1 French bread baguette (10-1/2 ounces)
Cooking spray
1/2 teaspoon coarsely ground pepper
1/2 cup reduced-fat sour cream
2 tablespoons minced chives
1 tablespoon horseradish
1/4 teaspoon salt
1-1/4 pounds shaved deli roast beef
1/3 cup crumbled blue cheese
Additional minced chives

Steps:

  • Preheat oven to 400°. Cut baguette into 36 slices. Place on ungreased baking sheets. Spritz with cooking spray. Sprinkle with pepper. Bake until lightly browned, 4-6 minutes., Meanwhile, in a small bowl, combine sour cream, chives, horseradish and salt. Top toasts with beef; dollop with sour cream mixture. Sprinkle with cheese and additional chives.

2 small pears
⅓ cup cream cheese, softened
8 (1/2 inch) slices French baguette
2 slices blue cheese
1 tablespoon toasted chopped walnuts
1 teaspoon chopped fresh mint, or to taste
ground black pepper to taste
1 tablespoon honey

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate. Slice pears into half-moons.
  • Cook pears on the preheated grill until nicely browned, about 5 minutes per side. Set aside.
  • Cut blue cheese slices into 8 equal pieces.
  • Spread cream cheese over bread slices. Top with grilled pear slices and blue cheese. Sprinkle with walnuts, mint, and pepper. Drizzle with honey.

Blue Cheese Steak Crostini image

These blue cheese steak crostini are the perfect little bite. Garlicky toasted bread topped with salty blue cheese, rare steak and a balsamic reduction are a great Valentine's Day nibble.

1 loaf French baguette
2 tablespoons butter
1 pound sirloin tips, cut into bite size pieces
1 cup crumbled blue cheese
2 tablespoons milk
3 cloves garlic
1 cup balsamic vinegar
salt and pepper
fresh herbs for garnish

Steps:

  • Preheat oven to 350 degrees.
  • Slice baguette into 1/2 inch slices on the diagonal.
  • Melt the butter in a small dish and brush each piece of bread.
  • Smash 1-2 cloves of garlic and rub on the bread.
  • Place bread on a baking sheet and toast for 5-7 minutes. Remove and set aside.
  • Pour balsamic vinegar into a small sauce pot, bring to a boil then reduce to a low simmer until vinegar has halved and thickened. It will coat the back of a spoon when done. Turn off heat and set aside.
  • Place blue cheese, milk, 1 smashed clove of garlic, salt and pepper in a small sauce pot and bring to a high simmer, stirring frequently until blue cheese is melted and smooth. Turn off heat and set aside.
  • Heat a greased grill pan over medium-high heat.
  • Season steak tips with salt and pepper and grill 1-2 minutes per side for rare to medium-rare.
  • To assemble the crostini, spread the blue cheese sauce on the toasted bread, top with a piece of steak, drizzle with the balsamic reduction and top with fresh herbs.

Marinated roast beef and blue cheese come together to create the perfect appetizer served on crisp crostini; freshly ground black pepper adds just the right amount of zip.

½ teaspoon red pepper flakes
1 pinch Freshly ground black pepper, to taste
2 teaspoons minced fresh rosemary leaves
¼ cup Crisco® 100% Extra Virgin Olive Oil
½ pound rare roast beef, thinly sliced
½ cup Crisco® 100% Extra Virgin Olive Oil
3 cloves garlic, crushed
1 teaspoon salt
1 pinch Freshly ground black pepper to taste
12 ounces baguette
6 ounces cream cheese, softened
2 tablespoons blue cheese salad dressing
½ cup crumbled blue cheese, plus more for garnish
1 pinch Salt and pepper to taste

Steps:

  • Marinade: Combine garlic, red pepper flakes, pepper, rosemary and oil in microwave-safe cup. Microwave on HIGH 45 seconds; cool. Slice beef into approximately 2-inch by 4-inch strips. Place marinade and sliced beef in a resealable bag; toss to coat. Refrigerate several hours or overnight.
  • Crostini: Heat oven to 400 degrees F. Combine oil, garlic, salt and pepper in a microwave-safe measuring cup. Microwave on HIGH 45 seconds. Slice baguette into 36 1/2-inch slices. Brush one side of each slice lightly with garlic oil. Place oiled side up on cookie sheet. Bake 10-15 minutes or until crisp.
  • Blue Cheese Topping: Beat cream cheese with electric mixer until smooth. Add salad dressing; beat until well blended. Stir in crumbled blue cheese by hand. Season to taste with salt and pepper. Spread cheese mixture onto crostini. Top with strips of marinated meat. Sprinkle with additional blue cheese; serve.
