BEAN-AND-BEEF ENCHILADA CASSEROLE

This hearty dish has all the great taste of traditional enchiladas -- cumin, chiles, and sour cream -- without all of the fuss. It's a fast and easy favorite.

0.5 pound lean ground beef
0.5 cup chopped onion
1 teaspoon chili powder
0.5 teaspoon ground cumin
1 15 ounce can pinto beans, drained and rinsed
1 4 ounce can diced green chili peppers
1 8 ounce carton dairy sour cream or light dairy sour cream
2 tablespoon all-purpose flour
0.25 teaspoon garlic powder
8 6 inch corn tortillas
1 10 ounce can enchilada sauce or one 101/2-ounce can tomato puree
1 cup shredded cheddar cheese (4 ounces)

Steps:

  • In a large skillet cook the ground beef, onion, chili powder, and cumin until onion is tender and meat is no longer pink; drain. Stir pinto beans and undrained chili peppers into meat mixture; set aside.
  • In a small mixing bowl stir together sour cream, flour, and garlic powder until combined; set aside.
  • Place half of the tortillas in the bottom of a lightly greased 2-quart rectangular baking dish, cutting to fit if necessary. Top with half of the meat mixture, half of the sour cream mixture, and half of the enchilada sauce. Repeat layers. Cover dish with plastic wrap; chill in refrigerator for up to 24 hours. To serve:
  • Preheat oven to 350F. Remove plastic wrap; cover dish with foil. Bake in preheated oven for 35 to 40 minutes or until bubbly. Uncover; sprinkle with cheese and bake 5 minutes more. Makes 6 to 8 servings.

2 tablespoons vegetable oil, plus more for greasing dish
1 1/2 pounds ground beef
3 tablespoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1 medium onion, finely diced
4 cloves garlic, minced
One 15-ounce can pinto beans, strained and rinsed
2 cups jarred tomato salsa, plus more for serving
6 cups yellow corn tortilla chips (about 5 ounces), plus more for serving
3 cups shredded Cheddar and Monterey jack blend
3 cups shredded Cheddar and Monterey jack blend
1 cup sour cream, stirred well for easy dolloping
1 cup shredded iceberg lettuce
2 plum tomatoes, diced
1/2 avocado, diced
1/4 cup pickled jalapenos, chopped

Steps:

  • Preheat the oven to 375 degrees F. Lightly oil a 9-by-13-inch casserole dish.
  • Heat the oil in a large skillet over high heat. When the oil is shimmering, add the beef and sprinkle with the chili powder, cumin, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, breaking up the meat into smaller pieces, until browned, about 5 minutes. Add the onions and garlic and cook until the onions are soft, about 5 minutes more. Add the beans, salsa and 1/2 cup water and bring to a simmer; cook until the sauce thickens and coats the meat, about 5 minutes. Add salt and pepper to taste. (This beef-and-bean mixture can be made up to a day ahead of time.)
  • Lay half the tortilla chips on the bottom of the oiled casserole dish. Spread half the meat mixture on top. Sprinkle half the cheese blend over the meat. Repeat with the remaining chips, meat and cheese. Bake uncovered until the cheese melts and the casserole is hot, about 20 minutes.
  • Top with sour cream, lettuce, tomato, avocado and pickled jalapenos if desired. Serve with more salsa and tortilla chips on the side.

1-1/2 teaspoons dried minced onion
1 to 2 teaspoons chili powder
1/2 teaspoon salt
10 flour tortillas (8 inches), warmed
1/4 cup chopped onion
1-1/2 cups shredded cheddar cheese, divided
1 can (10 ounces) enchilada sauce, warmed
1 can (2-1/2 ounces) sliced ripe olives, drained

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, 5-7 minutes, breaking it into crumbles; drain. Stir in the beans, dried minced onion, chili powder and salt; heat through., Place about 1/3 cup down the center of each tortilla. Sprinkle each with onion and cheese. Fold bottom and sides over filling. Pour sauce over top; garnish with olives.

I love how easy this comes together--no worrying if the tortillas are folded just right (you don't even need to fold them). I substituted plain yogurt for sour cream and kidney beans for the pinto beans, and I still loved this. You can also make this ahead of time (make-ahead directions are below). 8 ounces ground beef
1/2 cup onion, chopped
15 ounces pinto beans, rinsed and drained
4 ounces green chilies, diced but undrained
1 teaspoon chili powder
1/2 teaspoon ground cumin
8 ounces sour cream or 8 ounces light sour cream
2 tablespoons all-purpose flour
1/4 teaspoon garlic powder
8 corn tortillas (6 inch)
10 ounces enchilada sauce
1 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 350.
  • Lightly grease a 2-quart rectangular baking dish and set aside.
  • In a large skillet cook beef and onion until meat is brown and onion is tender.
  • Drain fat and discard.
  • Stir in pinto beans, undrained chilies, chili powder, and cumin into meat mixture and set aside.
  • In a small bowl stir together sour cream, flour, and garlic powder until combined and set aside.
  • Arrange half the tortillas in bottom of prepared baking dish (cutting to fit if necessary).
  • Top with half the meat mixture, half the sour cream mixture, and half the enchilada sauce.
  • Repeat with remaining tortillas, meat mixture, sour cream mixture, and enchilada sauce.

  • Make-Ahead Directions: Prepare as directed but instead of covering with foil cover with plastic wrap and chill for up to 24 hours. Remove plastic wrap. Cover dish with foil. Bake in 350 oven about 35 minutes or until heated through. Uncover and sprinkle with cheese. Return to oven and bake for 5 minutes more or until cheese melts.

1/3 cup taco sauce (bottled or canned)
1 cup quartered pitted ripe olives
12 corn tortillas, at room temperature
salad oil or shortening
2 (10 ounce) cans enchilada sauce
3 cups shredded cheddar cheese
green onions or hot chili sauce

Steps:

  • In a wide frying pan over medium-high heat, crumble ground beef. Add onion and cook until beef is browned and onion is soft. Stir in beans, salt, garlic powder, taco sauce, and olives. Heat until bubbly, then set aside.
  • Heat about 1/8-inch of oil in a small frying pan over medium heat. Dip each tortilla into oil for just a few seconds, until it begins to blister and become limp. Do not fry until firm or crisp. Remove with tongs, drain briefly, and stack; set aside.
  • Pour 1 can of the enchilada sauce into a shallow 3-quart casserole or 9 by 13-inch baking dish. Spoon about 1/3 cup of the beef mixture down center of each tortilla and roll to enclose. Place seam side down, in casserole. Pour other can of enchilada sacue evenly over tortillas; cover with cheese. (At this point you may cool, cover, and refrigerate until next day.).
  • Bake, uncovered, in a 350 degree oven for about 20 minutes (35 to 45 minutes if refrigerated) or until heated through. Garnish each serving as desired.

Note: The original recipe didn't indicate the measurements of the baking dish--I would recommend something smaller than 9x12 with higher sides like a lasagna pan.
