and bake uncovered at 400 degrees for 20 minutes.
- Top with rest of cheese and french fried onions and bake 2-3 minutes until cheese is melted and bubbling.

- Preheat oven to 375°F
- Place broccoli in a steamer basket over boiling water.
- Cover pan and steam 3 minutes or until tender.
- Rinse broccoli under cold running water and drain well.
- Transfer to a buttered, deep casserole dish.
- Cook pasta in a large pan of boiling water 7 minutes, or until al dente. Drain, rinse under cold water, and drain again.
- Stir into broccoli.
- Melt 2 tsp butter in a heavy nonstick skillet over medium high heat.
- Sauté meat, onion and garlic 5 minutes, stirring often to break up meat, until browned.
- Sprinkle on flour and thyme.
- Sauté 2 minutes, stirring often.
- Stir in next 4 ingredients and salt to taste.
- Bring to a boil, stirring until thickened.
- Reduce heat to low and simmer 3 minutes, stirring often.
- Remove from heat and stir in Cheddar cheese until melted.
- Stir into casserole and toss.
- Top with breadcrumbs and Parmesan and dot with remaining butter.
- Bake about 30 minutes until casserole is bubbling and top is golden brown.
